200 g hummus, store bought
1/2-1 teaspoon ground cumin
1/2-1 teaspoon ground coriander
1 tablespoon lemon juice
4 pieces lavash bread
2 tablespoons fresh coriander, chopped
2 spring onions, sliced thinly
250 g shaved chicken
1 cup grated cheese

Steps:

  • Combine hummus. spices and juice in a bowl, mix well.
  • Place lavash on bench, divide hummus over the top, spread evenly.
  • Sprinkle with chopped coriander and spring onions.
  • Arrange chicken in single layer over the top.
  • Sprinkle with cheese.
  • Roll up lavash from short side, Swiss roll style to enclose fillings.
  • Wrap rolls in cling film, refrigerate till serving.
  • Before serving cut rolls crossways into 2 cm slices and secure with a toothpick.

200 g hummus
1/2 teaspoon ground cumin
1/2 teaspoon ground cilantro
1 tablespoon lemon juice
4 lavash bread
2 tablespoons fresh cilantro, chopped
2 green onions, thinly sliced
250 g shaved chicken breasts (from the deli)
1 cup cheddar cheese, grated

Steps:

  • Combine hummus, spices and juice in a bowl and mix well.
  • Lay out lavash breads and spread an equal amount of hummus mixture over each.
  • Sprinkle with combined fresh cilantro and green onions.
  • Arrange shaved chicken evenly over the top and then sprinkle evenly with the cheese.
  • Roll up lavash, from short side, Swiss roll style to enclose the filling.
  • Wrap rolls in cling wrap and refrigerate for at least an hour or until ready to serve.

2 store-bought rotisserie chicken breasts, finely shredded to yield 2 cups meat
1 1/2 cups arugula, chopped
1 cup mascarpone, at room temperature (8 ounces)
1/4 cup honey
1/4 cup whole grain mustard
Zest of 1 large lemon
Kosher salt and freshly ground black pepper
Two 12-by-9-inch whole wheat or plain Lavash breads

Steps:

  • Mix the chicken, arugula, cheese, honey, mustard and lemon zest in a medium bowl until smooth. Sprinkle with salt and pepper.
  • Divide the mixture in half and spread over the breads, leaving a 1/2-inch border. Starting at the longest edge, tightly roll up the breads like a jelly roll. Cut each sandwich into eight 1 1/2-inch-thick pieces using a serrated knife and serve.

1 cup finely chopped cooked chicken
1/2 cup chopped lettuce
1/2 cup shredded reduced-fat sharp cheddar cheese
1/3 cup chopped green onion
1/3 cup minced red bell pepper
4 ounces light cream cheese, softened
2 tablespoons low-fat sour cream
1 tablespoon hot red pepper jelly
3 (9 inch) flour tortillas

Steps:

  • In medium bowl, combine chicken, lettuce, cheddar cheese, green onions and red pepper.
  • Set aside.
  • In small bowl, beat together cream cheese, sour cream, and red pepper jelly on low speed of electric mixer.
  • Spread 1/3 cream cheese mixture over one side of tortilla.
  • Sprinkle with 1/3 chicken mixture, leaving 1/2 inch border at top just covered with cream cheese mixture (so you can seal it closed.) Roll up tightly, jelly roll style.

4 ounces light cream cheese, softened
1/4 cup finely shredded sharp cheddar cheese (or Mexican blend)
2 tablespoons finely sliced scallions
2 tablespoons chunky salsa (home made or your favorite in a jar)
2 tablespoons chopped fresh cilantro
1/2 teaspoon cumin
2 flavored 10-inch flour tortillas (tomato/basil, jalapeno/cilantro, or spinach are some kinds I can find in stores here)
lavash bread, works well also
1 (10 ounce) package baby spinach leaves

Steps:

  • In a bowl, combine cream cheese, shredded cheese, scallion, salsa, cilantro and cumin and mix well.
  • Spread mixture evenly over the two flour tortillas- be sure to reach to the ends.
  • Place a single layer of the baby spinach leaves evenly over the crem cheese mixture.
  • Roll the tortillas tightly.
  • This step is important and will give the"pinwheel" look to your appetizers.
  • Wrap each roll in plastic wrap, and chill for at least an hour, or up to 8 hours.
  • After rolls are chilled, unwrap and cut each one in half.
  • Begin from the smooth half, and cut roll into 1 inch circles.
  • You should get 4 to 5 circles from each tortilla half depending on how well you tortilla"ends" hold together.
  • Arrange your pinwheels cut side up on your serving platter.
  • Cover and chill for up to one hour before serving.
