POOR TIRED MAN CHICKEN
An older Mid-Louisianan woman taught me this recipe, she said it was her "poor, tired, husband's favorite" chicken, it's cheap, easy, and comes out kinda like chicken teriyaki! Even the kids love it! And... who woulda thought? This recipe also works well on pork...

Steps:
- Preheat oven to 375 degrees. Place chicken in a deep roasting pan (at least 2 1/2 inches)with a lid.
- cover the meat with: vanilla, cinnimon, molasses, sweetner, onion, finely diced tomato, and enough coffee to cover the meat.
- Cover and place in oven for two hours. (now's a good time to get your rice going)
- Remove meat from "sauce", let cool, de-bone and skin.
- Shred cooled meat with fork or fingers (if the meat is cooked well enough this should be easy)
- mix shredded meat back into "sauce" mixture, and re-heat over stovetop or in microwave.
- Serve over rice.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Season with pepper and garlic powder. Layer the beef, potatoes and onion slices in a shallow 2-qt. baking dish. Combine soup and milk; pour over all. , Cover and bake at 350° for 1-1/4 hours or until potatoes are tender. Garnish with parsley.,

- Brush chicken with melted butter; sprinkle with dressing mix, salt and pepper. Pour 1/4 cup broth into a 5-qt. slow cooker; add chicken. Cover and cook on low for 4-5 hours or until a thermometer reads 170°. Remove to a serving platter; keep warm. Reserve 3/4 cup cooking juices; set aside., In a large saucepan, cook onion in butter over medium heat until tender. Stir in the soup, cooking juices, garlic and remaining broth; heat through. Add cream cheese; cook and stir until cheese is melted. Serve with chicken and rice; sprinkle with almonds.
