PASTA SALAD WITH CHICKEN, CUCUMBER, CHERRY TOMATOES AND FETA



Pasta Salad with Chicken, Cucumber, Cherry Tomatoes and Feta image

Number Of Ingredients 10

Kosher salt
1/2 pound penne
3 cloves garlic, thinly sliced
Pinch of crushed red pepper flakes
1/2 cup extra-virgin olive oil
Freshly ground black pepper
1 cup chopped cooked chicken
1 cup diced cucumber
1 cup halved cherry tomatoes
1/2 cup crumbled feta cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the penne and cook according to the package directions; drain and rinse under cold water. Transfer to a large bowl.
  • Meanwhile, make the dressing: Combine the garlic, red pepper flakes and olive oil in a small saucepan. Cook over medium heat, stirring, for 3 minutes; let cool. Season with salt and black pepper.
  • Add the chicken, cucumber, cherry tomatoes and feta to the pasta. Pour the dressing over the pasta salad and toss to coat. Season with salt and black pepper. Chill for up to 3 hours.

12 ounces ditalini or other pasta
1/2 cup reduced-sodium chicken broth
1 tablespoon olive oil
1 tablespoon red wine vinegar
2 cloves garlic, minced
1 teaspoon Dijon mustard
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and ground black pepper
2 cups cooked cubed chicken (about 1 pound)
1 green bell pepper, seeded and diced
1/4 cup chopped fresh mint leaves
1/2 cup crumbled feta cheese

Steps:

  • Cook pasta according to package directions.
  • In a small bowl, whisk together broth, oil, vinegar, Dijon mustard, thyme, salt and pepper to taste. Add diced chicken, green pepper, and mint.
  • Drain pasta and add to bowl with dressing and chicken. Toss to combine. Cover with plastic and refrigerate until ready to serve. Top with feta cheese just before serving.

2 cups orzo pasta, uncooked
1 can (14 oz.) fat-free reduced-sodium chicken broth
3/4 cup prepared GOOD SEASONS Garlic & Herb Dressing Mix, divided
1/2 tsp. dried oregano leaves
1 lb. boneless skinless chicken breasts, cut into thin strips
3 plum tomatoes, chopped
1/2 cup sliced Kalamata olives
1 container (4 oz.) crumbled reduced fat feta cheese
1/4 cup chopped pepperoncini peppers

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook broth, 1/4 cup dressing and oregano in large skillet on medium heat 10 min. Add chicken; cover. Simmer on medium-low heat 8 min. or until chicken is done, stirring occasionally.
  • Drain pasta. Transfer chicken to large serving bowl. Add remaining dressing, pasta and all remaining ingredients except peppers; mix lightly. Top with peppers.
  • Refrigerate 1 hour.

Another great quick and easy BBQ chicken salad! Pecan can be used instead of walnuts. I've allowed 15 minutes cook time for pasta.

300 g frilled pasta shells
1 (270 g) jar char-grilled red capsicums, in oil
150 g feta cheese, chopped coarsely
425 g cooked chicken, coarsely chopped
35 g walnuts, toasted and coarsely chopped
1 cup fresh basil leaf, loosely packed
60 ml red wine vinegar
1 garlic clove, crushed
2 teaspoons coarse grain mustard

Steps:

  • Cook pasta in large saucepan of boiling water until just tender, drain and rinse under cold running water, drain again.
  • Drain capsicum, reserving 1/3 cup of the capsicum oil, chop capsicum coarsely.
  • Combine capsicum and pasta in large bowl with feta cheese, chicken, walnuts and basil.
  • Combine reserved oil with vinegar, garlic and mustard, mixing well.
  • Drizzle dressing over chicken mixture, toss gently to combine.

2 tablespoons white wine vinegar
1/2 teaspoon garlic, minced
2 tablespoons basil, chopped
2 medium tomatoes, diced
1/2 cup feta cheese, crumbled
1/2 cup black olives, pitted
8 cups spinach, rinsed and stemmed
1 1/2 lbs boneless chicken breasts, grilled and diced

Steps:

  • Cook and drain the pasta, Set aside.
  • Whisk together the oil, vinegar, garlic and basil.
  • Toss with the pasta.
  • Add the tomatoes, feta and olives.
  • Chill for 1 hour.
  • Arrange the spinach on 4 plates.
  • Top with the pasta salad.

Feta - diced or crumbled
Canned diced tomatoes (with chilies if you like)
Roast Chicken Breast Shredded (I buy a whole roasted chicken from the super market and make multiple dishes out of it.)
Pickled Onion (easy to make with sugar vinegar and sliced onion)
Salt and Pepper to taste
Olive Oil
Balsalmic Vinegar
Spinach

Steps:

  • Cook the pasta - while cooking Mix Oil, Vinegar, Add shredded chicken, pickled onion diced, tomato, and feta. Rise pasta and add to mixture, salt and pepper to taste from here - feel free to add other herbs to your liking - When I am ready to grab a serving I mix this salad with some fresh spinach - If your salad dried out after being in the fridge ad a little more olive oil to the mix before serving.
