4 tablespoons olive oil, plus more for greasing
2/3 cup breadcrumbs
Kosher salt and freshly ground black pepper
4 boneless, skinless chicken breasts (about 2 pounds)
4 heads broccoli, cut into florets (about 6 cups)
2 cups grated Parmesan
1/4 cup unsalted butter
1/2 cup all-purpose flour
1/4 teaspoon freshly grated nutmeg
Pinch cayenne pepper
3 cups milk
2 cups shredded sharp Cheddar
1 cup chicken stock
1/2 cup dry white wine
1/2 teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees F and place a rack in the top third of the oven. Grease a 9-by-13-inch baking dish with some olive oil and set aside.
  • In a medium bowl add the breadcrumbs and the olive oil. Season with salt and pepper and set aside.
  • Place the chicken in a large pot and cover with water. Add 4 teaspoons salt and bring to a boil, then immediately reduce to a low simmer. Cook the chicken until the internal temperature on an instant read thermometer reads 160 degrees F, 15 to 20 minutes.
  • Remove and cool slightly, then slice the chicken into thin strips or shred, and place in the bottom of the prepared dish. Add the broccoli and sprinkle the Parmesan over the top.
  • Melt the butter in a medium saucepan set over medium heat. Add the flour and use a wooden spoon or whisk to stir until smooth and cooked, 4 to 5 minutes. Add the nutmeg, and cayenne. Slowly whisk in the milk, Cheddar, stock and wine. Bring to a boil, whisking often. Reduce to a simmer and cook until thickened and smooth, 5 to 8 minutes.
  • Pour the sauce over the broccoli and chicken and then top with the breadcrumb mixture and sprinkle the paprika over the top. Cover the dish with foil and bake 15 minutes. Remove the foil and bake until the top is golden and the casserole is bubbling, 15 minutes.
  • Cool for about 5 minutes and then serve.

2 skinless, boneless chicken breast halves
4 cups broccoli florets, or to taste
3 tablespoons butter
1 small onion, chopped
1 ½ teaspoons minced garlic
½ teaspoon garlic salt
⅛ teaspoon dried parsley
salt and ground black pepper to taste
3 cups cauliflower florets
1 cup chicken broth
1 cup heavy whipping cream
1 teaspoon lemon juice
½ cup mayonnaise
2 cups shredded Cheddar cheese

Steps:

  • Place chicken breasts into a large pot and cover with water; bring to a boil. Cook until chicken is no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center of a breast should read at least 165 degrees F (74 degrees C). Remove chicken from the water.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 3 to 6 minutes. Chop broccoli.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a deep saucepan over low heat. Add onion and garlic; cook and stir until onion is clear and tender, 8 to 12 minutes. Add garlic salt, parsley, salt, and pepper.
  • Pulse cauliflower in a blender or food processor until it resembles rice. Add cauliflower and chicken broth to the onion mixture; cook and stir until broth is nicely absorbed, about 10 minutes. Add heavy cream and lemon juice. Let simmer, uncovered, stirring occasionally, until well combined, about 10 minutes. Stir in mayonnaise and remove from heat. Let sauce cool until thickened.
  • Pull chicken apart with 2 forks into bite-size pieces. Add 1/2 the pulled chicken to the sauce.
  • Line the bottom of a casserole dish with the rest of the pulled chicken. Lay steamed broccoli on top; pour the cauliflower sauce over the broccoli. Top with Cheddar cheese. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove foil and bake until cheese at the edges is slightly browned, about 10 minutes more. Let casserole cool for 5 to 10 minutes; slice into 6 even portions.

1 generous bundle broccolini, trimmed and cut into 2-inch pieces or 1 small head broccoli, trimmed and cut into small, thin stalks and florets
Salt
2 pieces boneless, skinless chicken breast, fat removed
1 medium onion
2 fresh bay leaves
1 pound extra-wide egg noodles
1 tablespoon extra-virgin olive oil
1 medium onion, finely chopped
2 cloves garlic, finely chopped
3 tablespoons butter
2 rounded tablespoons flour
2 cups whole milk
Freshly ground black pepper
Freshly grated nutmeg
A few sprigs fresh thyme, leaves removed and chopped
2 egg yolks
1 cup white or whole wheat panko (Japanese) bread crumbs
1 cup shredded Gruyere cheese
1/2 cup shredded Parmigiano-Reggiano cheese
A handful fresh flat-leaf parsley, finely chopped

Steps:

  • Place a large pot of water on to boil for egg noodles and broccolini. Salt the water and cook the broccolini until tender. Remove to a plate. When the broccolini is cool enough to handle chop it into bite-size pieces.
  • Place the chicken in a few inches of water with a peeled quartered onion and a couple of bay leaves. Bring the water to a low boil then reduce the heat to a simmer and gently poach the chicken 10 to 12 minutes.
  • Meanwhile, heat the extra-virgin olive oil in skillet over medium heat and saute the onions and garlic until tender, 8 to 10 minutes. Add the broccolini to the pan and season with salt and pepper. Turn the heat off pan.
  • While the onions cook, heat the butter in a medium saucepot over medium heat, whisk in flour 1 minute then whisk in the milk and season with salt, pepper, freshly grated nutmeg, and thyme. Thicken 5 minutes then whisk in a little of the sauce to the egg yolks to combine, then add the egg yolks back to the sauce and whisk to combine, turn heat down to the lowest setting.
  • Cook's Note: If sauce becomes too thick, add a splash of chicken poaching liquid and turn off the heat.
  • Shred the poached chicken with forks or dice poached chicken into small, bite-size pieces.
  • Preheat the broiler.
  • To the large pot of boiling water, add the egg noodles. Cook the noodles according to package directions for al dente. Drain the noodles very well and add them back to the hot pot. Stir in the broccolini, chicken, and sauce, and then transfer to a casserole dish. Place the casserole in the middle of the oven and broil 3 to 5 minutes until bubbly and brown. Cool and store for make-ahead meal.
  • To serve the casserole, heat the oven to 375 degrees F. Mix together the panko, Gruyere, Parm, and parsley. Place the casserole on a baking sheet in upper half of the oven and bake 30 minutes, add the topping and bake 15 to 20 minutes more, or until brown and crispy on top.

MAKE-AHEAD CHICKEN DIVAN CASSEROLE

My entire family loves this dish. The word "casserole" is in the name since traditional chicken divan is made separate from the rice and served alongside it. This can be prepared a day or two in advance and baked before serving. Simplify the process by using leftover cooked rice and a store-bought cooked chicken.

1 ½ cups grated Cheddar cheese
½ cup shredded Parmesan cheese, or more to taste

½ cup diced onion

1 (10.5 ounce) can condensed cream of mushroom soup
½ cup sour cream
½ cup milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

water
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder

2 teaspoons lemon juice

2 cups chopped broccoli (cut into small pieces)
20 ounces cream of chicken soup (2 cans)
1 cup milk
1 teaspoon lemon juice
1/4 teaspoon onion powder

1/8 teaspoon black pepper
1 cup shredded cheddar cheese (divided)
2 cups diced or shredded cooked chicken breast
1/2 cup Panko crumbs
1 tablespoon melted butter

Steps:

fresh thyme, leaves removed and chopped
2 egg yolks
1 pound extra wide egg noodles
1 cup white panko break crumbs
1 cup shredded gruyere cheese
1/2 cup shredded parmigiano reggiano cheese
parsley, finely chopped

Steps:

  • boil broccoli. Salt the water and cook until broccoli is tender. Remove to plate. Chop into bite sized pieces. Refill pan with water, boil and cook noodles according to package directions. Drain noodles and return to hot pot. Place the chicken in a few inches of water with the peeled and quartered onion and a couple of bay leaves. Bring the water to a low boil, then reduce the heat and simmer and gently poach the chicken for 10-12 minutes. Heat oil in skillet over medium heat and sauté the chopped onion and garlic until tender, 8-10 minutes. Add the broccoli to the pan and season with salt and pepper. Turn on heat off under the pan. While the onion cooks, heat the butter in a medium sauce pot over medium heat. Whisk in the flour, 1 minute, then whist in the milk and season with salt, pepper, freshly grated nutmeat and thyme. Thicken for 5 minutes, then whisk a little of the sauce into the egg yolks to combine, then add the egg yolks back to the sauce and whisk to combine. Turn heat down to the lowest setting. Shred or dice the chicken, pre-heat the broiler and then add chicken, broccoli, and sauce into the hot pot with the egg noodles. then transfer all to a casserole dish. Placed casserole dish in broiler for 3-5 minutes until bubbly. Remove from broiler. Bake at 375 for 30 minutes, then remove from oven. While baking make topping by mixing grated cheese and panko crumbs. Top casserole and bake for another 20 minutes or until top is brown and crispy.

I love putting chicken divan together in one, simple and delicious casserole. The flavors are mildly distinct, yet maintain a fresh, light flavor. My mother always made this from scratch, and there's no other way to get that rich, full flavor. I make this more fiber/calorie-friendly by substituting white whole-wheat flour, fat-free and low sodium chicken broth, and fat-free half-and-half. Feel free to adjust the lemon juice, sherry or parmesan cheese to your liking. Serve with caesar or tossed salad. Enjoy!

1 1/2 lbs boneless skinless chicken breasts
1 lb fresh broccoli, cut into small spears
2 cups brown rice
1/4 cup butter
1/4 cup flour
2 1/4 cups chicken broth
3/4 cup cream
1/4 cup sherry wine
1/4 cup lemon juice
1/2 cup parmesan cheese, divided
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon nutmeg
1/4 cup breadcrumbs

Steps:

  • Place 4 cups water and the 2 cups rice in a large pan. (I add 2T. olive oil, 1 t. salt and ½ t. pepper for a more flavorful rice.) On high heat, cover the rice and allow it to come to a boil. Once it boils, stir, reduce heat to low, cover tightly with lid and let cook for 35-40 minutes, undisturbed. Remove from heat and let sit for 5 minutes. Fluff with a fork and set aside.
  • While rice is cooking, place chicken on a baking pan. Rub the chicken with olive oil, salt and pepper. Roast in a pre-heated 375 degree oven for 25-30 minutes. Let rest for at least 10 minutes before slicing.
  • While chicken and rice are cooking, begin to boil the water for the broccoli. Add the broccoli (and 1 t. salt), allowing it to cook just until the color is bright green, about 2-3 minutes. Drain the broccoli and immediately place in a large bowl of cold water to completely stop the cooking. Drain and set aside.
  • In a heavy saucepan on medium-high heat, melt the butter. Using a whisk, add the flour and cook for about 3 minutes, stirring constantly. Add chicken broth and whisk together until the sauce begins to thicken. Add the cream, ¼ cup of the parmesan cheese, sherry, lemon juice, and the seasonings. Mix together. Reduce the heat to medium. Stir for an additional 5 minutes, allowing the flavors to blend together.
  • Grease a 10x13 casserole pan. Assemble the casserole: rice on bottom, followed by a layer of broccoli, pouring half of the cream sauce over the broccoli. Add the sliced chicken, followed by the remaining cream sauce poured over the top. Sprinkle casserole with the bread crumbs and the reserved ¼ cup parmesan cheese. Bake, uncovered in a 375 degree oven for 45 minutes.

1 head broccoli
3-4 large carrots
2 chicken breasts, thawed
1 Tbsp salt
1/4 cup olive oil
2 Tbsp basil, divided
1 can Campbell's Cream of Chicken Soup
2 cups Kraft Shredded Cheddar Cheese
1 Tbsp cumin
1 Tbsp lemon juice (to taste)
1 cup Kraft Mayonnaise
6 slices sourdough bread
1 Tbsp butter

Steps:

  • Preheat oven to 375 degrees F. Chop broccoli and carrot into bite sized pieces, steam. Chop chicken into bite sized pieces, fry in frying pan with salt, olive oil, and 1 Tbsp. basil. While these are cooking, mix in bowl: cream of chicken soup, shredded cheddar cheese, cumin, lemon juice, and mayonnaise. Layer in large casserole dish as follows: veggies, chicken, sauce.
  • Chop sourdough bread into bite sized squares. Fry bread pieces in the same frying pan as chicken, adding more basil and olive oil if needed. Cook until brown. Place bread pieces evenly over top of casserole.
  • Cook 45 minutes in oven.

2 pkg (10 oz.) frozen chopped broccoli, cooked and drained
2 c cubed cooked chicken
2 can(s) (10 oz.) cream of chicken soup
1 c mayonnaise
1 tsp lemon juice (optional)
1/2 tsp garlic powder (optional)
1/2-1 c shredded sharp cheddar cheese
pinch pepper (optional)

Steps:

  • 1. Arrange broccoli in bottom of 9 X 13 inch baking dish.
  • 2. Place chicken on top.
  • 3. Combine soup, mayonnaise, lemon juice, garlic powder and pepper; spread evenly over chicken.
  • 4. Bake at 350 degrees for 30 minutes.
  • 5. Sprinkle cheese on top and return to oven to melt cheese (about 5 minutes more).
