1-2 tablespoons olive oil
1 pound boneless (skinless chicken)
1-2 tablespoons all-purpose flour (optional (this is used to thicken the curry))
1/2 cup chicken broth
1 cup coconut cream or coconut milk
2 tablespoons curry seasoning (1 tablespoon each of two types of curry or 2 tablespoons of one type)
1/4 package No Yolks Broad Noodles

Steps:

  • Cut approximately 1 pound of boneless, skinless chicken into cubes.
  • Place cubed chicken, place it into a pan with 1-2 tablespoons of your preferred oil.
  • Cook the chicken on medium heat, stirring on and off to turn the meat and make sure all sides are cooked through.
  • To thicken curry (optional): Add flour to cooked chicken and stir until all incorporated. If you are cooking with coconut cream and still want a thickener, you could use 1 tablespoon of flour to help thicken your curry. When using coconut milk, I would increase the flour to 2 tablespoons because the coconut milk is much thinner than coconut cream.
  • First, add in just 1/2 cup of chicken broth. If you've already added flour in to thicken the curry sauce, you'll want to stir this in slowly. If you're adding it in without a thickener, then just pour and stir.
  • Next, add in the coconut cream or coconut milk.
  • Add in the curry seasonings.
  • Once all the ingredients have been added, all that is left to do is stir and watch the flavors meld together.
  • Cook over medium-low heat for 20-25 minutes.
  • In a separate pan, boil water and cook No Yolks Broad Noodles per package instructions.
  • Serve curry over noodles and top with garnishes of choice.

2 tablespoons Indian curry paste
3 tablespoons olive oil
4 boneless, skinless chicken breasts, cut into strips
1/2 bunch basil, leaves chopped
1/2 bunch cilantro, leaves chopped
2 (13.5-ounce) cans coconut milk
2 tablespoons soy sauce
Kosher salt
Freshly ground black pepper
Steamed rice, to serve
Paprika, for garnish
1 scallion, thinly sliced, for garnish

Steps:

  • In a large microwave safe pot with a lid, mix together the curry paste and oil. Microwave on high for 3 minutes. Add the chicken to the pot and stir. Cover with the lid and microwave on medium for 8 minutes.
  • Add the basil, cilantro, coconut milk, and soy sauce and season with salt and pepper. Give it a good stir, cover it, and microwave on medium for 4 minutes. Stir it again, cover, and let it rest for 3 or 4 minutes. Serve over steamed rice, garnished with paprika and scallions.

150 g hokkien noodles
1 large chicken breast, cooked
400 ml light coconut cream
1 1/2 tablespoons yellow Thai curry paste
2 tablespoons lemon juice
1/2 teaspoon lemon rind, finely grated
1/2 cup red capsicum, finely sliced
1/2 cup red onion, finely sliced
1/2 cup zucchini, finely sliced
1/2 cup snow peas, cut into fine strips

1 cup bean sprouts

2 cloves garlic, minced
3 tablespoons curry powder
1 teaspoon ground cinnamon

1 bay leaf
½ teaspoon grated fresh ginger root

2 skinless, boneless chicken breast halves - cut into bite-size pieces

1 cup plain yogurt
¾ cup coconut milk
½ lemon, juiced

We love curry noodles. My family always ordered a version of this whenever we went to a Chinese restaurant. I use this recipe when we want something spicy, and don't have a lot of time. I use leftover chicken, beef or even salad shrimp if I want meat in the noodles. I have also browned whatever meat from scratch. It can also have leftover veggies. My kids eat the vegetarian version cold.

1 lb angel hair pasta
8 ounces boneless skinless chicken, cut in strips (optional)
1 tablespoon curry powder ((to taste)
1 teaspoon tahini paste (ground sesame seed)
1 bunch spring onion
1 (10 ounce) bag coleslaw mix
1 green peppers, cut into strips (can use frozen) or 1 stir fry vegetables (can use frozen)
2 tablespoons oil (I use olive or canola)
1 dash soy sauce, to taste

Steps:

  • Boil pasta and drain; set aside.
  • Cut spring onions into 1 inch pieces.
  • While pasta is boiling, brown meat in pan if starting from scratch with 1 tbsp of the oil. If using leftovers, Quick fry the coleslaw mix and the veggies in the oil.

  • Stir in the pasta, and the remaining oil to help coat the noodles in curry. Add the dash of soy sauce.
