Steps:
- Heat oven to 375. Peel beets and cut into 1 inch chunks. Toss with oil and season with 1/4 tsp salt and pepper. Roast 30 mins tossing ocassionally. Sprinkle with mustard, corinader and cumin and roast until tender about 15 mins more. Prepare dressing while roasting: use mortar and pestle to mash garlic with pinch of salt to a paste. Place yogurt in bowl and whisk in garlicpaste, jalapeno,ginger, 1/4 tsp salt and lime juice and cilantro. Stir beets and dressing together.
