CHEESY CHICKEN CRESCENT ROLLS
Colder weather means comfort food. These stuffed crescent rolls are comfort food all the way. This dinner is super easy to make - great on a weeknight. It's a cross between chicken noodle soup and chicken dumplings. Kids are going to love this. Easy dinner on a cold day.

Steps:
- 1. Cook how you like. I either put a little salt, pepper, onion and garlic powder. Then I cook in a frying pan with a little olive oil. You can also use a rotisserie chicken pulled off bone and skin removed. Remove and dice.
- 2. Mix 1/2 cup mozzarella cheese with the chicken in a bowl. Set aside.
- 3. Separate and unroll the crescent rolls.
- 4. Place chicken and cheese mixture on the large end of a separated crescent roll.
- 5. Then roll the dough to form a crescent.
- 6. Once rolled, place in a 9 x 13 dish. Continue until all rolls are completed.
- 7. Heat soup, milk and the remaining cheese in a saucepan.
- 8. When warm pour soup mix over the chicken rolls.
- 9. Bake at 350 degrees uncovered for 30 minutes or until brown and bubbly.
- 10. NOTE: You can also make this into one roll. Here are the directions: 1. Cook chicken and dice. Mix 1/2 cup mozzarella cheese with chicken in the bowl; set aside. 2. Separate and unroll the crescent rolls and place side by side in a 9x13 baking dish. Put chicken mixture at one end of roll and roll into a cake roll (like a log). 3. Heat soup, milk and the remaining cheese in a saucepan. When warm pour soup mix over the chicken roll. Bake at 350 degrees uncovered for 30 minutes or until brown and bubbly. You can double the recipe and put both loaves in the 9x13 pan.

- Preheat oven to 375°. In a small saucepan, combine chicken, cream cheese, cheddar cheese, ranch dressing and wing sauce. Cook and stir over low heat until cheeses are melted, about 5 minutes. Remove from the heat., Unroll tubes of crescent dough; separate into 16 triangles. Place 1 tablespoon chicken mixture in the center of each triangle; sprinkle with 1 teaspoon blue cheese. Bring corners of dough over filling and twist; pinch seams to seal (filling will not be completely enclosed). Place on ungreased baking sheets., Bake until golden brown, 15-20 minutes. Serve warm.

CHICKEN AND BROCCOLI STUFFED CRESCENT ROLLS
We can do this two ways. You can dollop each individual crescent and roll them up the traditional way. Or you can leave two crescents together, pinch the seams at the perforation, making a rectangle and pile double the amount in. Then just gently pull the corners up and pinch it perfect.

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Heat the oil in a medium nonstick skillet over medium-high heat. Sprinkle the chicken with some salt and pepper and sear on one side for 5 minutes. Flip and sear for 5 minutes more. Transfer the chicken to a plate to let cool for 5 minutes, then give it a good chop.
- Meanwhile, add the broccoli to a food processor and pulse until finely minced. While the chicken is resting, add the broccoli to the skillet with a pinch of salt and saute until the broccoli slightly wilts and pops in color, 3 to 5 minutes, adding a little oil if needed.
- Combine the chicken, broccoli, mozzarella, mayonnaise, garlic powder, Italian seasoning and a pinch of salt in a large bowl until fully incorporated.
- Roll the crescents out two ways: You can unfold each individual triangle and dollop about 1 tablespoon of the chicken mixture at the thicker end, rolling it up to make sure the tip is on top. Or you can unroll two crescents together to make a rectangle, pinch them together at the perforation, dollop about 1/2 cup of the chicken mixture in the center and gently pull the corners together on top, pinching to seal.
- Place the crescent rolls on the prepared baking sheet and brush with the beaten egg. Sprinkle each with the Parmesan and bake until golden brown on top, 14 to 20 minutes depending on their size. Serve with any dipping sauces you prefer.

- Preheat the oven to 350 degrees F (175 degrees C). Line the bottom of an ungreased 9x13-inch baking dish with one can of crescent roll dough, pinching the seams together. Set second can of dough aside.
- Melt butter in a saucepan over medium heat. Add chicken, frozen vegetables, and sliced potatoes. Cook, stirring frequently, until vegetables are thawed and mixture is heated through, 5 to 7 minutes.
- Meanwhile, warm both cans of condensed soup in a separate pan over medium-low heat. Slowly add milk and cook, stirring frequently, until combined and heated through, about 3 minutes.

- Boil chicken and shred. Mix in 1 cup cheddar cheese. Form into balls. Wrap each chicken and cheese ball in a crescent roll. Put in casserole dish.
- In a saucepan, combine Cream of Chicken soup and milk. Add salt and pepper to taste. Stir until well blended. Pour over crescent rolls. Sprinkle remaining cheddar cheese over each crescent roll. Bake in oven at 325 degrees for about 35 - 45 minutes until crescent rolls are brown on top. Serve with rice. (I usually boil the rice in the water I boiled the chicken in.).

BAKED CHICKEN IN CRESCENT ROLLS FOR 2
This is my version of a recipe that was in a local magazine from our power company. I changed around a few of the ingredients and scaled it to feed two. Hope you enjoy. I love it because it is pretty quick and easy. Just add a salad and green beans and you have a wonderful meal.

- Poach the chicken for 15 minutes in enough water to cover; salt and pepper the water; remove from water, cool and cut into 4 pieces.
- Divide the crescent rolls and roll chicken in the rolls (you will not use but 4 of the rolls, so you will have 4 left over to cook for your bread) Place the chicken into a 8x8 casserole dish which has been sprayed with pam or buttered.
- Place seam side down.
- Heat soup, milk and 1/2 cup cheese in a small sauce pan until cheese is melted.
- Pour over chicken bundles and then sprinkle the other 1/2 cup cheese on top.
- Bake at 350 degrees until rolls are golden brown, approximately 20 minutes.
- NOTE: I always freeze the water that I use to poach the chicken in 2 cup servings.
- I then use this in the place of water in soups and stews.
CHICKEN AND SPINACH CRESCENT ROLLS
Steps:
- Preheat oven to 350 degrees F. Boil chicken breast approximately 15 to 20 minutes or until done. Mix cream cheese, parmesan cheese, spinach, garlic powder (1/2 Tbsp.), and boiled chicken until well blended.
- Place the chicken and cream cheese mixture inside each individual crescent roll (6) then roll to secure. Melt butter and add 1 tsp. garlic after mixed well brush on top of crescent rolls.
- Bake for approximately 10 minutes then top each crescent roll with mozzarella cheese, bake for the remaining 2 to 5 minutes or until crescent rolls are thoroughly cooked.
