CHICKEN CHASSEUR (HUNTER-STYLE CHICKEN)



Chicken Chasseur (Hunter-style Chicken) image

1 (4-pound) chicken, quartered
Salt and pepper
Clarified butter
5 ounces cremini mushrooms, emincer (thinly sliced)
1 large shallot, ciseler (fine dice)
2 ounces Cognac
2 ounces dry white wine
1 1/2 cups enriched chicken stock
1/4 cup tomato concasse (peeled, seeded, and diced tomato)
1-ounce cold butter
1 teaspoon finely chopped fresh tarragon leaves
1 teaspoon finely chopped fresh chervil leaves or flat-leaf parsley

Steps:

  • Preheat oven to 375 degrees F.
  • Season chicken pieces on both sides with salt and pepper. Heat a few tablespoons of clarified butter in a Dutch oven over high heat. Place chicken in skin side down and cook until golden brown. Turn the chicken over and brown the other side. Remove chicken to a baking sheet and bake in the oven until just cooked through, about 12 to 15 minutes.
  • Remove all but 2 tablespoons of the fat from the pan. Add the mushrooms, season with salt and pepper, and saute until golden brown. Add the shallots and cook for 30 seconds. Remove the pan from the heat and add the Cognac and cook until completely reduced. Add the wine and cook until completely reduced. Add the stock and tomato and bring to a simmer. Cook until the sauce is thick enough to coat the back of a spoon ("nappe") and then swirl in the butter ("monter au beurre"). Once the butter is added, the sauce can not be further reduced because it will break. Season with salt and pepper and stir in the tarragon and chervil.
  • Remove the chicken from the oven and let rest for 5 minutes. Remove the breastbone from the breast. Cut each breast into 2 even pieces on the bias. Cut the legs into 2 pieces at the joint and on the bias and remove the thighbones. Serve 1 leg piece and 1 breast piece. Make sure only 1 piece contains a bone. Serve on hot plates, napped with the sauce.

ONE-POT CHICKEN CHASSEUR

This French bistro classic is easy to make at home and fabulous with creamy mash or crusty bread

1 tsp olive oil
25g butter
4 chicken legs
1 onion, chopped
2 garlic cloves, crushed
200g pack small button or chestnut mushrooms
225ml red wine
2 tbsp tomato purée
2 thyme sprigs
500ml chicken stock

Steps:

  • Heat 1 tsp olive oil and half of the 25g butter in a large lidded casserole.
  • Season 4 chicken legs, then fry for about 5 mins on each side until golden brown. Remove and set aside.
  • Melt the remaining butter in the pan. Add 1 chopped onion, then fry for about 5 mins until soft.
  • Add 2 crushed garlic cloves, cook for about 1 min, add 200g small button or chestnut mushrooms, cook for 2 mins, then add 225ml red wine.
  • Stir in 2 tbsp tomato purée, let the liquid bubble and reduce for about 5 mins, then stir in 2 thyme sprigs and pour over 500ml chicken stock.
  • Slip the chicken legs back into the pan, then cover and simmer on a low heat for about 1 hr until the chicken is very tender.
  • Remove the chicken legs from the pan and keep warm. Rapidly boil down the sauce for 10 mins or so until it is syrupy and the flavour has concentrated.
  • Put the chicken legs back into the sauce and serve.

SLOW COOKER CHICKEN CHASSEUR

Throw a handful of ingredients in the slow cooker at the start of the day and this classic French chicken chasseur will be ready by the time you get home

2 tbsp olive oil
4 chicken thighs, skin-on and bone-in
2 shallots or 1 onion, finely chopped
2 garlic cloves , crushed
200g baby chestnut mushrooms , halved
200ml white wine
1 tbsp tomato purée
200g chopped tomatoes
2 thyme sprigs
1 bay leaf
400ml hot chicken stock
small handful of parsley , finely chopped, to serve
mash , jackets, pasta or roast potatoes, to serve (optional)

Steps:

  • Heat the slow cooker to low. Put the oil in a frying pan over a medium-high heat. Season the chicken and fry, skin-side down, for 4-5 mins until crisp. Turn and fry for 3-4 mins more until golden all over. Put on a plate and set aside.
  • Tip the shallots into the pan and fry for 10 mins over a medium heat until soft. Add the garlic and mushrooms and fry for 10 mins more until the mushrooms are golden. Pour in the wine and bubble for a few minutes until reduced by half. Stir in the tomato purée, chopped tomatoes and herbs. Season well and bring to a simmer.
  • Tip the sauce into the slow cooker, and top with the chicken thighs (in one layer, if possible). Pour over the chicken stock until the chicken thighs are covered, adding a little more if needed. Cover and cook for 6-8 hrs until the sauce has thickened and the chicken is tender. Transfer the chicken to a plate and bubble the sauce for a few minutes more with the lid off, if you prefer a thicker sauce (you can only do this if there's a reduce function on the slow cooker. If not, pour the sauce into a pan and simmer until reduced). Remove the skin from the chicken before serving, if you prefer.
  • Sprinkle over the parsley and serve the chicken and sauce with buttery mash, jackets, pasta or small roast potatoes, if you like.

4 bone-in chicken breasts with skin (6 ounces each)
Salt and freshly ground pepper
2 teaspoons olive oil
1 medium carrot, chopped
1/2 cup chopped onions
2 cups brown veal stock
2 cups sliced button mushrooms
2 shallots, minced
2 tablespoons cognac
1/2 cup dry white wine
2 tablespoons chopped fresh tarragon

Steps:

  • Preheat the oven to 350 F.
  • Season the chicken with the salt and pepper. Warm 1 teaspoon of the oil in a large nonstick saute pan over medium heat. Carefully, lay the chicken breasts, skin side down, in the pan. Sear for 3 minutes, or until the skin has nicely browned. Transfer the chicken, skin side up, to a nonstick jelly-roll pan. Reserve the saute pan.
  • Bake the chicken for 20 minutes, or until the juices run clear when the chicken is pierced with a knife.
  • While the chicken is cooking, remove most of the fat from the saute pan. Add the carrots and onions to the pan. Saute over medium heat for 3 minutes, or until the vegetables begin to caramelize. Add the stock and raise the heat to high. Bring to a boil, then reduce the heat to medium. Simmer for 10 minutes, or until the liquid has reduced by half. Strain through a fine sieve into a small bowl; skim off any fat that rises to the surface.
  • Warm the remaining 1 teaspoon oil in a medium saute pan over medium heat. Add the mushrooms and shallots. Saute for 5 minutes, or until the mushrooms are golden. Season with the salt. Remove the pan from the heat and add the cognac. Carefully ignite the cognac with a long match. Allow the flame to burn out, then add the wine. Return the pan to the heat.
  • Bring to a boil over medium-high heat. Reduce the heat to medium and simmer for 10 minutes, or until the liquid has reduced by half. Add the reserved stock and simmer for 5 minutes, or until the sauce is thick enough to coat the back of a spoon. Stir in the tarragon. Taste and adjust the seasoning.
  • Remove the skin from the chicken breasts. Carefully cut the breast meat from the breast bone and then cut each breast, on the diagonal, into 2 pieces. Place a divided chicken in the center of each of 4 warm dinner plates.

QUICK CHICKEN CHASSEUR

8 rashers streaky bacon, chopped into large pieces
4 chicken breasts, cut into large chunks
200g pack baby button mushroom
1 tbsp plain flour
400g tin chopped tomato with garlic
1 beef stock cube
dash Worcestershire sauce
handful of parsley, chopped

Steps:

  • Heat a shallow saucepan and sizzle the bacon for about 2 mins until starting to brown. Throw in the chicken, then fry for 3-4 mins until it has changed colour. Turn up the heat and throw in the mushrooms. Cook for a few mins, stir in the flour, then cook until a paste forms.
  • Tip in the tomatoes, stir, then crumble in the stock cube. Bubble everything for 10 mins, splash in the Worcestershire sauce, stir through the parsley, then serve with mash or boiled rice.

1/2 chicken, cut into pieces (thigh, leg, 1 breast cut in half with wing attached)
Kosher salt and freshly ground black pepper
12 to 13 cremini mushrooms, stems removed and caps cut into 1/8ths
1 large shallot, finely diced
2 tablespoons tomato paste
1/2 cup dry white wine
2 tablespoons cognac
1 to 1 1/2 cups chicken stock
1 to 2 tablespoons cold butter
Finely chopped fresh tarragon
Creamy Polenta with Gruyere and Parmesan, for serving, recipe follows
Fresh chervil sprigs, for garnish
5 cups low-sodium chicken stock
1 cup quick-cooking polenta
1/4 cup heavy cream
1/2 cup grated gruyere
1/2 cup grated Parmesan
Kosher salt and freshly ground black pepper

Steps:

  • Heat a few tablespoons of oil in a Dutch oven over high heat. Sprinkle the chicken pieces on both sides with salt and pepper. Place the chicken in skin-side down and cook until golden brown. Turn the chicken over and brown the other side. Remove the chicken to a baking sheet or plate and set aside.
  • Add the mushrooms, season with salt and pepper and saute until golden brown. Remove the mushrooms from the pan. Add a touch more canola oil and add the shallots and cook for 30 seconds. Add 1 tablespoon of the tomato paste and cook for 1 to 2 minutes. Add the white wine and cognac and reduce for 4 to 5 minutes. Add the stock and bring to a boil. Add the mushrooms and nestle the chicken into the sauce, skin-side up. Reduce the heat to a simmer, cover and cook until the chicken is cooked through, about 15 minutes.
  • Once the chicken is cooked, remove it from the pan and put on a plate. Taste the sauce. Add 1 more tablespoon tomato paste and whisk to combine. Add the butter to enrich the sauce. Check the seasoning. Add the tarragon and stir to combine.
  • Serve the sauce with the chicken and some of the Creamy Polenta with Gruyere and Parmesan. Garnish with a couple sprigs of chervil.
  • Add the stock to a medium saucepan and bring to a boil over high heat. Add the polenta in a fine stream, whisking constantly with a wire whisk. Once all the polenta has been added, reduce the heat to low and cover the pan. Stir the mixture, using a wooden spoon, every 5 minutes and continue cooking until all the liquid has been absorbed and the mixture is very creamy, 10 to 15 minutes.
  • Remove from the heat and stir in the heavy cream and cheeses until combined. Taste and season with salt and pepper.

1/2 cup cornstarch
1 pound boneless skinless chicken breasts, cut into 1-inch strips
4 teaspoons olive oil, divided
1 cup sliced fresh mushrooms
3 green onions, thinly sliced
1/2 cup reduced-sodium chicken broth
1/2 cup sherry or reduced-sodium chicken broth
1/2 teaspoon dried tarragon
1/2 teaspoon dried thyme
1/4 teaspoon salt

2 medium tomatoes, cut into wedges and seeded
Hot cooked rice, optional

  • Place cornstarch in a large resealable plastic bag. Add the chicken, a few pieces at a time, and shake to coat. 1 whole cut up chicken
salt and freshly ground pepper
20 cremini mushrooms (stems removed, caps cut into eighths)
2 shallots (finely diced)
4 Tbsp tomato paste
1 c dry white wine
4 Tbsp cognac
2-3 c chicken stock
4 Tbsp cold butter
fresh tarragon (finely chopped)
SERVE OVER CREAMY POLENTA
5 c chicken stock
1 c quick cooking polenta
1/4 c heavy cream
1/2 c gruyere cheese (grated)
1/2 c parmesan cheese (grated)
salt and pepper

BRAISED CHICKEN CHASSEUR

4 chicken legs
2 tbsp olive oil
2 onions , thickly sliced
250g whole button or chestnut mushroom
1 rounded tbsp tomato purée
300ml white wine
400g can chicken or beef consommé (or use 400ml/14floz bought fresh stock, or make up with stock cube)
3-4 tomatoes , quartered and deseeded (optional)
sprinkling tarragon leaves and chopped parsley

Steps:

  • Season the chicken with salt and pepper. Heat the olive oil in a lidded sauté pan or shallow casserole. Pan-fry the chicken over a medium-high heat, turning, until golden on both sides. Remove from the pan and keep to one side. You will need about 2 tbsp fat left in the pan for cooking the onions, so if the legs have released a lot of fat, drain off the excess. Add the onions and mushrooms to the pan, stirring occasionally until they have a little colour and are beginning to soften, 6-8 mins. Stir in the tomato purée and white wine, then pour in the consommé or stock.
  • Return the chicken to the pan and bring to a simmer. Place a lid on the pan and continue to cook, allowing the sauce to just simmer for about 1 hr, or until the meat is completely tender.
  • To finish, skim the sauce of any further excess fat, then add the tomatoes, if using. Simmer, without the lid, for a further 2-3 mins to soften them, then scatter over the herbs.

Handful dried porcini mushrooms (about 1/2 ounce)
1 1/2 cups chicken stock
Salt
1 1/2 pounds chicken breast cutlets, each cutlet cut into 3 or 4 large pieces
Pepper
Flour, for dredging
1 tablespoon olive oil
5 tablespoons butter
2 carrots, finely chopped
2 large cloves garlic, finely chopped
2 large shallots, finely chopped
1/4 cup brandy
1/2 cup dry white wine
One 14-ounce can petite diced tomatoes
3 tablespoons fresh tarragon leaves, chopped
8 ounces extra-wide egg noodles

Steps:

  • Place the mushrooms in a small pot and cover with the stock. Bring to a low simmer and reconstitute the mushrooms.
  • Bring a medium pot of salted water to boil.
  • Sprinkle the chicken with salt and pepper and then dredge in some flour. Heat the oil in a large skillet over medium-high heat. Add the chicken and brown on both sides, then transfer to a plate. Melt 4 tablespoons of the butter into the oil and add the carrots, garlic, shallots and some salt and pepper, and cook partially covered to soften the vegetables, 5 minutes. Deglaze the pan with the brandy then stir in the wine. Remove the mushrooms from the stock and chop. Add the mushrooms to the pan along with most of the soaking liquid; discard the last few spoonfuls where grit may have settled. Add the tomatoes and tarragon, and then slide the chicken back in and simmer to thicken a bit, 10 minutes.
  • Cook the noodles until al dente in salted water, then drain the noodles and add the remaining 1 tablespoon butter, and toss to coat. Serve the chicken pieces with the buttered egg noodles and a few spoonfuls of the sauce alongside.

HOMEMADE CHICKEN CHASSEUR

This is a wonderful meal for friends and family. It is actually much better the day after. I use the small, brown Cremini mushrooms, but you can use the white button ones. Serve this with a crisp, romaine salad, some crusty French bread, and country red wine. Times are approximate.

1 tablespoon olive oil
4 chicken breasts (bone-in, about 2 1/4 lbs.in all)
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 tablespoon butter
1 onion, chopped
3/4 lb mushroom, sliced
2 fresh garlic cloves, minced
1 1/2 teaspoons flour
6 tablespoons dry vermouth or 6 tablespoons dry white wine
2/3 cup low sodium chicken broth or 2/3 cup homemade stock
1 cup crushed tomatoes, canned, drained
1/4 teaspoon dried thyme
2 tablespoons fresh parsley, chopped

Steps:

  • In a large, deep frying pan, heat the oil over moderately high heat.
  • Season the chicken with 1/4 teaspoons each of the salt and pepper and add to ther pan. Cook until browned, turning, about 8 minutes in all. Remove.
  • Pour off all but 1 tablespoons fat from the pan.
  • Add the butter to the pan and reduce the heat to moderately low.
  • Add the onion and cook, stirring occasionally, until translucent, about 5 minutes.
  • Raise the heat to moderately high.
  • Add the mushrooms, garlic, and 1/4 teaspoons of the salt. Cook, stirring frequently, until the vegetables are browned, about 5 minutes.
  • Add the flour and cook, stirring, for 30 seconds.
  • Stir in the vermouth and bring back to a simmer.
  • Stir in the broth, tomatoes, thyme, and the remaining 1/2 teaspoons salt.
  • Add the chicken and any accumulated juices. Reduce the heat; simmer, covered, until the chicken is done, about 10 minutes.
  • Stir in the parsley and the remaining 1/4 teaspoons pepper.

HUNTERS CHICKEN CHASSEUR

Chasseur is French for hunter. This is an updated version of an old classic. If fresh tarragon is unavailable, double the amount of fresh parsley-don't use dried tarragon. Serve with egg noodles or mashed potatoes! Adapted from Cook's Illustrated magazine.

4 chicken breast halves, trimmed of excess fat and skin (bone in)
salt and pepper
2 tablespoons olive oil
3 1/2 cups white button mushrooms, about 8 ounces (try using half portobello!)
1 green onion, sliced
3 tablespoons apple juice concentrate (original recipe called for brandy or cognac)
1/2 cup dry white wine (or white grape juice)
3 1/2 cups chicken broth
1/3 cup canned diced tomato, drained (or use fresh tomatoes)
3 tablespoons cold unsalted butter, cut into 4 pieces
2 tablespoons fresh parsley, minced
1 tablespoon fresh tarragon, minced

Steps:

  • Put oven rack in middle postion; heat oven to 400*F. Sprinkle chicken evenly with salt and pepper. Heat oil in a 12" skillet over medium high heat until almost smoking. Add the chicken breasts skin side down and cook without moving them until skin is crisp and well browned, 5-8 minutes. Using your tongs, turn chicken pieces and brown on other side, about 5 more minutes. Place browned chicken side up on baking sheet and set aside.
  • Pour off all but 2 tbls. fat from pan. Add the mushrooms and cook over medium high heat until mushrooms start to brown, 6-8 minutes. Reduce heat to medium and add green onions; cook until softened, about 1 minute longer.
  • Remove the pan from the heat and add apple juice concentratte; let stand until juice warms slightly, about 1 minute. (If using brandy or cognac, wave a lit long match over skillet until brandy ignites.Return pan to medium high heat and shake skillet until flames subside). Add wine; and using a wooden spoon, scrape brown bits from the pan bottom. Simmer briskly until reduced to glaze, about 3 minutes.
  • Add broth and tomatoes and simmer over medium high heat; simmer briskly until liquid, mushrooms, and tomatoes measure 1 1/2 cups, about 25 minutes.
  • While the sauce is simmering, place the chicken in the oven; roast 15 to 20 minutes. Transfer chicken pieces to serving platter and tent with foil.

This is a great recipe which creates a juicy chicken with a crispy crust. The sauce is so delicious also! (but haven't tried it with the brandy or cognac-keep forgetting to buy it) I found this recipe in Cooks Illustrated.

4 bone-in skin on chicken breast halves
2 tablespoons vegetable oil
8 ounces white button mushrooms, sliced
1 minced medium shallot
3 tablespoons brandy (or cognac)
1/2 cup dry white wine
3 1/2 cups chicken broth
1/3 cup drained canned diced tomato
3 tablespoons cold butter (cut into 4 pieces)
1 tablespoon minced fresh parsley
1 tablespoon minced fresh tarragon

Steps:

  • Sprinkle salt and pepper over chicken.
  • Heat oil in skillet over med heat. Add chicken breasts, skin down, and cook without moving them until skin is crisp and well browned, 5 to 8 minutes.
  • Turn chicken over and cook for additional 5 minutes or until chicken is browned on other side. Remove chicken from pan and set aside.
  • Pour off all but 2 tbs of fat from pan. Add mushrooms and cook over medium-high heat until mushrooms start to brown (6 to 8 minutes).
  • Reduce heat to medium and add shallots, cook until soft (about 1 minute).
  • Remove pan from heat and add brandy. Let stand until brandy warms slightly, about 10 seconds. Wave a long match over skillet until brandy ignites. Return pan to medium-high heat and shake skillet until flames die.
  • Add wine. Using wooden spoon, scrape browned bits from pan bottom and simmer for about 3 minutes.
  • Add broth and tomatoes and simmer over medium-high heat for about 25 minutes.
  • While sauce is simmering, put chicken on a baking sheet and put in oven for 15-20 minutes or until chicken reads 160 degrees.
  • When chicken is done, put on serving dish and cover with tent of foil.
  • When sauce is done, whisk in butter, one piece at a time until incorporated. Add parsley and tarragon and salt and pepper to taste.
  • Spoon sauce over chicken. Serve.

8 slices bacon, finely chopped
vegetable oil
6 chicken breast halves (10-12 oz. each or 12 thighs at 6-8 oz. each)
salt and pepper
1 1/4 lbs cremini mushrooms, quartered
1 red onion, chopped
4 garlic cloves, minced
1 1/2 cups dry white wine
2 tablespoons tomato paste
14 1/2 ounces diced tomatoes, drained
2 cups low sodium chicken broth
1/4 ounce dried porcini mushrooms, rinsed thoroughly and finely chopped
1 tablespoon fresh thyme, minced (or 1 t. dried)
2 bay leaves
1/2 teaspoon red pepper flakes
1/4 cup flour
1/4 cup fresh parsley, minced

Steps:

  • Cook bacon over medium heat until crisp, about 8 minutes. Add bbacon to the crockpot. Reserve the bacon fat separately. You should have at least 2 T. If not, use vegetable oil for the missing fat.
  • Dry chicken with paper towels. Season with salt and pepper. Add 2 t. bacon fat to the skillet. Heat over medium-high heat until just smoking. Brown half of the chicken on both sides, about 10 minutes. Put in the crockpot. (Remove the browned skin if using thighs.) Return the skillet to medium high heat and repeat with 2 more teaspoons of fat and the rest of the chicken. Discard any fat left in the skillet.
  • Add the remaining 2 t. fat to empty skillet. Heat over medium heat until shimmering. Add cremini's, red onion and 1/4 teaspoons salt. Cook until mushroom are brown, 10-15 minutes. Stir in the garlic. Cook for 15 seconds. Stir in wine and tomato paste, scraping up any browned bits. Simmer until the wine has reduced by half, about 5 minutes. Put in crockpot.
  • Add tomatoes, 1.5 cups broth, porcini's, thyme, bay leaves and red pepper flakes to crockpot. Cover and cook on low until chicken is tender, about 4 hours.
  • Transfer chicken to large serving dish. Tent loosely with foil.
  • Discard bay leaves. Set the crockpot to high. Whisk flour with remaining 1/2 cup broth until smooth. Stir into crockpot. Cover and continue to cook until sauce is thickened and no longer tastes of flour, 15 to 30 minutes longer.
  • Stir in parsley. Season with salt and pepper to taste. Spoon vegetables and some of the sauce over the chicken. Serve, passing the remaining sauce separately.

This is a nice elegant meal to serve. The flavor improves in the refrigerator. I use thigh meat because it has a rich flavor, and it stands up to the braising process. I also remove the skin, just because it looks better in the finished product. You may use about 1 Tbsp. of butter with the olive oil if you prefer that flavor.

8 skinless chicken breasts or 1 whole chicken, cut into 8 pieces
5 tablespoons extra virgin olive oil
2 shallots, finely chopped
1/4 lb button mushroom, sliced
1 tablespoon all-purpose flour
1/2 cup dry white wine
2 tablespoons Bourbon or 2 tablespoons whiskey
2 teaspoons tomato paste
3/4 cup chicken stock
2 teaspoons chopped fresh tarragon or 2 teaspoons dried tarragon
1 teaspoon chopped parsley

Steps:

  • Heat the oil to medium in a large skillet, or buffet casserole (it has to be able to hold the liquid and take a lid).
  • Sauté the chicken until golden brown on both sides.
  • Remove to a plate or bowl and reserve.
  • Sauté the shallots until soft but not brown.
  • Add the mushrooms, put on the lid, and cook for 3 minutes.
  • Add the flour and cook, stirring, for 1 minute.
  • Add the white wine, stirring as you do, then the brandy, tomato paste, and chicken stock.
  • Bring to a simmer, stirring; then reduce the heat.
  • Add the tarragon.
  • Put the chicken and juices back into the pan.
  • Cover and simmer for 45 to 60 minutes, or until the chicken is tender.
  • Serve directly from the buffet casserole, or remove to a platter.
  • If your parsley is not bitter tasting, sprinkle with chopped parsley.

Chicken Chasseur is one tasty meal that can be created with ease for either a family or celebration meal. Any part of the chicken can be used for this recipe although chicken thighs seems to have more flavour than the fillet and are more suited if you wish to cook the recipe slowly. The ideal accompaniment to chicken Chasseur would be small new potatoes and seasonal vegetables. However, with this dish being something that could be left in a slow cooker or a low oven to cook all day whilst you are at work you might not want to be preparing vegetables before eating. Either use quick cook rice or have your vegetables ready washed in your fridge so that they can be put into a steamer whilst you lay the table for dinner. There is nothing stopping you adding vegetables such as potatoes, carrots and peas to the Chicken Chasseur so that it is a complete meal ready to eat for your dinner when you arrive home after a hard days work.

4 chicken breast fillets, cut into bite sized pieces (or 8 chicken thighs)
2 tablespoons oil
1 large onion, chopped
3 garlic cloves, chopped finely
1 (14 ounce) can chopped tomatoes
1/2 cup white wine
2 tablespoons tomato paste
1 chicken stock cube
9 ounces button mushrooms
fresh mixed herbs
salt and pepper

Steps:

  • Heat oven to 400°F.
  • Heat oil in a deep based oven proof casserole dish / dutch oven. A cast iron dish is ideal. Brown the chicken thighs or lightly cook the breast fillets. When the chicken is lightly brown add the onions and garlic and cook slowly until the onions are clear.
  • Add the can of tomatoes, the white wine, the tomato paste and stock cube and heat through. Place the lid on and put into the preheated oven for one hour.
  • Add the button mushrooms, the mixed herbs and replace into the oven for a further thirty minutes. Some people like a browned top to their chicken Chasseur in which case do not replace the lid of the casserole dish for the last thirty minutes of the cooking time. Season to taste and serve. Thicken with more tomato paste if required.

1 small leek, cleaned and chopped
1 medium onion, chopped
1 cup dry white wine
1 (15 ounce) can whole tomatoes

4 chicken breasts
1 tablespoon olive oil
1 tablespoon butter
4 cups mushrooms
3 shallots
2 cloves garlic, minced
1 teaspoon tomato puree
1 cup chicken stock
1 cup dry white wine
1 can diced tomatoes
1 teaspoon thyme
1/2 cup cream
2 tablespoons parsley

Steps:

  • Season the chicken thighs well with salt. Heat the olive oil and butter in a large pot (a Dutch oven is perfect for this) and brown the chicken, leaving it to sizzle for 3-4 minutes on each side. Meanwhile, clean and quarter the mushrooms, and dice the shallots.
  • Add the shallots and mushrooms and saute until they start to take on some color. Add the minced garlic and the tomato puree to cook through (just a minute or so).
  • Pour in the wine, scraping down the pan, then add the stock and diced tomatoes. Add the bay leaves and thyme. Season the dish with a couple of pinches of salt and a good grind of pepper, and let simmer for 10 minutes with the lid on, and a further 30 with the lid off, by which time the chicken should be tender and the sauce reduced to a thick gravy.
  • To finish the dish, stir in the cream and let it simmer for a minute to bring the flavors together. Serve with a sprinkle of parsley (and maybe some mashed potatoes or bread, to soak up all the juices).

2 1/2 pound(s) chicken thighs bone-in and skin on
ground himalayan sea salt, to taste
freshly ground black pepper, to taste (i always use mixed peppercorns)
2 tablespoon(s) clarified butter
1/2 cup(s) shallots, finely chopped
3 large cloves garlic, pressed
3/4 pound(s) mixed mushrooms, quartered
2 tablespoon(s) unbleached all-purpose flour
1/2 cup(s) dry white wine
1/3 cup(s) cognac or brandy
2 tablespoon(s) tomato paste
1 cup(s) low-sodium beef broth
1 cup(s) low-sodium chicken broth
1 teaspoon(s) dried rosemary, chopped
1 teaspoon(s) dried tarragon
1 large bay leaf
1 tablespoon(s) cornstarch (mixed with 1/2 cup cold water)
1 tablespoon(s) fresh chopped parsley, for garnish

Steps:

  • Season thighs generously, skin side up, with salt and pepper; set aside
  • In a Dutch oven over medium-high heat, add clarified butter and when it gets hot, working in batches, add thighs skin side down. Season the top side well with salt and pepper and cook until brown, about 3 to 4 minutes per side.
  • Transfer to a plate or bowl and set aside while cooking the others.
  • Once the thighs are cooked, reduce heat to medium and remove fat from the pot keeping about 2 tbsp. Add mushrooms and sauté for 4 to 5 minutes.
  • Add shallot, and garlic; sauté for 1 minute.
  • Add flour and stir to coat; cook for 2 minutes stirring constantly.
  • Deglaze with wine and brandy, scraping the bottom of the pot and let it cook until almost evaporated, stirring and scraping often.
  • Add tomato paste, beef broth, chicken broth, rosemary and tarragon. Bring to a boil before returning the chicken thighs including any accumulated juices.
  • Cover, reduce the heat to medium-low and simmer for 45 minutes.
  • When time is up, remove the lid and scrape the bottom of the pot. Bring the heat to medium and when it starts simmering again, set the timer for 5 minutes; adjust the seasoning if necessary.
  • Add cornstarch mixture and stir until the sauce thickens, about 45 seconds.
  • Place a thigh over mashed potatoes, spoon sauce on top and sprinkle on some fresh chopped parsley

SKILLET CHICKEN CHASSEUR

1/4 ounce Parsley
3 sprigs Thyme Sprigs
8 ounces Carrot
6 ounces Cremini Mushrooms
1 piece Shallot
2 pieces Small Boneless Skinless Chicken Breasts
14 1/2 ounces Can of Diced Tomatoes
2 ounces Cooking wine
2 teaspoons Chicken Base
1 ounce Butter

Steps:

  • Peel, trim and cut the carrot into 1/4" slices at an angle
  • Quarter mushrooms
  • Peel and mince shallot
  • Stem and mince parsley
  • Stem thyme
  • Pat chicken breasts dry, season both sides with salt and pepper
  • Sear chicken. Place a medium pan over medium-high heat and add 2 teas olive oil. Add chicken breasts to pan and cook until golden brown, 2-3 minutes per side
  • Transfer chicken to a plate. No need to wipe pan.
  • Return pan to medium-high heat. Add 1 teas olive oil, carrot, mushrooms, shallot, parsley and thyme. Stir occasionally until vegetables begin to brown, 6-8 minutes
  • Stir in tomatoes and their juice, white cooking wine, chicken base and 1/2 cup water until incorporated.
  • Return chicken to pan. Lower heat to simmer, cover and cook until chicken done through about 8-10 minutes
  • Transfer chicken to a plate. Rest 3 minutes. Add butter to pan with vegetables and stir to incorporate
  • Slice chicken and serve with vegetables.
