1 (15 ounce) can white beans, undrained
1/2 cup vegetable juice or 1/2 cup tomato juice
2 medium carrots, scrubbed, sliced into 1/2 inch thick slices
2 celery ribs, cut into fourths
1 medium onion, chopped
2 garlic cloves, minced
2 bay leaves
1 teaspoon basil, crushed
1 teaspoon oregano, crushed
2 -3 frozen boneless skinless chicken thighs
8 ounces smoked turkey or 8 ounces chicken sausage
salt and pepper, to taste

Steps:

  • Combine the beans, tomato juice, carrots, celery, garlic, bay leaves, and spices.
  • Cut the sausages in half lengthwise and slice, stir into beans.
  • Place the frozen chicken thighs on top of the bean mixture.
  • Cover; cook on low-heat for 8 to 10 hours.
  • Remove bay leaves, stir, adjust seasonings as desired and serve.

This is a southwest France classic. It's a rich, hearty stew. Traditional cassoulets can take days to make. Here, Sara Moulton created an easier version for the regular home cook.

2 tablespoons extra-virgin olive oil, divided
8 bone-in chicken thighs (2 to 2 1/2 lbs)
kosher salt & freshly ground black pepper
1 medium onion
1 tablespoon fresh rosemary leaf (or 1/2 t dried)
1 tablespoon fresh thyme leave (or 1/2 t dried)
4 garlic cloves
2 (15 1/2 ounce) cans white beans
1/2 lb kielbasa (or bratwurst)
1/2 cup dry red wine
1 cup chicken stock
2 tablespoons Dijon mustard
1 cup panko breadcrumbs

Steps:

  • Heat 1 T olive oil in a large skillet with an ovenproof handle, over high heat until hot. Reduce the heat to med-high. Season the chicken with salt and pepper to taste and add it to the skillet, skin side down; cook for 3 to 4 minutes or until browned. Turn the chicken and cook the other side for 3 to 4 minutes or until browned.
  • Meanwhile, finely chop the onion (about 1 C). Finely chop the rosemary (about 1 1/2 t) and the thyme (about 1 1/2 t). Combine the rosemary and thyme in a bowl. Press the garlic (about 1 T plus 1 t) into the bowl. Rinse and drain the beans then mash 1 C of the beans into a separate small bowl with a fork.Set the rest of the whole beans aside. Cut the kielbasa in half lengthwise and then crosswise into 1/2 inch thick pieces.
  • Remove the chicken to a plate and drain off all but 1 T of the fat from the skillet. Reduce heat to med-low and add the onions and cook for 5 minutes or until it has softened. Add the herb and garlic mixture and cook for 2 minutes. Add the red wine and simmer over low heat until it has reduced by half.
  • Return the chicken to the skillet along with any juices that have accumulated on the plate. Add the kielbasa, chicken stock, both the mashed beans and the whole beans and the mustard. Bring the mixture to a simmer. Cover the pan and simmer for 15 minutes, or until the chicken has just cooked through. While the chicken is cooking, preheat the broiler.
  • Toss the bread crumbs with the remaining 1 T olive oil. Remove the lid from the skillet and season the mixture with salt and pepper to taste. Sprinkle the bread crumbs evenly over the top. Put the skillet under the broiler, about 4 inches from the heat source, and broil for 45 to 60 seconds, or until the crumbs are golden. When you serve the cassoulet, sprinkle the toasted bread crumbs over each serving.

5 cups water
1/2 pound cubed cooked chicken
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2 medium carrots, shredded
1 medium onion, chopped
1/4 cup dry vermouth or chicken broth
5 teaspoons chicken bouillon granules
4 garlic cloves, minced
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/4 teaspoon fennel seed, crushed
1 teaspoon dried lavender flowers, optional
1/2 pound bacon strips, cooked and crumbled
Additional fresh thyme, optional

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain., Transfer to a 4- or 5-qt. slow cooker. Add the water, chicken, beans, carrots, onion, vermouth, bouillon, garlic, thyme, fennel and if desired, lavender. Cover and cook on low for 6-8 hours or until heated through., Divide among bowls; sprinkle with bacon. If desired, top with additional fresh thyme.

This is a great dish to serve on a cold winter night. The recipe calls for green lentils, but you can use any kind of lentil you prefer. Serve this with a crisp salad and some crusty french bread for a fantastic meal, fit for company. Modified from a recipe I this from the BV Wine Society probably 10 years ago.

10 ounces green lentils
1 carrot, diced
1 medium onion, diced
2 celery ribs, diced
1 bay leaf
2 sprigs fresh thyme
1 1/4 cups chicken broth
1/4 cup olive oil
1 lb pork loin
1 lb chicken meat, boneless thighs give this the best flavor
1 lb kielbasa
1 lb mushroom, quartered
salt
white pepper
2 tablespoons unsalted butter
1 bunch chives, chopped

Steps:

  • Saute carrot, onion and celery with olive oil over medium heat until onion is translucent, in large heavy bottomed pan.
  • Add lentils, bay leaf and thyme and saute approximately 1 more minute.
  • Add chicken stock.
  • Bring to a boil and cook for 15 minutes on medium heat until lentils are al dente. Stir occasionally. Remove from heat and set aside.
  • Cut the chicken and pork meat into 1 inch cubes.
  • Slice the sausage into 1/2 inch thick slices.
  • Season the chicken and pork with the salt and white pepper. Sear in pan until rare.
  • Remove chicken and pork from pan and sear sausages.
  • Saute mushrooms separately with butter.
  • Return lentils to heat.
  • Add all ingredients to lentils and cook until meast reach desired degree of doneness. 4-8 minutes.
  • Add chopped chives for garnish.

6 bone-in chicken thighs (about 2 lb), skin removed if desired

Steps:

  • Heat oven to 350°F. In 12-inch nonstick skillet, cook bacon over medium-high heat until crisp. Remove from skillet; drain on paper towels. Reserve 1 tablespoon drippings in skillet.
  • Add chicken to skillet; cook over medium-high heat about 4 minutes, turning once, until golden brown. Stir in carrots, onion, thyme, salt and pepper; cook 4 to 5 minutes or until chicken and vegetables are browned. Drain well. Remove chicken from skillet.

For the chicken confit:
1 1/2 pounds skin-on, bone-in chicken thighs
Kosher salt, freshly ground pepper
1 head garlic, halved crosswise
2 large shallots, halved
4 sprigs thyme
2 bay leaves
4 juniper berries
1 cup olive oil
For the cassoulet:
1 large onion, chopped
4 cloves garlic, chopped
1/2 (14.5-ounce) can whole peeled tomatoes
4 cups cooked large white beans (such as Tarbais; from 1 1/2 cups dried beans), plus 1 cup cooking liquid
Kosher salt, freshly ground pepper
2 large andouille or other smoked sausages
1 slice thick sourdough bread

Steps:

  • For the chicken confit:
  • Preheat oven to 225°F. Season chicken with salt and pepper and place in a small Dutch oven or other heavy pot. Arrange garlic, shallots, thyme, bay leaves, and juniper berries around chicken; drizzle oil over. Bring to a very low simmer over medium-low heat, cover, and transfer to oven. Cook until meat is very tender, 2-2 1/2 hours. Let cool in oil (preferably overnight).
  • For the cassoulet:
  • Preheat oven to 350°F. Heat 1/3 cup oil from chicken confit in a large skillet over medium. Add onion and garlic; cook, stirring occasionally, until very soft, 10-12 minutes. Squeeze garlic cloves from chicken confit from their skins into skillet and add tomatoes, crushing with your hands. Bring to a boil and cook, stirring occasionally, until liquid is evaporated, about 5 minutes. Add beans and their cooking liquid. Skim off remaining fat from chicken confit and pour juices (about 1/2 cup) into skillet (reheat fat in pot just enough to loosen juices underneath if needed). Bring to a simmer; season with salt and pepper.
  • Transfer bean mixture to a 2-2 1/2-qt. baking dish. Nestle chicken into beans, leaving as much skin exposed as possible, then tuck sausage and shallots from confit chicken around. Cook until chicken skin is very crisp and cassoulet is nicely browned, about 2 hours.
  • Pulse bread in a blender or food processor to medium-fine crumbs. Toss crumbs in a small bowl with 1 Tbsp. oil from confit chicken (use remaining oil for sautéeing vegetables); season lightly with salt. Top cassoulet with breadcrumbs and cook until they are golden brown, 20-25 minutes.
  • Do Ahead
  • Chicken can be cooked 3 days ahead. Cover and chill.

2 tablespoons olive oil
6 boneless skinless chicken breasts
3 teaspoons creole seasoning (optional)
1 1/2 teaspoons salt
1 teaspoon white pepper
1 lb smoked turkey sausage, chopped into 1/2-inch pieces
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped celery
4 teaspoons minced garlic
1 lb white beans, soaked overnight
2 quarts chicken stock
3 sprigs thyme
1 bay leaf
2 tablespoons chopped fresh parsley leaves

Steps:

  • Set a Dutch oven over medium-high heat, and add the olive oil to the pan.
  • Season the chicken with 2 teaspoons of the Creole seasoning, 1 teaspoon of the salt, and 1/2 teaspoon of the pepper.
  • Place the chicken in the pan and sear until well browned, about 4 to 5 minutes.
  • Turn over and sear on the second side for an additional 4 to 5 minutes.
  • Remove the chicken pieces from the pan and set aside.
  • Place the sausage in the pan and cook until well caramelized, stirring occasionally, about 5 minutes.
  • Add the onions, peppers and celery to the pan and cook until soft, about 4 to 5 minutes.
  • Add the garlic and saute until fragrant, about 30 seconds.
  • Add the beans, stock, fresh thyme and bay leaf and bring to a boil then reduce to a simmer.
  • Cook the beans for 1 hour.
  • Add the chicken back to the pan, and season with the remaining Creole seasoning, salt and pepper.
  • Continue to cook the beans until they are tender, and the chicken is cooked through, about 1 hour.
  • Stir in the chopped parsley.

Bean Cassoulet with Fennel Spiced Chicken and Roasted Vegetables image

12 medium Brussels sprouts
2 medium red onions
1/2 cup extra-virgin olive oil
3 medium parsnips
3 medium carrots
3 celery stalks, peeled
Finely ground sea salt
1/4 cup Fennel Spice Rub, recipe follows
1 (4 pound) chicken plus 2 bone-in chicken breasts
2 to 3 garlic cloves, smashed
1/4 pound pancetta, cut into strips about 1/2-inch thick and 1-inch long, optional
1 pound giant white beans, such as Corona, precooked or canned with liquid
1 cup fennel seeds
3 tablespoons coriander seeds
2 tablespoons white peppercorns
3 tablespoons grey salt

Steps:

  • Trim the Brussel sprouts by removing the tough outer leaves and stems. Halve lengthwise. Cook the Brussel sprouts in a cast iron casserole or oven-proof skillet in boiling salted water for 8 to 10 minutes. Drain and set aside.
  • Peel the onion, cut through the stem into 6 equal wedges, and trim any ragged tops. Wipe dry the casserole dish and heat 1/4 cup oil in it. When the oil is hot but not smoking, add the onions. While the onions are cooking, halve the parsnips lengthwise, then in bite-size wedges and add to the onions. While the parsnips and onions are cooking, cut the carrots and celery in the same manner as the parsnips and add to the vegetables already cooking in the casserole dish. Continue cooking the vegetables until lightly browned on all sides, 1 to 2 minutes, turning as needed. Add the cooked Brussels sprouts to the dish. Season with salt, to taste. Cook until all the vegetables are well browned, about 10 minutes, turning as needed. Remove the vegetables to a bowl and season with 2 tablespoons of Fennel Spice Rub to coat. Remove the vegetables from the casserole dish and set aside.
  • Preheat the oven to 425 degrees F.
  • Cut the chicken into bone-in serving pieces (2 drumsticks, 2 thighs, and 8 half pieces of breast). Heat the remaining 1/4 cup of oil in the casserole dish over high heat. Season the chicken pieces well on both sides with the remaining Fennel Spice Rub. When the oil is hot but not smoking, add the chicken pieces skin side down, in batches if necessary. Cook until the chicken is dark brown on all sides, about 12 to 15 minutes. Remove the chicken from the dish. Tilt the pan and pour off all but 2 tablespoons of fat. Reduce the heat to medium, add the garlic and pancetta, and cook until golden, about 1 to 2 minutes.
  • Add the beans and their liquid into the casserole dish with the pancetta. Bring to a simmer. Add the reserved vegetables and the chicken, skin side up. Roast, uncovered, until the chicken is fully cooked and the surface is nicely browned, 25 to 30 minutes. Let rest at room temperature for 10 to 15 minutes before serving warm.
  • Put the fennel seeds, coriander seeds, and peppercorns in a heavy pan over medium heat. Watch carefully, tossing frequently so the seeds toast evenly. When light brown and fragrant, pour the seeds onto a plate to cool. They must be cool before grinding, or they will gum up the blades.
  • Pour the seeds into a blender and add the salt. Blend to a fine powder, shaking the blender occasionally to redistribute the seeds. Store in a tightly sealed glass jar in a cool, dry place, or freeze.

Fennel Spice Rub:
1 cup fennel seeds
3 tablespoons coriander seeds
2 tablespoons white peppercorns
3 tablespoons grey salt
Cassoulet:
12 medium Brussels sprouts
2 medium red onions
1/2 cup extra-virgin olive oil
3 medium parsnips
3 medium carrots
3 celery stalks, peeled
Finely ground sea salt
1/4 cup Fennel Spice Rub, recipe follows
1 (4 pound) chicken plus 2 bone-in chicken breasts
2 to 3 garlic cloves, smashed
1/4 pound pancetta, cut into strips about 1/2-inch thick and 1-inch long, optional
1 pound giant white beans, such as Corona, precooked or canned with liquid

Steps:

  • For the Fennel-spiced rub: Put the fennel, coriander, and peppercorns in a heavy pan over medium heat. Toss frequently so the seeds toast evenly. When light brown, remove and cool. Grind seeds with salt to a fine powder. Store in a tightly sealed jar or freeze (makes 1 1/4 cups). For the cassoulet: Trim the Brussel sprouts and halve lengthwise. Cook in boiling salted water in a cast iron casserole for 8-10 minutes. Drain and set aside. Peel the onion, cut through the stem into 6 equal wedges. Heat 1/4 cup oil in casserole dish. When hot but not smoking, add onions. Halve the parsnips lengthwise and into bite-size wedges, add to the onions. Cut carrots and celery in the same manner and add to the vegetables. Cook until lightly browned on all sides. Add sprouts to the dish. Season with salt, to taste. Cook until all the vegetables are well browned, about 10 minutes. Remove and season with 2 tablespoons of Fennel Spice Rub to coat. Preheat the oven to 425 degrees F. Cut the chicken into bone-in serving pieces (2 drumsticks, 2 thighs, and 8 half pieces of breast). Heat remaining 1/4 cup of oil in the casserole dish over high heat. Season the chicken with the Fennel Spice Rub. When the oil is hot add chicken skin side down. Cook until dark brown, about 12 to 15 minutes. Remove from dish. Tilt the pan and pour off all but 2 tablespoons of fat. Reduce the heat to medium, add the garlic and pancetta, and cook until golden. Add beans in liquid to the pancetta. Bring to a simmer. Add reserved vegetables and chicken, skin side up. Roast, uncovered, until the chicken is fully cooked and the surface is nicely browned, 25 to 30 minutes.

5 garlic cloves, minced
1 tablespoon chopped fresh rosemary
1 1/2 teaspoons chopped fresh thyme
2 tablespoons balsamic vinegar
6 boneless and skinless chicken thighs, trimmed of fat
1 pound dried cannellini beans, soaked overnight in cold water
3 carrots, cut into 1/2-inch pieces
2 stalks celery, cut into 1/4-inch pieces
1 onion, cut into 1/4-inch pieces
1 dried bay leaf
2 tablespoons finely chopped fresh sage
1 teaspoon coarse salt
1/2 teaspoon extra-virgin olive oil
1 cup fresh breadcrumbs

Steps:

  • Marinate the chicken: In a bowl large enough to hold chicken thighs, combine 2 garlic cloves, rosemary, 1/2 teaspoon thyme, and vinegar. Add chicken; toss to coat. Cover; refrigerate 1 to 2 hours.
  • Preheat oven to 375 degrees with rack in upper third. Drain beans, and place in a large stockpot with carrots, celery, onion, remaining 3 garlic cloves, bay leaf, sage, and remaining teaspoon thyme. Fill with enough cold water to cover by about 4 inches; bring to a simmer over medium-high heat. Reduce heat to medium-low; cook, stirring occasionally, until beans are tender, 1 1/2 to 2 hours.
  • Transfer bean mixture to a colander set over a bowl, reserving cooking liquid; let cool slightly. Puree half the mixture in the bowl of a food processor fitted with the metal blade. With the motor running, pour in about 1 cup reserved cooking liquid until thick and smooth. Return to pot with remaining bean mixture. Add the salt; stir to combine.
  • Brush an 8-by-2 1/2-inch baking dish with the oil. Remove chicken from marinade, and arrange in a single layer in prepared dish. Bake until chicken is cooked through, about 15 minutes.
  • Remove dish from oven; pour bean mixture over chicken, and sprinkle evenly with breadcrumbs. Set dish on a baking sheet; return to oven, and bake until breadcrumbs are golden brown and beans are bubbling, about 30 minutes. Remove from oven; serve hot.

1/2 cup chopped onion
1/2 cup thinly sliced celery
one can sliced mushrooms, 4 ounces, drained
one can cream of celery soup, 11 ounces
1 cup sour cream
2 teaspoons worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon ground black pepper
3 to 4 cup sliced cooked chicken
biscuits
paprika
fresh thyme for garnish

Steps:

  • 1. preheat oven to 350°. Lightly grease a 12 x 8" baking dish. In a large skillet over medium-high heat, sauté onion, celery and mushrooms in reserved bacon drippings until tender. In a large bowl, mix soup, sour cream, Worcestershire sauce, salt, and pepper. Add chicken, bacon, and sautéed vegetables to bowl. Mix well. Pour into prepared baking dish. Bake for 25 minutes.
  • 2. Remove casserole from oven. Arrange biscuits over casserole. Sprinkle tops of biscuits lightly with paprika. Return to oven and bake 20 to 25 minutes longer. Garnish with fresh thyme if desired.

3/4 cup fresh whole wheat breadcrumbs

6 garlic cloves, roughly chopped
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme

1/2 cup reduced-sodium chicken broth

Steps:

  • Put 1/2 cup beans in a small bowl and mash with a fork. Add the remaining beans and set aside.

1 1.7kg (2 1/2 pound) chicken, joined into 8 portions
Plain (all-purpose) flour for dusting
1 tablespoon olive oil
2 chorizo, sliced
1 brown onion, peeled and chopped
3 garlic cloves, peeled and crushed
2 carrots, peeled and chopped
2 stalks celery, chopped
1 tablespoon tomato paste
2 cups (500ml) chicken stock
1 400g can chopped tomatoes (it's 411g can in the U.S.)
2 bay leaves
6 sprigs thyme
1 400g can cannellini (white) beans, drained and rinsed
Sea salt and cracked black pepper
Crusty bread, to serve

Steps:

  • Dust the chicken in the flour and shake to remove excess. Heat the oil in a large, heavy-based saucepan over high heat. Add the chicken and cook, in batches, for 6-8 minutes or until browned. Remove from pan and keep warm. Add the chorizo, onion, garlic, carrots and celery to the pan and cook for 3-4 minutes or until softened. Add the tomato paste and cook for a further minute. Return the chicken to the pan and add the stock, tomatoes, bay leaf and thyme. Bring to a boil then reduce heat to low and cook, covered, 30 minutes. Remove the lid and continue cooking for 20-30 minutes more, or until the sauce has thickened. Add the beans, salt and pepper to combine.
