Chicken Breasts With Blue Cheese Sauce image

Chef Pierre Franey: This dish, like so many I have created over the years, came about by accident. One day while cooking with Craig Claiborne, I asked our kitchen assistant to hand me some cheese, thinking we had some Gruyere. Instead, he handed me a quarter pound of blue cheese. My first reaction was negative, but on second thought I said, "Why not?" I was very pleased with the result.

4 boneless skinless chicken breast halves (about 1 1/2 pounds)
salt, to taste if desired (optional)
fresh ground pepper, to taste
3 tablespoons butter
1 tablespoon flour
1/2 cup canned chicken broth
1/2 cup milk
1/4 cup heavy cream
1/4 lb blue cheese
4 slices of thinly sliced cooked ham (about 1/4 pound)
1/4 cup finely chopped onion
1/4 cup dry white wine

Steps:

  • Sprinkle the breast halves with salt and pepper.
  • Heat 2 tablespoons butter in a heavy skillet large enough to hold the chicken in one layer over medium-high heat. Add the chicken and brown lightly on one side. Turn and continue cooking about 5 minutes or until cooked through. Remove the pieces and keep warm.
  • Meanwhile. Heat the remaining 1 tablespoon of butter in a saucepan and add the flour, stirring rapidly with a wire whisk. Add the broth and milk, and continue stirring rapidly. Add the cream and cook, stirring often, about 5 minutes. Add the cheese and stir until melted.
  • Add the ham slices to the skillet in which the chicken pieces cooked and saute briefly on both sides just enough to heat through. Transfer the slices to a heated serving dish and cover each slice with a piece of chicken breast.
  • Add the onion to the skillet and cook, stiffing until wilted. Add the wine and stir to dissolve the brown particles that cling to the bottom and sides of the skillet. Stir in the cheese sauce.
  • Place a sieve over a small saucepan and strain the sauce, stirring and pushing down with a plastic spatula to press through as much of it as possible. There should be about 1 1/3 cups of sauce.
  • Pour the sauce over the chicken pieces and serve hot.

1 ½ (8 ounce) packages cream cheese, softened
1 cup crumbled blue cheese
1 egg
2 cups bread crumbs
2 skinless, boneless chicken breasts, halved and pounded into 1/2-inch thickness
3 cups cooked white rice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir cream cheese and blue cheese together in a bowl. Beat egg in a separate bowl. Pour bread crumbs into a third shallow bowl.
  • Spread cheese mixture over each chicken piece. Roll each piece of chicken around filling; dip into egg and press into bread crumbs until coated. Arrange chicken rolls on a baking sheet or baking pan.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cheese mixture will start to run out when done. Serve chicken over cooked rice.

4 boneless chicken breasts, skin on (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
3 tablespoons vegetable or canola oil
1/2 cup dry white wine
1/3 cup freshly squeezed lemon juice (3 lemons)
1/4 cup minced shallots (1 large)
3 tablespoons heavy cream
4 tablespoons (1/2 stick) unsalted butter, diced, at room temperature

Steps:

  • Preheat the oven to 425 degrees.
  • Pat the chicken breasts dry with paper towels and sprinkle them generously on both sides with salt and pepper. In a 12-inch cast-iron skillet, heat the oil over medium-high heat for 2 minutes, until it begins to smoke. Place the chicken breasts, skin side down, in the skillet and cook for 4 to 5 minutes without moving, until golden brown.
  • Using tongs, turn the chicken breasts skin side up, place the skillet in the oven, and roast for 12 to 15 minutes, until the chicken is cooked through.
  • Meanwhile, in a medium saute pan, combine the white wine, lemon juice, and shallots and cook over medium-high heat for about 5 minutes, until only 2 tablespoons of liquid remain in the pan. If it reduces too much, add an extra splash of white wine or water. Add the cream, 1 teaspoon salt, and 1/4 teaspoon pepper and bring to a full boil. Remove from the heat, add the diced butter, and swirl the pan until the butter is incorporated. Don't reheat or the sauce will "break"! Sprinkle with salt and serve the chicken hot with the sauce spooned over it.

1 tablespoon olive oil
4 skinless, boneless chicken breast halves - pounded thin

1 clove garlic, minced
⅓ cup dry white wine

  • Melt 1 tablespoon butter and heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, and brown on both sides in the skillet. Cover, and continue cooking 10 minutes, or until chicken juices run clear. Set aside, and keep warm.
  • Mix shallots and garlic into skillet over medium heat, and cook until tender. Stir in wine, and cook until heated through. Stir in broth, and continue cooking 5 minutes, or until reduced and slightly thickened. Mix in the remaining butter until melted. Serve the sauce over the chicken.

Excellent! If you like blue cheese you will love this dish. I make it often for just the family or dinner parties and everyone always comments on how good it is. I like to serve this chicken with baked potatoes or a rice dish and a green salad. Enjoy!

1/2 lb blue cheese, crumbled
1 pint sour cream
4 cloves fresh garlic, minced
4 -6 large boneless skinless chicken breasts
1 cup fine breadcrumbs
1 egg, beaten
1/2 cup flour
2 tablespoons butter
2 tablespoons vegetable oil
salt

Steps:

  • Mix together the blue cheese, sour cream and garlic; set aside.
  • Lightly salt chicken breasts.
  • Dredge each one in the flour, dip in the beaten egg, then roll in the bread crumbs.
  • Place the butter& oil in a non-stick skillet and heat over medium-high heat.
  • Brown chicken breasts on both sides then place in a lightly greased baking dish.
  • Pour the blue cheese mixture over the breasts.

BLUE CHEESE STUFFED CHICKEN BREASTS

Yet another recipe from the local paper that I want to try ... some day. I did try this recently and we all really liked it. Next time I think I'll place a small amount of blue cheese on top of the chicken when it comes out of the oven and is served. The cheese/butter mixture melts during cooking and even though the flavor is wonderful, everyone said more cheese on top would be nice. Also, I think the little bit of sauce that there is, would be nice thickened and spooned over the chicken too. Let me know what you think.

2 tablespoons butter, softened and divided
1/2 cup blue cheese, crumbled
3/4 teaspoon dried thyme
4 boneless skinless chicken breast halves
1 tablespoon lemon juice
1/2 teaspoon paprika

Steps:

  • Preheat oven to 425.
  • Combine 1 tablespoons butter, thyme, and blue cheese in small bowl until blended. Season with salt & pepper and set aside.
  • Cut a horizontal line in the thickest side of each chicken breast to form a pocket, but not cutting all the way through.
  • Stuff blue cheese mixture into pocket with small spoon.
  • Place chicken in a baking dish. Season with salt & pepper. Bake 15 minutes, uncovered.

EASY BLEU CHEESE CHICKEN

I made this up to get rid of some aging bleu cheese dressing, but it turned out absolutely delicious and it was so easy to make! You can use more or less bleu cheese dressing depending on how oily a dish you want this to be; I made it the first time with an entire bottle but that was a bit excessive.
