This is even better than the whole chickens that you purchase at the deli, I have made this many times on my indoor and outdoor rotisserie --- this is one recipe I use margarine the butter tends to burn when cooking, you could also use 1/2 cup oil if desired and omit the margarine, I find that it is best to use 1/4 cup of of each --- I strongly advise you to make two chickens you will be eating one chicken just yourself these are THAT delicious, I always make two sometimes even three! ---this also works well using a large 6-7 pound roasting chicken, or a smaller size turkey, make certain that your turkey is completely thawed before cooking, cooking time will need to be increased for a larger chicken or a small turkey ---another way I have done this chicken is to rub 2 teaspoons seasoned salt all over the chicken and sprinkle inside the cavity as well, place the chicken a shallow dish, cover tightly with plastic wrap and refrigerate for 24 hours, prepare the oil/margarine mixture as stated only omit the seasoned salt in it. You will love this! :)

1 (3 1/2-4 lb) whole chickens (or a small turkey)
1/4 cup margarine (use hard stick margarine only not soft tub)
1/4 cup oil
2 tablespoons liquid honey
2 tablespoons lime juice (use lime juice only, not lemon juice)
1/4 teaspoon garlic powder
1/2 teaspoon paprika
1 1/2 teaspoons Lawry's Seasoned Salt (more for inside of cavity)
black pepper
1 small whole lemon (optional but good to use)

Steps:

  • In a saucepan combine oil, margarine, honey, lime juice, garlic powder, paprika and seasoned salt over medium-low heat, stirring until honey is melted; cool slightly.
  • Wash chicken then dry with paper towels.
  • Season the inside of the chicken cavity with seasoned salt (any amount desired).
  • Poke holes all over the lemon then place inside the cavity.
  • Using a pastry brush, brush the oil/margarine mixture liberally all over the outside of the chicken (save the remaining oil mixture to baste the chicken while cooking).
  • Prepare the chicken for the spit by securing together with heavy string if needed.
  • Place the chicken on rotisserie rod and secure tightly.
  • Sprinkle with black pepper if desired.
  • Cook at 400 degrees for about 40 minutes or until cooked through, basting with the oil/butter mixture while the chicken is cooking (cooking time will vary depending on the size of your chicken or turkey).
  • When the chicken has finished cooking, wrap completely in foil and let sit for about 20 minutes before serving (this is an important step to lock in the juices!).
  • Delicious!

1 (2 -3 lb) roasting chickens
2 teaspoons of miscellaneous spices (that contain garlic power or fresh chopped garlic,salt, pepper, msg, etc.)
1 onion, cut into quarters
1 apple, cut into quarters
1 oranges, lemon, grapefruit or 1 lime
string, to tie legs
steel skewer

Steps:

  • Wash chicken inside and out!
  • Put 1/3 spices inside cavity along with the quartered onion and apple.
  • Also try grapes,oranges,lemons,limes.Any fruit that has plenty of juice.It will baste itself while cooking and turning.
  • Pat dry and use the other 2/3's outside and rub into the chicken skin!
  • Tie legs and put skewers where needed to keep firm on rod!
  • Cook on medium heat for 2 hours, let rest when done for 15 minutes and serve!

An excellent spice rub for chicken - for those who like things with a kick. I have cooked this both on a rotissiere and in the oven - the rotissiere creates a crisper skin, much like you would get in the neighbourhood deli, but the oven roasted tastes just as good.

2 teaspoons paprika
1 teaspoon chili powder

Steps:

  • Rinse chicken and place inside plastic freezer or ziplock bag.
  • Mix up spices in a small bowl, pour over chicken.
  • Seal bag and shake it to distribute spice evenly over chicken.
  • Place chicken in fridge overnight.
  • Either put chicken on spit in rotissiere and set for approximately 90 minutes, or put chicken on rack in roasting pan and cook in oven at 350 F for approximately 90 minutes, or until temperature registers 180 F on meat thermometer.
  • Let sit on cutting board for about 10 minutes before carving.
  • Carve into thin slices, and serve with warmed barbecue sauce on the side if desired.

1 whole chicken, 4 - 5 pounds
4 tsp salt
2 tsp paprika
1 tsp onion powder
1 tsp thyme, dried
1 1/2 tsp black pepper
1 tsp cayenne pepper
1/2 tsp garlic powder
2 large onions
cooking oil to rub chicken

Steps:

  • 1. In a small bowl, mix together salt, paprika, onion powder, thyme, pepper, cayenne pepper, and garlic powder.
  • 2. Remove and discard giblets from chicken. Rinse chicken cavity and pat dry with paper towel.
  • 3. Rub chicken with oil then inside and out and under the skin with spice mixture.
  • 4. Place 1 onion into each cavity of the chicken.
  • 5. Place chicken in a resealable bag or double wrap with plastic wrap. Refrigerate overnight, or at least 4 to 6 hours.
  • 6. Preheat oven to 325 degrees F (120 degrees C). Place chicken in a roasting pan. Bake uncovered for 1 1/2 - 2 hours, to a minimum internal temperature of 180 degrees F (85 degrees C). Use meat thermometer to check in the thigh.
  • 7. Baste a few times the last hour if not using a rotisserie.

This recipe comes from Farid Zari, who adapted his traditional way of spit roasting chicken to roasting it in his Los Angeles oven. He advises that the spices are a matter of personal taste--use what you like. He says the method does approximate the really crispy skin that he remembers from Algeria, but stresses that the quality of the chicken makes a huge difference, saying that at home in Algeria all the chickens were organic, free range and very fresh, and suggests that a soak in a salt water bath overnight would improve a run-of-the-mill supermarket chicken. Interestingly this cooking method follows the basic French method for roasting a bird -- and, after all, there is some cross-cultural history there.

2 lemons, halved
2 large garlic cloves, minced
3 tablespoons unsalted butter
1 tablespoon seasoning, mixed (she recommends a mixture of sumac, sesame, cumin, coriander and fennel seeds, ground)

Steps:

  • Pre-heat oven to 450°F.
  • Place the chicken on a rack in a roasting pan and slide your fingers under the skin of the breast and thighs to loosen/separate it from the flesh.
  • Mash the garlic with the salt, using a fork or a mortar and pestle.
  • Work the garlic/salt paste into the butter and then work in the spices; using your fingers, spread the spiced butter into the cavities between the skin and the flesh of the chicken.
  • Squeeze the juice of one lemon over the chicken; sprinkle with salt and pepper.
  • Season the cavity with salt and pepper and place the four lemon halves and the thyme inside.
  • Roast the chicken breast side down for 15 minutes.
  • Turn the chicken breast side up and reduce the oven temperature to 350 degrees.
  • Baste frequently, using additional water and olive oil as needed.
  • If the skin begins to brown too soon, cover with foil (but remove the foil about 15 minutes before the roasting time is up).
  • The chicken should be done in about 90 minutes; the skin between the breasts and the legs should become almost transparent, the legs should move easily in the socket, and any juices should be clear.
  • Let rest before carving.
  • Strain excess fat out of the cooking juices and squeeze in some lemon juice for a lovely flavor.
  • Note: Zari suggests serving with orange salads dressed with pomegranate vinaigrette and carrot salads dressed with lemon, cumin and olive oil.

1/2 cup oil
1/4 cup honey
2 tablespoons lemon juice
1 teaspoon smoked paprika
seasoned garlic salt

Steps:

  • Combine all ingredients, except the chicken and heat in micro till honey is melted and mixture is incorperated.
  • Clean and prepare chicken for rotisserie. Baste chicken with sauce and place on rotisserie on preheated grill.
  • Cook for about 35 to 40 minutes at a temperature around 400 degrees F basting occasionally with sauce. When done remove from grill and wrap tightly in foil. Let rest for about 15 minutes, then carve and serve.
