1 (13.25 ounce) package whole grain rotini pasta
2 tablespoons olive oil
2 ribs celery, diced
1 small onion, diced
½ red bell pepper, diced
1 (10 ounce) package sliced fresh mushrooms
2 tablespoons all-purpose flour
1 cup low-sodium chicken broth
1 (10.5 ounce) can condensed cream of mushroom soup
2 cups cubed, cooked chicken
1 cup frozen peas
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain, reserving 1/2 cup cooking liquid for the sauce.
  • Heat olive oil in a large frying pan or Dutch oven over medium heat. Gently saute celery, onion, and bell pepper until onion is translucent, 5 to 7 minutes. Add the mushrooms and toss. Sprinkle vegetable mixture with flour; stir until flour begins to congeal and cook. Stir in chicken broth until it begins to thicken. Reduce heat to low, cover, and cook for 10 minutes. Stir in mushroom soup, reserved pasta cooking liquid, chicken, and peas until blended.
  • Mix pasta and sauce together in a 2-quart casserole dish. Top with Parmesan cheese. Cover.
  • Bake in the preheated oven for 20 minutes. Uncover and continue to bake for another 5 minutes.

5 cups chicken broth
4 tablespoons unsalted butter
2 large shallots, finely diced
10 ounces cremini mushrooms, bottoms of stems trimmed, and quartered
1 clove garlic, minced
1/2 cup dry sherry
One 8-ounce bag uncooked cultivated wild rice, washed and drained
6 large sprigs fresh thyme, tied into a bundle, plus more for garnish if desired
1 bay leaf
2 teaspoons ground coriander
2 teaspoons kosher salt, plus more to taste
2 teaspoons freshly ground black pepper, plus more to taste
4 small to medium (6 1/2 to 7 1/2 ounces each) boneless, skinless chicken breasts
1 tablespoon extra-virgin olive oil
1/2 cup dried cranberries
1 small lemon, sliced into 1/4-inch-thick slices
1 tablespoon chopped fresh parsley, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the broth in a medium saucepan until simmering.
  • Melt the butter in an oven-safe braiser (or large cast-iron skillet with a lid or 4-quart saute pan with a lid) over medium-high heat. Add the shallots and mushrooms, tossing to coat in the butter, and cook, stirring once or twice, until golden, about 5 minutes. Stir in the garlic and cook until fragrant, 1 to 2 minutes. Add the sherry, allowing the pan to deglaze. Add the rice and allow it to toast and soak in the flavors of the pan. Add about 4 cups of the hot broth to the pan. Add the thyme and bay leaf. Cover the braiser and place it in the oven to bake until the rice is almost cooked, 1 hour to 1 hour and 15 minutes.
  • Meanwhile, in a small bowl, mix together the coriander, salt and pepper. Brush the chicken with the olive oil, then dust all over with the seasoning. Set aside.
  • Fluff the rice with a fork and check on doneness. It should still have some chew with some grains just starting to pop open. Stir in the cranberries. Add the remaining hot broth to keep the dish brothy. Add the chicken breasts to the braiser, laying them at an angle so that most of the chicken is submerged in the rice. Shingle the lemon slices in between the chicken breasts. Cover and bake for 20 to 25 minutes. Uncover and continue to cook until the chicken registers an internal temperature of 165 degrees F, about another 10 minutes. Top with the parsley or thyme before serving.

1 ½ pounds boneless chicken breast, cut into strips
8 ounces cremini mushrooms, sliced
5 ounces oyster mushrooms, stemmed and sliced
4 ounces shiitake mushrooms, stemmed and sliced
1 clove garlic, finely chopped
2 tablespoons all-purpose flour
½ cup white wine
2 cups chicken stock
½ teaspoon ground sage
salt and ground black pepper to taste
¼ cup heavy whipping cream
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a very large skillet over medium heat. Add chicken strips; cook and stir until browned, 1 to 2 minutes per side. Transfer to a casserole baking dish.
  • Place cremini mushrooms, oyster mushrooms, shiitake mushrooms, and garlic in the same skillet; cook and stir until tender, about 5 minutes. Stir in flour until well-incorporated. 1 1/3 pounds boneless, skinless chicken breast halves (about 2 large)
Coarse salt and freshly ground pepper
5 tablespoons extra-virgin olive oil
1 leek, white and pale-green parts only, coarsely chopped and rinsed well
1 celery stalk, cut into 1/2-inch dice
10 ounces cremini mushrooms, halved if large
3 tablespoons all-purpose flour
3 tablespoons dry sherry
2 1/4 cups homemade or store-bought low-sodium chicken stock
3/4 cup whole milk
1 dried bay leaf
8 slices dense multigrain bread, crusts removed, slices cut into triangles
2 tablespoons chopped fresh flat-leaf parsley
1/3 cup finely grated Parmesan cheese (1 ounce)

Steps:

  • Preheat oven to 350 degrees. Season chicken on both sides with salt and pepper. Heat 2 tablespoons oil in a medium saute pan over medium-high heat. Add chicken, and cook until golden brown on 1 side, 3 to 4 minutes. Flip, reduce heat to medium, and cook until cooked through, about 10 minutes more. Transfer chicken to a plate, and return pan, with drippings, to medium heat.
  • Heat remaining 3 tablespoons oil in pan. Add leek, celery, mushrooms, and a pinch of salt. Cook, stirring occasionally, until vegetables are golden brown and tender, 8 to 10 minutes. (Reduce heat if vegetables brown too quickly.) Stir in flour, and cook, stirring often, for 2 minutes. Add sherry, stock, milk, and bay leaf, and cook, scraping up browned bits from bottom, until thickened, about 5 minutes. Season with salt and pepper. Discard bay leaf.
  • Arrange bread on bottom of a 2-quart oval baking dish, overlapping slices slightly. Spoon half of the vegetables and sauce over bread. Slice chicken crosswise, 1/2 inch thick, and arrange on bread. Top with any accumulated juices from chicken. Spread remaining vegetables and sauce over chicken, sprinkle with parsley and Parmesan, and bake until golden brown and bubbling, 25 to 30 minutes. Let stand for 15 minutes before serving.

  • Preheat oven to 350° Fahrenheit.
  • Grease 8x9 casserole dish (I spray mine w/Pam cooking spray).
  • Finely chop onion and spread on bottom of casserole dish.
  • Pour rice over onion.
  • Mix golden mushroom soup with 1/2 can of water (it will be lumpy).
  • Pour most of the soup mixture over the rice and onions but save some soup mixture for later.
  • Season chicken with pepper.
  • Place chicken over rice and pour the rest of the soup mixture on top.
  • Cover with foil and bake for approximately 1 hour and 10 minutes or until chicken is done.
  • You may need to stir the rice while cooking to make sure the soup mixture is distributed evenly.

I was skeptical at first because I've never been a big fan of curry, and I despise mayonnaise, but after hearing all the raves about it, I decided to give it a try. Wow, was I surprised! I absolutely love this casserole, and I'm sure you will, too.

4 chicken breast halves, skinless and boneless
1-2 Tbsp olive oil
1 Tbsp chef paul prudhomme's poultry magic seasoning blend
2 Tbsp butter
16 oz fresh sliced mushrooms
1 pkg broccoli florets, frozen (12-14 oz.)
2 can(s) cream of chicken soup
1 c real mayonnaise
2 Tbsp curry powder
TOPPING
2 c mild cheddar cheese, shredded (more if desired)
1/2 pkg stuffing mix, herb-seasoned (6 oz. package)
2-3 Tbsp butter, melted

Steps:

  • 1. Cut chicken breasts into 1-inch pieces. Heat olive oil in a large skillet and add chicken. Sprinkle chicken with poultry seasoning (I use Paul Prudhomme's Poultry Magic, but you can substitute your favorite seasoning). Saute until chicken is cooked through. Place chicken in a strainer to drain, then spread the cooked seasoned chicken evenly in a 9x13 inch casserole dish or baking pan and set aside.
  • 2. Rinse mushrooms thoroughly with cold water and set aside. Melt butter in a large skillet and add the mushrooms (you can use the same skillet you used for the chicken). Saute until mushrooms are tender and have released a good amount of liquid. Drain well and layer sauteed mushrooms on top of the chicken. NOTE: If mushrooms are undercooked, they will release too much liquid into your casserole, which will result in a runny mess.
  • 3. Layer frozen broccoli florets on top of the sauteed mushrooms. NOTE: You can cook and drain the broccoli prior to adding it to the casserole, but precooking is not necessary.
  • 4. In a small mixing bowl, stir together cream of chicken soup, mayonnaise, and curry powder. Spread mixture evenly over the broccoli.
  • 5. Layer shredded cheddar cheese evenly over the top of the casserole.
  • 6. Pour seasoned stuffing mix into a bowl and stir in melted butter to coat the mix. If mix is too dry, add more melted butter, but be careful not to add too much. Sprinkle stuffing mix over the cheese to top the casserole.
  • 7. Place casserole on the center rack of a preheated 350 degree oven and bake uncovered for 20-25 minutes, or until cheese is melted and stuffing mix is golden brown.

1 teaspoon olive oil, extra-virgin
1/2 cup Panko breadcrumbs
2 tablespoons Parmesan cheese, grated, Parmigiano-Reggiano suggested
1 teaspoon dried oregano
8 ounces cooked chicken sausage, Italian-variety, thinly sliced
1 medium yellow pepper, thinly sliced
1 medium uncooked, onion, chopped
1 pound fresh mushroom, sliced
2 tablespoons water
4 cups marinara sauce
1 cups part-skim mozzarella cheese, shredded

Steps:

  • Preheat oven to 350°F. Coat a 9- X 13-inch baking dish with cooking spray. Cook pasta according to package directions; drain pasta and return to pot. Meanwhile, heat oil in a large nonstick skillet over medium heat. Add breadcrumbs and reduce heat to medium-low; cook, stirring often, until toasted, about 4 minutes. Remove breadcrumbs to a small bowl; stir in Parmesan and oregano and set aside. 1/2 cup pearl barley
1 tablespoon olive oil
4 skin-on bone-in chicken thighs
1 tablespoon chopped fresh rosemary
salt
fresh ground black pepper
1 celery rib, chopped
2 tablespoons chopped yellow onions
1 garlic clove, minced
1/4 cup pine nuts
1/2 lb cremini mushroom, thinly sliced
1/4 cup chicken broth
2 green onions, white and tender green parts, chopped

Steps:

  • Preheat oven to 400 degrees.
  • Bring a saucepan of salted water to a boil.
  • Add the barley, decrease heat to low, cover, and simmer until the barley is tender, about 45 minutes.
  • Drain in a coarse-mesh sieve.
  • Meanwhile, season the chicken with the rosemary, ½ tsp salt, and ½ tsp pepper.
  • In a large, heavy ovenproof pot, warm the oil over med-high heat.
  • Add the chicken thighs, skin side down, and cook, turning once, until golden brown, 8-10 minutes total.
  • Transfer the chicken to a plate.
  • Pour off all but 1 T fat from the pan and add the celery, yellow onion, garlic, and pine nuts.
  • Saute until vegetables are soft, about 2 minutes.

  • Bake, uncovered, until the mushrooms are tender and the chicken meat slips easily from the bones, 15-20 minutes.

1/4 cup plain flour
2 tablespoons olive oil
200 g bacon, rashers rind removed and cut into 2cm cubes
500 g button mushrooms, halved
1 onion, chopped
2 garlic cloves, crushed
800 g diced tomatoes
140 g tomato paste
salt & freshly ground black pepper, to season
sour cream
chopped flat leaf parsley

Steps:

  • Toss 8 small free-range chicken legs in 1/4 cup (40g) plain flour until coated.
  • Heat 2 tbs olive oil in a frying pan over high heat.
  • Add chicken and cook, turning until golden. Place in a 3.5-litre crockpot.
  • Add 200g bacon rashers, rind removed and cut into 2cm cubes, 500g button mushrooms, halved, 1 onion, chopped, and 2 garlic cloves, crushed, to the frying pan and cook for 5 minutes or until golden.
  • Add to the crockpot with 800g can diced tomatoes and 140g container tomato paste.
