1 tablespoon unsalted butter
1 tablespoon all purpose flour
2 teaspoons minced garlic
3/4 cup milk
1 1/2 cups shredded mozzarella cheese
3 cups shredded cooked chicken (or 2 cans - 12.5 ounce cans chunk chicken breast, drained well)
1 - 14 ounce can basil, garlic, and oregano diced tomatoes, drained well
3/4 cup crumbled, cooked bacon
1 tablespoon ranch powder
3/4 cup diced fresh spinach
salt and pepper
1 package Hawaiian rolls (12-15 rolls)
1 1/2 cups shredded cheddar cheese
1/4 cup unsalted butter, melted
1 teaspoon Worcestershire sauce
1 tablespoon white sesame seeds

Steps:

  • Preheat the oven to 350 degrees. Cut rolls in half lengthwise, keeping bottom attached as much as possible, and place in a 9x13 baking dish.
  • Melt the butter in a large saucepan. Add the flour and cook for 1 minute. Stir in the garlic.
  • Whisk in the milk slowly. Cook and stir over medium heat until the mixture thickens.
  • Add the mozzarella cheese and ranch powder and stir until melted and creamy. Stir in the chicken, tomatoes, bacon, and spinach.
  • Continue to stir until everything is heated through and the spinach is wilted. Season to taste with salt and pepper.
  • Spoon the chicken mixture evenly over the rolls in the baking dish. Top with cheddar cheese. Place the tops of the rolls over the cheese.
  • Stir together the melted butter and Worcestershire sauce. Drizzle over the tops of the rolls. Sprinkle with the sesame seeds.
  • Cover the pan with foil and bake for 15 minutes. Remove foil and bake an additional 5 minutes. Cut through the rolls and serve immediately.

4 boneless skinless chicken breasts
1 cup pineapple rings
4 tablespoons salted butter (, sliced)
8 ounces cream cheese ( cubed)
1 dozen dinner rolls
12 slices cheddar cheese
1 cup ketchup
1/4 cup brown sugar
1/4 cup Worcestershire sauce
2 teaspoons liquid smoke
2 teaspoons salt
2 teaspoons black pepper
2 teaspoons garlic powder
1/2 teaspoon red pepper flakes
1/2 teaspoon ground mustard

Steps:

  • Place chicken breasts into a 4 to 6 quart slow cooker. Top with pineapple rings and butter slices.
  • In a small bowl, combine ketchup, brown sugar, Worcestershire sauce, liquid smoke, salt, pepper, garlic, red pepper flakes, and mustard. Pour half of the sauce over chicken.
  • Cover and cook 4 to 5 hours on high, or 6 to 8 hours on low.
  • After the chicken has cooked, pull out the pineapple rings and set aside. add in the remaining barbecue sauce then add in the small cubes of cream cheese.
  • Shred the chicken and stir into the sauce the cream cheese.
  • Serve up on a toasted bun with a slice of cheddar and pineapple ring on top of the pile of chicken.

1 pkg King's Hawaiian Sweet Rolls
12 slices sharp cheddar cheese
1 lb thinly sliced deli chicken
1 large tomato sliced very thinly into 12 slices
6 strips of bacon (cooked)
2 tbsp unsalted butter (melted)
2 tsp Italian seasoning
1 tsp kosher salt

Steps:

  • Preheat oven to 350 degrees.
  • Slice the rolls in half with a serated knife. You don't have to pull the rolls apart, just leave them as two big sheets.
  • Place the bottom of the rolls in a greased baking dish.
  • Top them with 6 slices of the cheddar.
  • Top the cheese layer with the full 1 lb of chicken.
  • Top the chicken with the tomato slices.
  • Put the bacon on top of the tomato slices.
  • Now add the remaining six slices of cheese.
  • Put the tops of the rolls back on.
  • Mix the Italian seasoning with the salt and melted butter. Then brush the tops of the rolls with the mixture.
  • Bake for 20-25 minutes, until the cheese is melted and the tops are golden brown.
  • **To make in advance: Assemble fully and then place in the fridge. Bake before you are ready for guests to arrive. Can be assembled one day in advance.

This recipe is an old French Canadian recipe which originated during the depression. It consists of tender pieces of chicken and homemade noodles swimming in a delicious gravy. A real rib sticker and a favourite with my family during the winter. Sounds harder than it is and it is absolutely delicious!

3 pounds whole chicken
2 onions, quartered
3 stalks celery, cut into 1 inch pieces
2 bay leaves
salt and pepper to taste
1 egg
4 cups all-purpose flour

Steps:

  • Wash chicken and place in large pot. Cover with water and add chopped vegetables, bay leaves, salt and pepper. Bring to a boil, then reduce heat and simmer for about 2 hours or until meat comes away easily from the bone. Remove chicken from broth and strain liquid. Reserve the broth and discard all vegetables.
  • When chicken is cool remove meat from the bones and all skin, keeping the chicken meat in reasonably large pieces.
  • To make the noodles(sliders): Beat the egg with some of the cooled broth, measure out the flour, work the egg mixture into the flour adding broth as required until the dough forms a ball. Knead the ball for a few minutes. Roll out the dough on a floured surface. Cut the dough into strips about 1 1/2 inches wide and 3 inches long. Don't worry if they are irregular in shape. Leave any excess flour on the noodles.
  • Bring the reserved broth to a rapid boil, add the noodles and let them boil for about 5 minutes. Reduce heat, add cut up chicken and simmer until the broth is very thick like gravy (add a little flour to thicken if required). Add salt and pepper to taste.

  • Coat a medium saucepan with cooking spray. Cook bell pepper, onion and garlic in pan over medium heat, stirring, 3 minutes.
