FUDGY S'MORES BROWNIES

I combined the perfect summer snack with my favorite brownie recipe to get these s'mores brownies. They're sure to wow at your next big party. -Judy Cunningham, Max, North Dakota

1-1/3 cups butter, softened
2-2/3 cups sugar
4 large eggs, room temperature
1 tablespoon vanilla extract
2 cups all-purpose flour
1 cup baking cocoa
1/2 teaspoon salt
1 cup Golden Grahams, coarsely crushed
1-3/4 cups miniature marshmallows
4 ounces milk chocolate, chopped

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In a bowl, mix flour, cocoa and salt; gradually beat into creamed mixture. , Spread into a greased 13x9-in. baking pan. Bake 25-30 minutes or until a toothpick inserted in center comes out with moist crumbs (do not overbake)., Preheat broiler. Sprinkle baked brownies with cereal and marshmallows; broil 5-6 in. from heat until marshmallows are golden brown, 30-45 seconds. Immediately sprinkle with chopped chocolate. Cover with foil and let stand until chocolate begins to melt, about 5 minutes. Remove foil and cool completely in pan on a wire rack. Cut into bars.

Feel like doctoring up your basic brownies or want s'mores but you're not camping? Try this recipe courtesy of the back of the Duncan Hines Family Style Chewy Fudge Brownie Mix. I substituted Hershey's Bars with Almonds for the chocolate chips to make it more like a s'more. MMMM!

Number Of Ingredients 7

21 ounces Duncan Hines chewy fudge brownie mix
2 eggs
1/4 cup water
1/2 cup vegetable oil
2 cups miniature marshmallows
5 graham crackers, broken into quarters
1 cup milk chocolate chips or 1 cup semi-sweet milk chocolate chips

Steps:

  • Preheat oven to 350.
  • Grease bottom of 13x9" pan.
  • Stir brownie mix, eggs, water, and oil in large bowl until well blended (about 50 strokes).
  • Spread in greased pan and bake immediately.
  • Bake 34 to 37 minutes if using a glass or metal pan (see box for other options).
  • Brownies are done when toothpick inserted 1 inch from edge of pan comes out clean.
  • Immediately upon removal from oven, sprinkle marshmallows and chocolate chips over warm brownie surface.
  • Return to hot oven for about 2 minutes to melt.
  • Arrange graham crackers on top of hot marshmallows and press down lightly.
  • Cool completely.
  • Cut into servings around graham crackers.

Delicious! I consider myself more of a gourmet cook and thought of this as a great kids recipe, because they are so easy to prepare. Well, surprise, surprise. They are fabulous and everyone raves!

Number Of Ingredients 4

1 (21.5 ounce) package brownie mix
6 graham crackers
1 ½ cups miniature marshmallows
8 (1.5 ounce) bars milk chocolate, coarsely chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare brownie mix according to package directions. Spread into a greased 9x13 inch pan.
  • In a medium bowl, break graham crackers into 1 inch pieces and toss with miniature marshmallows and milk chocolate. Set s'more mixture aside.
  • Bake brownies for 15 minutes in the preheated oven. Remove, and sprinkle the s'more goodies evenly over the top. Bake for an additional 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Allow brownies to cool before cutting into squares.
