Soft and chewy white chocolate cranberry cookies are golden brown with crisp edges, quick and easy, and freeze well - the perfect holiday cookie.

2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup dark brown sugar, packed
1/2 cup granulated sugar
3/4 cup unsalted butter, melted and cooled
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
1 cup dried cranberries
1 cup walnuts, chopped
1 cup white chocolate chips

Steps:

  • Preheat oven to 325 F.
  • In a small mixing bowl, combine flour, baking soda, and salt. Set aside.
  • In the bowl of a stand mixer with paddle attachment fitted (or in a large bowl with a hand mixer), mix together brown sugar, granulated sugar, and melted butter until well mixed, about 1 minute.
  • Add egg, egg yolk, and vanilla, then mix for 1 minute more. Scrape down the sides, then mix again. With the mixer running on low, add the dry ingredients and mix until just incorporated.
  • Fold in dried cranberries, walnuts, and white chocolate chips.
  • Roll out cookies into balls using about 2 tablespoons dough for each, then place 2 inches apart on a half sheet baking pan lined with a silicone baking mat or parchment paper.
  • Bake for 15 minutes, rotating the tray about halfway through cook time.
  • Let cool for 10 minutes, then transfer to a wire rack to cool 5 minutes further.

1 cup butter, softened
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1-1/2 cups semisweet chocolate chips
1-1/2 cups dried cranberries
3/4 cup chopped pecans
1/2 cup English toffee bits or almond brickle chips, optional

Steps:

  • In a large bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine the flour, baking powder and salt; gradually add to the creamed mixture and mix well. Stir in chocolate chips, cranberries, pecans and toffee bits if desired (dough will be stiff)., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten slightly. Bake at 350° for 11-14 minutes or until set and edges are lightly browned. Cool for 2 minutes before removing to wire racks.

These are my favorite (non-chocolate) cookies. They are soft, chewy, and delicious. My family has been making them for the holidays for years. I have no idea where the recipe came from, but I'm glad I have it!

1 cup white sugar
¾ cup firmly packed brown sugar
½ cup butter, softened
¼ cup milk
2 tablespoons orange juice
1 egg
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon salt
¼ teaspoon baking soda
2 ½ cups cranberries, halved
1 cup chopped walnuts
¼ cup confectioners' sugar for dusting, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  • Cream white sugar, brown sugar, and butter together in a large mixing bowl. Beat milk, orange juice, and egg into the creamed mixture.
  • Sift flour, baking powder, cinnamon, salt, and baking soda together in a separate bowl; blend into the wet ingredients in the mixing bowl to form a cookie dough. Stir cranberries and walnuts into the dough.
  • Drop the dough onto the prepared baking sheet by the teaspoonful.

1 cup sugar
1 cup packed brown sugar
1 large egg, room temperature
1/4 cup 2% milk
2 tablespoons lemon juice
3 cups all-purpose flour
1/4 cup ground walnuts
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2-1/2 cups halved fresh or frozen cranberries
1 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in the egg, milk and lemon juice. Combine the flour, ground walnuts, baking powder, salt and baking soda; gradually add to the creamed mixture and mix well. Number Of Ingredients 10

100g pack cashew nuts , or more if you like
140g unsalted butter , at room temperature, plus extra for greasing
250g plain flour
½ tsp baking powder
200g white caster sugar
100g crunchy cashew nut butter , or use peanut butter
1 large egg , beaten
2 tbsp golden syrup
200g bar chocolate , 50% cocoa solids, chopped into 1cm chunks
50g dried cranberries (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Scatter the cashews over a baking tray and toast for 5-7 mins until golden. Cool, then roughly chop.
  • Meanwhile, grease and line 2 baking sheets with parchment. Sift the flour, baking powder and 1/2 tsp salt into a large bowl, then stir in the sugar. Cut the butter into rough cubes, and add this and the nut butter to the bowl. Rub together until the mixture resembles damp breadcrumbs.
  • Using a cutlery knife, work the egg and syrup into the bowl to make a soft dough. Tip in the chocolate, nuts and cranberries (if using), and stir to combine. Try not to overwork the dough at this point.
  • Roll slightly heaped tablespoons of dough into balls and place onto each baking sheet, leaving plenty of room for the cookies to spread. Bake for 12 mins or until golden at the edges and risen in the middle. Let them cool for 5 mins, then move to a rack to cool completely. Repeat until all the dough is shaped and baked. To make ahead, freeze the raw cookies on a baking sheet, then transfer to a freezer bag or box once solid. Bake from frozen, adding 5 mins to the cooking time.
