1 cup all-purpose flour
3 tablespoons confectioners' sugar
1/2 cup cold butter, cubed
FILLING:
2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup quartered maraschino cherries
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well. Stir in walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool on a wire rack. Cut into bars.

1 cup unsalted butter (, melted)
1 cup graham cracker crumbs
2/3 cup brown sugar (, packed)
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
4 cups sweetened shredded coconut
28 ounces sweetened condensed milk
2 teaspoons vanilla extract
1 teaspoon almond extract
2 cups maraschino cherries

Steps:

  • Preheat oven to 325 degrees and spray a 9x13 baking dish with baking spray.
  • To a large mixing bowl add the butter, graham cracker crumbs, and brown sugar.
  • Stir until well combined, then add in the flour, baking powder, and salt until just combined.
  • Press mixture into the bottom of the baking dish.
  • To the mixing bowl add the coconut, condensed milk, vanilla, and almond extract and mix well.
  • Chop the maraschino cherries and pat dry with paper towels.
  • Mix gently into coconut topping and spread mixture over graham cracker crust.
  • Bake for 30-40 minutes until slightly browned.
  • Cool completely then refrigerate for at least 3 hours before serving.

1/2 cup butter or margarine, softened
3 tablespoons powdered sugar
2 eggs
1 cup granulated sugar
3/4 cup chopped nuts
1/2 cup flaked coconut
1/2 cup chopped maraschino cherries, drained
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Grease 8- or 9-inch square pan.
  • In medium bowl, mix 1 cup flour, the butter and powdered sugar with spoon until flour is moistened. Press mixture in pan. Bake 10 minutes.
  • In medium bowl, beat eggs. Stir in remaining ingredients. Spread over baked layer.
  • Bake 25 to 30 minutes or until golden brown. Cool completely, about 30 minutes. For bars, cut into 6 rows by 5 rows.

1/2 cup butter, softened
1 cup firmly packed brown sugar
1/2 tsp. almond or vanilla extract
1 cup Pillsbury BEST® All Purpose Flour
1 tsp. baking powder
1 cup rolled oats, quick or old fashioned
1/2 cup Smucker's® Cherry Preserves

Steps:

  • HEAT oven to 350 degrees F. Spray 8-inch square baking pan with no-stick cooking spray.
  • BEAT butter and brown sugar in medium bowl until smooth and fluffy. Beat in extract. Mix in flour, baking powder and oats until mixture is crumbly. Reserve 1/2-cup for topping. Pat remaining crumbs into bottom of prepared pan.
  • SPOON preserves evenly over crumb crust in pan. Sprinkle with reserved crumb topping.

1 cup unsweetened coconut flakes
1 cup slivered almonds
1 cup dried tart cherries
⅔ cup honey
½ cup creamy peanut butter

3 tablespoons coconut oil
1 teaspoon vanilla extract
1 teaspoon salt
½ cup mini semisweet chocolate chips

Steps:

  • Line a 9x13-inch baking pan with a piece of parchment paper that is large enough to go up all sides of the pan.
  • Combine oats, rice cereal, coconut, almonds, and cherries in a large mixing bowl and set aside.

2 cups (270 grams) flour
1/2 cup (60 grams) rolled oats
1/4 cup (25 grams) unsweetened desiccated coconut
1/2 cup (100 grams) packed brown sugar
3/4 teaspoon (3 grams) kosher salt
1 cup (250 milliliters) coconut oil, melted
1/2 teaspoon (21/2 milliliters) vanilla extract
1/2 teaspoon (2 1/2 milliliters) coconut extract
1 cup (370 grams) cherry jam

Steps:

  • Set your oven rack to the lowest level and preheat to 350 degrees F (175 degrees C). Lightly grease a 9-inch square baking pan with nonstick cooking spray and line the bottom and sides with parchment paper.
  • In the bowl of a food processor, pulse together the flour, oats, coconut, brown sugar and salt once or twice to combine. Pour over the melted coconut oil, vanilla extract and coconut extract and pulse just until combined.
  • Press two thirds of the dough into the bottom of your prepared baking pan. Spread an even layer of jam onto the base layer of dough, then squeeze and crumble the remaining dough overtop.
  • Bake for 30 to 35 minutes, or until golden brown and jam is bubbling. Allow the bars to cool completely before lifting out of the pan and cutting into squares.

Just another wonderful recipe from Light & Tasty that I adjusted to our taste. Although this recipe does have the coconut in it, the cherry is the most powerful flavor. I would recommend coconut extract, instead of vanilla, if you are going for the coconut taste.

3/4 cup all-purpose flour
3 tablespoons confectioners' sugar
3 tablespoons cold butter, cut into cubes

1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup quartered maraschino cherry

Steps:

  • In food processor, mix flour and confectioners' sugar.
  • Add butter and pulse approximately 15 times, or until mixture resembles fine crumbs.
  • Press in to a 9 inch square baking dish that has been sprayed with oil.
  • Bake on 350°F for 12-15 minutes, or until lightly browned.
  • Cool on wire rack.
  • While crust is cooling, combine eggs, sugar and vanilla extract in food processor and blend well.
  • Combine flour, baking powder and salt and add to egg mixture and blend until smooth.
  • Add cherries, nuts and coconut and pulse until just blended.
  • Spread over crust and bake on 350°F for 20-25 minutes or until firm.
  • Refrigerate left overs-- if you have any.

  • In large bowl, place cake mix. Cut in butter, using pastry blender (or pulling 2 table knives through mix in opposite directions), until mixture looks like coarse crumbs. Set aside 3/4 cup crumb mixture. Add egg to remaining crumb mixture in bowl, stirring just until blended. Press mixture in bottom of pan. Bake 15 minutes or until light golden brown around edges.
  • Meanwhile, in small bowl, mix coconut, almonds and reserved crumb mixture; set aside. In small microwavable bowl, microwave preserves on High 45 to 60 seconds or until warm and slightly melted. Stir in dried cherries and almond extract. Spoon warm preserves over partially baked crust. Sprinkle with reserved coconut mixture.

Steps:

  • Preheat oven to 350*.
  • Combine flour, baking soda, oats and brown sugar.
  • Cut in shortening until crumbly.
  • Press into a 9 x 13 pan, and bake for 10 minutes.
  • Beat eggs, brown sugar and almond extract thoroughly.
  • In a separate cup, mix together the flour, baking powder and salt.
  • Add to the egg/sugar mixture and blend well.
  • Stir in the coconut, cherries and pecans.
