This is my husbands recipe they taste almost like a chocolate covered cherry, really good and they don't last long so make a double batch.

Number Of Ingredients 8

2 cups sugar
1/4 cup butter
3 cups quick-cooking oats
1/2 cup milk
1/3 cup cocoa
1 teaspoon vanilla
1/2 cup peanut butter
1 (10 ounce) jar maraschino cherries, DRAINED AND CHOPPED

Steps:

  • Mix together in large saucepan: Sugar, Milk, Butter and Cocoa.
  • Heat on high until boiling. Hard boil exactly one (1) minute.
  • Remove from heat and in the same saucepan add peanut butter, MIX TILL DISSOLVED, ADD CHERRIES THEN VANILLA AND OATS.
  • Do not let cool off. Spoon immediately onto wax paper and let cool.
  • Eat and enjoy!

I had a thought this morning! No bake cookies with no chocolate, I know, almost a sin right? Well bare with me, please. I added a little extra butter, just seemed the likely thing to do, to make up for the lack of chocolate. lol Added some coconut and best of all, dried cherries! When it all came together...I thought WOW...

1 c *dried cherries, slighty chopped
1 c water
1/2 c butter
1/2 c milk
1 c brown sugar
1 c sugar
1/2 c peanut butter, smooth works best
1 tsp vanilla
1 pinch salt
2 1/2 c oatmeal, quick kind works best
1 - 1 1/2 c coconut

Steps:

  • 1. In a 2 c glass measuring cup or a small glass bowl, add cherries and water, microwave 2 minutes. Allow to stand in water 15 minutes. Drain and set aside. While waiting 15 minutes, line your counter top with wax paper and get your other ingredients ready to go.
  • 2. In a large saucepan, over medium heat add butter, milk and sugars. Stir almost constantly until mixture begins to boil. Once it comes to boil, (do not allow to come to a rolling boil) remove from heat, stir in peanut butter, vanilla, salt, oatmeal, coconut and cherries until well combined.
  • 3. Using a medium to large cookie scoop, or a couple tablespoons, drop cookies onto wax paper. Allow to set up then enjoy! :o)
  • 4. ***I find it easier to chop the cherries after they are hydrated, but you may prefer it before.

I got this recipe from GE. I changed it a little bit since I'm diabetic. Their recipe called for confectioners sugar, sweetened coconut and candied cherries. I opted for Splenda, unsweetened coconut and no sugar added dried cherries to keep the carbs lower.

1 cup Splenda granular
1 teaspoon cornstarch
1 teaspoon vanilla
2/3 cup dried tart cherry, chopped
3/4 cup unsweetened dried shredded coconut
2 cups quick-cooking oats
1 cup pecans, finely chopped

Steps:

  • Beat butter, Splenda and cornstarch together until creamy.
  • Add vanilla, cherries and coconut and mix well. Stir in oats.
  • Refrigerate dough for several hours.
  • Shape into 1-inch balls and roll into pecans. Store in the refrigerator.

This has been handed down through three generations in my family. It's an easy no-bake cookie that adds color to a Christmas plate.

1 cup butter
1 cup firmly packed brown sugar
1 (8 ounce) package chopped pitted dates
1 egg, beaten
3 cups crispy rice cereal
1 cup chopped coconut
½ cup chopped drained maraschino cherries
1 tablespoon vanilla extract
2 ½ cups flaked coconut

Steps:

  • Melt butter in a 10-inch skillet over medium heat. Add sugar and dates to the melted butter; stir until the sugar dissolves, 1 to 2 minutes.
  • Remove skillet from heat, add egg, and stir quickly to prevent the egg from cooking.
  • Return skillet to medium heat and cook, stirring constantly, until the mixture comes to a full boil, 4 to 6 minutes; cook at a boil, stirring constantly, for 1 minute more.
  • Remove skillet from heat. Stir rice cereal, chopped coconut, chopped cherries, and vanilla extract with the dates. Let mixture cool until beginning to firm, about 10 minutes.
  • Shape mixture by rounded teaspoonful into 1-inch balls. Spread flaked coconut into a wide, shallow dish and roll balls in the coconut to coat.

2 cups sugar
1/2 cup butter, cubed
6 tablespoons 2% milk
3 tablespoons baking cocoa
1 cup peanut butter
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
3 cups quick-cooking oats
1 jar (10 ounces) maraschino cherries, well drained and finely chopped

Steps:

  • In a large saucepan, combine sugar, butter, milk and cocoa. Bring to a boil, stirring constantly. Cook and stir 3 minutes., Remove from heat; stir in peanut butter and extracts until blended. Stir in oats and cherries. Drop mixture by tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate until set. Store in airtight containers.
