Cranberry Orange Cookies image

These cookies are sweet and tart and very delicious. Made them today and a very happy thumbs up from hubby.

Number Of Ingredients 15

1 c butter, softened
1 c white sugar
1/2 c packed brown sugar
1 egg
1 tsp grated orange zest (i always zest and dry when i get oranges)
2 Tbsp orange juice
2 1/2 c all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
2 c chopped cranberries
1/2 c chopped walnuts
ICING
1/2 tsp grated orange zest
3 Tbsp orange juice
1 1/2 c confectioners' sugar

Steps:

  • 1. Preheat the oven to 375 degrees F
  • 2. In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the egg until well blended. Mix in 1 teaspoon orange zest and 2 tablespoons orange juice.
  • 3. In a small bowl, combine the flour, baking soda and salt; stir into the orange mixture. Mix in cranberries and walnuts, until evenly distributed.
  • 4. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets, 2 inches apart.
  • 5. Bake for about 11-13 minutes until the edges are golden. Remove from cookie sheets and cool on wire racks.
  • 6. In a small bowl, mix together 1/2 teaspoon orange zest, 3 tablespoons orange juice and confectioners sugar until smooth. Drizzle over cooled cookies.
