CHERRY PEACH PANTRY GALETTE

1 round refrigerated pie crust
1 pound sliced frozen peaches, thawed and well drained
12 ounces frozen sour cherries, thawed and well drained
3 tablespoons cornstarch
1 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
1/3 cup plus 1 tablespoon sugar
1 large egg

Steps:

  • Preheat the oven to 425 degrees F. Line a cookie sheet or large rimmed baking pan with parchment paper and lay the round of pie crust on top.
  • Toss the peaches and cherries with the cornstarch, vanilla, cinnamon and 1/3 cup sugar in a bowl until well combined. Mound the fruit mixture in the center of the dough round and spread slightly, leaving a 1 1/2-inch border. Fold the edges over the fruit, pleating as necessary. Whisk the egg and mix with a tablespoon of water. Using a pastry brush, brush the egg wash on the exposed crust. Sprinkle the remaining tablespoon sugar over the top of the fruit. Bake until the crust is golden brown all over and the fruit juices are thick and bubbling, 30 to 35 minutes. Cool slightly and serve warm or at room temperature.

1 ⅓ cups all-purpose flour
2 tablespoons cornmeal
½ teaspoon fine salt
½ cup frozen unsalted butter, cubed
1 tablespoon apple cider vinegar
¼ cup ice water
1 (8 ounce) package soft goat cheese
1 egg yolk
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper
2 tablespoons sliced fresh basil
3 cups cherry tomatoes, halved
1 tablespoon extra-virgin olive oil
1 teaspoon Dijon mustard
1 egg, beaten
2 teaspoons water
2 tablespoons freshly grated Parmigiano-Reggiano cheese, or to taste
1 teaspoon extra-virgin olive oil, or as desired
sea salt to taste

Steps:

  • Combine flour, cornmeal, salt, and frozen butter in a food processor. Pulse until mixture resembles coarse crumbs. Add vinegar and ice water and pulse again until mixture comes together in clumps, scraping down the sides of the bowl as needed.
  • Wrap dough up in plastic wrap and shape into a disc. Refrigerate until thoroughly chilled, about 1 hour.
  • Combine goat cheese, egg yolk, kosher salt, pepper, cayenne, and basil in a bowl. Mix using a spatula until smooth and soft.
  • Place dough on a lightly floured work surface and sprinkle top with flour. Roll out into 1/8-inch-thick circle, about 13 inches in diameter. Roll dough over the rolling pin and transfer onto a 12-inch pizza pan; refrigerate until ready to use.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Mix tomatoes, 1 tablespoon olive oil, and Dijon mustard together in a bowl.
  • Drop spoonfuls of the cheese mixture onto the dough and spread evenly, leaving about 1 1/2-inch space on the sides. Place tomato mixture on top of cheese using a slotted spoon. Fold excess dough up and over tomatoes, creating a pleat every 3 inches or so by gently pressing and folding.
  • Combine beaten egg and water in a small bowl; brush over crust. Sprinkle Parmigiano-Reggiano cheese over galette.
  • Place a foil-lined pan on the rack under galette to catch any possible drips. Bake in the preheated oven until well browned on bottom and top, 30 to 35 minutes.
  • Remove from the oven and let cool completely, about 30 minutes. Sprinkle with remaining olive oil and sea salt. Serve room temperature or chilled.

1 tablespoon granulated sugar
1/2 teaspoon kosher salt
1 stick (8 tablespoons) cold unsalted butter, cut into 1/2-inch cubes
1 teaspoon distilled white vinegar
4 to 5 tablespoons ice-cold water
4 ounces cream cheese, softened
1 large egg, separated
3 tablespoons granulated sugar
1/4 teaspoon vanilla extract
12 ounces frozen sour cherries, thawed and well drained
1 tablespoon cornstarch
2 tablespoons Demerara sugar, for sprinkling

Steps:

  • For the crust: Pulse the flour, sugar and salt together in a food processor. Add the butter and pulse until the mixture resembles a coarse meal with some pea-size lumps. Drizzle in the vinegar and 4 tablespoons of the water; pulse until a dough starts to come together. If the mixture is too dry, add more water, a teaspoon at a time.
  • Turn the dough out onto a piece of plastic wrap, form into a disk and wrap well. Refrigerate until firm, at least 1 hour.
  • For the filling: Beat the cream cheese, egg yolk, 2 tablespoons of the granulated sugar, and the vanilla in a bowl with an electric mixer until smooth.
  • In another bowl, toss the cherries with the cornstarch and the remaining 1 tablespoon granulated sugar.
  • Finish the galette: Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Lightly dust a work surface with flour and roll the dough out to a 12-inch round. Transfer to the prepared baking sheet.
  • Spread the cream cheese mixture evenly over the dough, leaving a 1 1/2-inch border. Spoon the cherries over the cream cheese, leaving any excess juice in the bowl. Fold the edges of the dough over so they just barely cover some of the filling.

Steps:

  • For crust:
  • Mix flour and salt in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Add 3 tablespoons ice water and process until moist clumps form, adding more water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic and chill 30 minutes. (Can be made 2 days ahead. Soften slightly at room temperature before rolling out.)
  • For filling:
  • Melt butter in large nonstick skillet over medium heat. Add apples to skillet; sprinkle 3 tablespoons sugar over. Sauté until apples are golden and begin to soften, about 8 minutes. Add dried cherries and cinnamon and stir 30 seconds. Remove from heat and cool completely.
  • Preheat oven to 350°F. Roll out dough on floured surface to 12-inch round. Using 9-inch-diameter tart pan bottom as aid, transfer dough to rimless baking sheet. Arrange apple mixture atop dough, leaving 3-inch border. Fold edge of dough over apple mixture, pinching to seal any cracks in dough. Sprinkle remaining 1 tablespoon sugar over apple mixture and dough edge.
  • Bake galette 15 minutes. Increase oven temperature to 375°F. Continue to bake galette until crust is light golden around edges and apples are tender, about 35 minutes longer. Using tart pan bottom as aid, transfer galette to rack; cool 15 minutes. Serve warm with Crème Fraîche and Caramel Sauce.

2 tablespoons unsalted butter
2 sheets frozen puff pastry, thawed (one 17-to-18-ounce package)
3 tablespoons all-purpose flour, plus more for dusting
1 large egg
1/2 cup sugar
1/4 teaspoon ground allspice
2 teaspoons vanilla extract
1/2 teaspoon finely grated lemon zest
2 teaspoons fresh lemon juice
2 1/2 cups cherries (about 1 pound), pitted and halved
2 ripe peaches, peeled, pitted and cut into 1/2-inch-thick wedges

Steps:

  • Position a rack in the lower third of the oven and preheat to 450 degrees F. Butter a baking sheet with 1 tablespoon butter. Unfold 1 sheet puff pastry on a floured surface. Beat the egg with 1 tablespoon water and brush over the dough. Unfold the other sheet of puff pastry and lay it on top; press the sheets together with a rolling pin, then roll out into a 14-inch square. Transfer to the prepared baking sheet and refrigerate until firm, about 30 minutes. (Refrigerate the leftover egg wash for brushing the galette.)
  • Combine the sugar, allspice, vanilla, lemon zest and lemon juice in a large bowl; transfer 2 tablespoons of the mixture to a small bowl and set aside for sprinkling. Add the cherries, peaches and 3 tablespoons flour to the remaining sugar mixture and toss.
  • Trim the edges of the pastry with a pizza wheel or sharp knife to make a 12-inch round. Spoon the cherry mixture in the center, leaving a 2-inch border. Cut the remaining 1 tablespoon butter into small pieces and scatter on top. Fold in the pastry edges over the filling, pleating as needed.
  • Bake the galette until puffed and golden, about 20 minutes. Reduce the oven temperature to 350 degrees F. Remove the galette from the oven, brush the crust with the reserved egg wash and sprinkle with the reserved sugar mixture. Return the galette to the oven and bake until the juices thicken and the pastry is cooked through, 30 to 45 more minutes (depending on the juiciness of the cherries). Transfer to a rack and let cool at least 10 minutes so the filling sets.

I discovered the ease of Recipe #94405 recently, and my non-baking self fell in love. When I was overloaded with sweet cherries, I had to find a galette recipe to use them. This is an adaptation of a recipe found at an online wine site. That recipe used a homemade crust, but I think that the part of the appeal of the galette for me, aside from satisfying my sweet tooth, is the ease of using the refrigerated ones.

1 tablespoon granulated sugar

1 large egg beaten with 1 tablespoon cold water
8 ounces cream cheese, at room temperature
2 tablespoons plus 2 teaspoons granulated sugar
1/2 teaspoon pure vanilla extract
1 large egg, separated
Pinch of kosher salt
One 10-ounce bag frozen cherries, thawed and drained
2 teaspoons lemon juice
1/2 teaspoon almond extract
2 ounces chopped semisweet chocolate (about 1/3 cup)
Coarse sugar, for sprinkling

Steps:

  • Pulse the flour, sugar and salt in a food processor until combined. Add the butter and pulse until it resembles coarse meal mixed with pea-size bits of butter, 10 to 15 times. Add the egg mixture and pulse until the dough just starts to come together, about 10 times. Turn the dough out onto a piece of plastic wrap, using the plastic to help form it into a disk. Wrap tightly and refrigerate until chilled, at least 1 hour or up to overnight.
  • Whisk together the cream cheese, sugar, vanilla, egg yolk and salt in a medium bowl until smooth. Cover with plastic wrap and chill in the refrigerator, about 45 minutes. Toss the cherries with the sugar, almond extract and lemon juice and set aside.
  • Position a rack in the center of the oven and place a rimmed baking sheet on it. Preheat the oven to 375 degrees F.
  • Sprinkle the dough lightly with flour on both sides and roll out on a lightly floured surface into a 12-inch round that is about 1/8-inch thick. Transfer the dough to a piece of parchment and place on an inverted baking sheet.

Apricots and cherries are two stone fruits that have great affinity for each other and for almonds. Even less than perfect apricots will do here, as they will sweeten and their flavor will deepen as they bake.

1 dessert galette pastry (1/2 recipe)
6 ounces cherries, pitted and cut in half
1 pound apricots, pitted and halved or quartered, depending on the size
30 grams (3 tablespoons) slivered almonds
1/2 teaspoon almond extract
3 tablespoons raw brown sugar
25 grams (1/4 cup) almond powder
1/4 teaspoon cinnamon
1 egg beaten with 1 teaspoon milk, for egg wash

Steps:

  • Remove the pastry from the freezer and place it on a baking sheet lined with parchment. Leave it to thaw while you prepare the fruit, but don't keep it out of the freezer for too long. It will thaw quickly, and it is easiest to handle if it's cold. You want it just soft enough so that you can manipulate it.
  • Combine the cherries, apricots, slivered almonds, almond extract and 2 tablespoons of the sugar in a large bowl and gently toss together.
  • Sprinkle the almond powder over the pastry, leaving a 2- to 3-inch border all around. Place the fruit on top. Fold the edges of the dough in over the fruit, pleating the edges as you work your way around the fruit to form a free-form tart that is roughly 9 inches in diameter. Place in the freezer on the baking sheet for 45 minutes to an hour. This helps the galette maintain its shape.
  • Meanwhile, preheat the oven to 350 degrees. Remove the galette from the freezer. Brush the exposed edge of the pastry with the egg wash. Combine the remaining tablespoon of sugar and 1/4 teaspoon cinnamon and sprinkle over the fruit and the crust. Place in the oven and bake 1 hour, until the fruit is bubbly and the juice is running out and caramelizing on the parchment. Remove from the oven and allow to cool for at least 15 minutes. Serve hot or warm or at room temperature.

400g cherries , pitted and halved
1 tsp caster sugar
1 tbsp lemon juice
3 tbsp morello cherry conserve
1 egg , beaten
2 tbsp granulated sugar
clotted cream , to serve (optional)
200g white spelt flour
1 tbsp caster sugar
120g unsalted butter , chilled and cut into cubes
100g whole, skin-on almonds , toasted
15g unsalted butter
1 tbsp spelt flour , plus extra for dusting
½ tsp vanilla essence
50g golden caster sugar
1 egg

Steps:

  • First, make the pastry. Sift the flour into a bowl and stir in the sugar and a pinch of salt. Add the butter and rub it in with your fingertips until you have a coarse crumb consistency. Stir in 2-3 tbsp of ice-cold water and bring the mixture together with your hands. Knead it against the side of the bowl, and if it comes together smoothly, squash it into a ball. If it's still crumbling, add a little more iced water and work it until you have a pliable pastry dough. Wrap it in baking parchment and chill for 30 mins. Meanwhile, macerate the cherries in the sugar and lemon juice in a bowl.
  • To make the frangipane, blitz the almonds in a food processor until finely chopped, then add the butter, flour, vanilla extract and sugar, and blitz until combined. Add the egg, and blitz again to make a paste.
  • Heat oven to 160C/140C fan/gas 3. On a lightly floured surface, roll out the pastry into a large circle about 30cm wide, and the thickness of a pound coin. It doesn't matter if the edges are split. Slide onto a baking sheet lined with baking parchment, and spread over the conserve, leaving about a 4cm border all the way around the edge. Cover this with the frangipane, then press half the cherries into it. Fold over the pastry edges to encase the edges of the cherries, pressing down the creases so it holds together. Brush with the beaten egg and scatter some granulated sugar over the cherries and pastry. Put in the freezer for 10 mins.
  • Bake the galette for 45 mins, then remove from the oven and allow to cool for 10-15 mins. Pour over the remaining fresh cherries and spoon over any juices. Serve with clotted cream, if you like.

3 Braeburn apples (1 1/2 pounds), peeled, halved, cored, halves cut into 6 1/2-inch wedges
1/8 teaspoon kosher salt
1/3 cup sugar
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/2 teaspoon arrowroot
1 teaspoon fresh lemon juice
One 8-ounce frozen puff pastry sheet, thawed
All-purpose flour, for sprinkling
1 large egg, beaten
One 4-ounce package chilled soft fresh goat cheese, crumbled into 1/3- to 1/2-inch chunks
1/3 cup sliced almonds, toasted
1/3 cup tart dried cherries

Steps:

  • For the galette: Position a rack in the center and preheat the oven to 375 degrees F. Melt the butter in a large nonstick skillet over medium-high heat. Add the apples and sprinkle with the salt. Saute until almost tender, tossing occasionally, about 10 minutes. Remove the skillet from the heat. Whisk the sugar, spices and arrowroot in a small bowl until no cornstarch lumps remain. Sprinkle the spiced sugar and lemon juice over the apples in skillet, and toss to blend. Cool to lukewarm.
  • Place a large sheet of parchment paper on the work surface. Unfold the pastry sheet on the parchment and sprinkle both sides lightly with flour. Roll out the pastry to 12-inch square, lifting, turning and sprinkling with more flour to keep from sticking. Cut off the corners (with a rounded cut), making a 12-inch-diameter pastry round.
  • Brush the pastry all over with some beaten egg. Starting 2 inches in from the edge (to leave wide border), arrange the apple wedges close together in a circle on the pastry. Arrange the remaining apples in a smaller circle in center (ends may overlap first ring of apples). Fold the pastry border partially over the filling, pleating the pastry in loose folds. Brush the folded-up pastry border with some beaten egg. Slide the galette with the parchment onto a heavy baking sheet. Scrape the juices from the skillet over the apples. Bake galette until pastry edge is deep golden brown, 30 to 35 minutes.
  • Meanwhile, make the topping: Toss the goat cheese, almonds and cherries in a medium bowl until evenly distributed (the cheese should remain in distinct pieces). Chill until ready to use.
  • Remove the galette from the oven. Sprinkle the topping evenly over the filling. Return the galette to the oven and bake for 5 minutes longer to soften the cheese and cherries. Cool 20 minutes and serve warm, or cool for 2 hours to serve at room temperature.

filling:
1 tablespoon unsalted butter
1 1/2 pounds tart green apples (such as Granny Smith; about 5), peeled, cored, each cut into 8 wedges
3 tablespoons sugar
1/3 cup dried tart cherries (about 2 ounces)
1 teaspoon ground cinnamon
2 tablespoons coarse raw sugar

Steps:

  • For crust: Mix flour and salt in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Add 3 tablespoons ice water and process until moist clumps form, adding more water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic and chill 30 minutes. (Can be made 2 days ahead. Soften slightly at room temperature before rolling out.) For filling: Melt butter in large nonstick skillet over medium heat. Add apples to skillet; sprinkle 3 tablespoons sugar over. Sauté until apples are golden and begin to soften, about 8 minutes. Add dried cherries and cinnamon and stir 30 seconds. Remove from heat and cool completely. Preheat oven to 350°F. Roll out dough on floured surface to 12-inch round. Using 9-inch-diameter tart pan bottom as aid, transfer dough to rimless baking sheet. Arrange apple mixture atop dough, leaving 3-inch border. Fold edge of dough over apple mixture, pinching to seal any cracks in dough. Brush all exposed dough with egg wash to seal the crust. Sprinkle coarse raw sugar over apple mixture and dough edge. Bake galette 15 minutes. Increase oven temperature to 375°F. Continue to bake galette until crust is light golden around edges and apples are tender, about 35 minutes longer. Using tart pan bottom as aid, transfer galette to rack; cool 15 minutes. Serve warm with Ice Cream and Caramel Sauce.

  • FOR CRUST: Blend flour and salt in processor. Add butter; using on/off turns, cut in until coarse meal forms. Add 3 Tbsp. ice water. Blend until moist clumps from, adding more water by tsp. if dough is dry. Gather into ball; flatten into disk. Wrap and chill at least 30 minutes and up to 1 day. FOR APPLE FILLING: Melt butter in large nonstick skillet over medium heat. Add apples; sprinkle with 3 Tbsp. sugar. Saute until apples are golden and beginning to soften, about 20 minutes. Stir in cherries and cinnamon. Cool. Preheat oven to 375°F. Roll out dough on lightly floured parchment paper to 12-inch round. Transfer parchment with dough to rimless baking sheet. Arrange apple filling in center 6 inches of dough, leaving 3-inch plain border. Fold border over filling, pleating gently and pinching together any cracks in dough to seal. Sprinkle filling and dough border with 2 Tbsp. sugar. Bake galette until crust is golden and apples are tender, about 40 minutes. Cool galette 15 minutes on sheet. Slide long knife under galette to loosen from parchment; slide onto platter. Serve with warm crème fraîche and caramel sauce.

CHERRY-FRANGIPANE GALETTE

2/3 cup sliced blanched almonds
1/2 cup plus 1 tablespoon sugar
1/4 teaspoon salt
3 tablespoons unsalted butter, cold, cut into 1/2-inch pieces
1 large whole egg, plus 1 large egg yolk
All-purpose flour, for dusting
18 ounces Puff Pastry (page 359)
1 tablespoon heavy cream
2 pounds fresh sweet cherries, stemmed and pitted

Steps:

  • Preheat the oven to 375°F. Spread almonds in a single layer on a parchment-lined baking sheet. Toast until golden and fragrant, 7 to 9 minutes. Set aside to cool completely.
  • Raise oven temperature to 425°F. In a food processor, pulse nuts, 1/2 cup sugar, and salt until nuts are finely ground. With the machine running, add butter and the whole egg; continue processing until mixture is smooth.
  • On a lightly floured piece of parchment, roll out Puff Pastry to a 16-inch rough oval shape, about 1/8 inch thick. In a small bowl, whisk together the egg yolk and the heavy cream; brush over the surface of the pastry. Fold up the edges to create a 1-inch crimped edge. Prick dough all over with a fork. Transfer parchment and pastry to a large baking sheet; freeze until firm, about 15 minutes.
  • Using an offset spatula, spread the almond mixture in an even layer (about 1/8 inch thick) over the bottom of the chilled crust; freeze 15 minutes more. Arrange the cherries in a single layer over the almond mixture.
  • Bake the tart for 15 minutes. Sprinkle the remaining tablespoon of sugar over the tart, and continue baking until edges are deep golden brown, 5 to 10 minutes. Transfer parchment and tart to a wire rack to cool. Serve warm or at room temperature.

1/4 cup(s) packed light brown sugar

1 tablespoon(s) unsalted butter, melted
1 - egg
1 tablespoon(s) water
1/2 teaspoon(s) sugar
1 teaspoon(s) confectioners' sugar

Steps:

  • On a lightly floured surface, roll pastry into a 12-in. circle. Transfer to a parchment paper-lined baking sheet. Shape almond paste into a ball, then flatten into a disk. Roll out between two sheets of waxed paper into a 10-in. circle. Center on pastry. Spoon cherry pie filling over almond paste.
  • In a small bowl, combine the pecans, brown sugar, flour and butter; sprinkle over pie filling. Fold up edges of pastry over filling, leaving center uncovered. Combine egg and water; brush over folded pastry and sprinkle with sugar.
  • Bake at 375° for 30-35 minutes or until crust is golden and filling is bubbly. Using the parchment paper, slide galette onto a wire rack to cool completely. Sprinkle with confectioners' sugar.

How to Make a Fresh Cherry Galette image

For the paté brisée:
1½ cups All-Purpose flour
1½ sticks unsalted butter-cold--and cut into ½-inch pieces
¼ teaspoon salt
⅓ cup ice water
For the filling:
1½ lbs. fresh cherries (a little over 4 cups)
¼ cup (plus ¼ cup) sugar
4 TBSP. almond flour
1 TBSP. Amaretto (or orange juice)
1 TBSP. cornstarch
½ tsp. almond extract
1 TBSP. orange zest
2 TBSP. butter-cold--cut into small cubes
1 TBSP. milk

Steps:

  • To make the paté brisée. Put the flour, butter, and salt in a food processor and process for about 5 seconds; the butter should still be visible and in small pieces. Add the ice water, a little at a time (you might not need it all) and process for 5 seconds longer, or, just until the dough comes together (you should still be able to see the butter bits).
  • To form the dough. Remove the dough from the processor and gather it into a ball. Sprinkle some flour on a work surface and roll out the dough with a rolling pin roll into a 15" to 16" round, about ⅛" thick (note that the shape does not have to be a perfect circle). Drape the dough over the rolling pin and transfer it to a large baking sheet lined with parchment paper. Unroll the dough onto the parchment paper and chill it until firm, about 20 minutes.
  • Preheat the oven to 375°.
  • To make the filling. Wash and pit all the cherries, cut most of them in half (leave a few whole), and place them all in a medium bowl. In a separate small bowl, combine ¼ cup of the sugar with the almond flour and set aside. In a second small bowl, stir together the Amaretto (or orange juice), cornstarch, almond extract and orange zest. Add this mixture to the bowl with the cherries and mix to combine. Sprinkle all but 1 TBSP. of the remaining ¼ cup sugar over the cherries and mix again.
  • To assemble the galette. Remove the baking sheet with the dough from the refrigerator. Spread the mixture of sugar and almond flour evenly over the dough to within 2" from the edges. Arrange the cherries on top of this mixture and dot the cherries with the cubes of cold butter. Fold the edge of the dough up over the cherries to create a 2" border. (If the dough feels too cold and firm, wait for a few minutes until it softens to prevent it from cracking.). Brush the border of the galette with the milk and sprinkle with the reserved 1 TBSP of sugar.
  • To bake the galette. Place the baking sheet with the galette in the middle rack of the oven and bake for about 40-45 minutes, or, until the fruit is very soft and the crust is nicely browned (watch the time, as every oven is different). If any juices have leaked onto the parchment paper-lined baking sheet, slide a knife under the galette to release it from the sheet.
  • To serve the gallete. Let the galette cool to room temperature, then cut it into wedges and serve with some good vanilla ice cream.
