1 boneless rolled pork loin roast (3 to 4 pounds)
1/2 teaspoon salt, divided
1/4 teaspoon pepper
1 jar (12 ounces) cherry preserves
1/4 cup cranberry-raspberry juice
2 tablespoons corn syrup
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Steps:

  • Place roast fat side up on a rack in a shallow roasting pan. Sprinkle with 1/4 teaspoon salt and pepper. Bake, uncovered, at 350° for 40 minutes. , In a small saucepan, combine the preserves, juice, corn syrup, spices and remaining salt. Bring to a boil. Reduce heat; simmer for 5 minutes. Pour 1/2 cup sauce over roast. Bake 20 minutes longer or until a thermometer reads 145°. Let meat stand for 10 minutes before slicing., Scrape up browned bits and pan drippings; add to remaining sauce. Cook and stir until heated through. Serve with roast.

1 boneless pork loin roast (3 to 4 pounds)
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon canola oil
3/4 cup cherry preserves
1/2 cup dried cherries
1/3 cup balsamic vinegar
1/4 cup packed brown sugar

Steps:

  • Sprinkle roast with salt and pepper. In a large skillet, heat oil over medium-high heat. Brown roast on all sides., Transfer to a 6-qt. slow cooker. In a small bowl, mix preserves, cherries, vinegar and brown sugar until blended; pour over roast. Cook, covered, on low until tender (a thermometer inserted in pork should read at least 145°), 3-4 hours., Remove roast from slow cooker; tent with foil. Let stand 15 minutes before slicing. 1 cup dried cherries
1/2 cup water
2/3 cup chopped onion
1/2 cup chopped celery
1/2 cup minced fresh parsley
1/4 cup shredded carrot
1 tablespoon rubbed sage
1 teaspoon minced fresh rosemary
3 tablespoons butter
1/2 teaspoon minced garlic
2-1/2 cups salad croutons
1 cup chicken broth
1/2 teaspoon pepper, divided
1/4 teaspoon ground nutmeg
1/4 teaspoon almond extract
1 boneless whole pork loin roast (about 3 pounds)
GRAVY:
1-3/4 cups chicken broth
1/2 cup water
1/2 cup heavy whipping cream
1/2 teaspoon minced fresh rosemary

Steps:

  • In a small saucepan, bring cherries and water to a boil, Remove from the heat; set aside (do not drain). , In a large skillet, saute the onion, celery, parsley, carrot, sage and rosemary in butter until tender. Add garlic; cook 1 minute longer. Remove from the heat. Stir in the croutons, broth, 1/4 teaspoon pepper, nutmeg, extract and cherries. Let stand until liquid is absorbed., Cut a lengthwise slit down the center of the roast to within 1/2 in. of bottom. Open roast so it lies flat; cover with plastic wrap. Flatten to 3/4-in. thickness. Remove plastic; spread stuffing over meat to within 1 in. of edges. Close roast; tie several times with kitchen string and secure ends with toothpicks. 2 lbs pork tenderloin
1 (16 ounce) can unsweetened tart red cherries
1/2-1 cup cherry juice
4 teaspoons cornstarch
1/4 cup brown sugar
1/2 cup dried cranberries
1 teaspoon mustard

Steps:

  • Preheat oven to 425°F.
  • Season pork tenderloins with salt and pepper to taste. Place in shallow roasting pan.
  • Roast tenderloins 20 to 25 minutes or until done (internal temp 155°F).
  • Meanwhile, to make glaze, drain cherries, reserving liquid.
  • Add enough cherry-flavored juice to cherry liquid to make one cup.
  • Combine cornstarch and 2 tablespoons cherry liquid in small bowl.
  • Mix cornstarch mixture into remaining liquid.
  • Mix cherries, brown sugar, cranberries and cherry liquid in small saucepan.
  • Cook, stirring constantly, until mixture boils and thickens; stir in mustard.
  • Pour glaze evenly over tenderloins during last 10 minutes of roasting time.
  • Slice tenderloins into medallions to serve.
