GRILLED CHICKEN CHEF SALAD



Grilled Chicken Chef Salad image

A favorite staple in our home with fresh ranch dressing!

1/3 c carrots
1/3 c radishes
1/3 c celery
1 can(s) sliced olives
1/3 c cucumbers
1/3 c shredded cheese
1/2 c croutons
1/2 head of iceburg lettuce
2 chicken breast
1 tsp garlic powder
1 tsp mrs. dash

Steps:

  • 1. Dice chicken, saute in olive oil. Add spices.
  • 2. Chop up lettuce and all veggies, start piling on plate with cheese and croutons being last. Add your chicken and dressing. Voila!
  • 3. We love Hidden Valley Ranch dressing from the packet, made with mayo and milk for this dish.

1 1/2 pounds Boston, Bibb, green or red leaf lettuce, or a mixture, washed, trimmed, and dried
Kosher salt and freshly ground black pepper
1 cup dressing of your choice, such as shallot or herb vinaigrette, ranch, or blue cheese
4 ounces imported Swiss cheese, cut into 2-inch long matchstick pieces
4 ounces baked ham, cut into 2-inch long matchstick pieces
4 ounces smoked turkey, chicken or duck breast, cut into 2-inch long matchstick pieces
4 ounces rare roast beef, cut into 1/4-inch by 2 inch matchstick pieces
2 hard-cooked eggs, shelled, cut into wedges
1 ripe Hass avocado, diced
16 vine-ripened cherry or grape tomatoes, halved
2 kirby (pickling) cucumbers, sliced
1 cup toasted croutons

Steps:

  • Tear the lettuce into bite-sized pieces and put into a large mixing bowl. Season with salt and pepper to taste and toss with 1/2 cup of the dressing. Divide the lettuce among 4 large individual serving bowls. Arrange the cheese, meats, eggs, and avocado, like the spokes of a wheel, on top of each salad. Scatter the tomatoes, cucumbers, and croutons on top. Season with salt and pepper to taste. Serve and pass the remaining dressing at the table.

Fiesta Grilled Chicken Salad image

I came up with this delicious meal salad after I found I was all too often relying on prepackaged deli salads that were too expensive and not always the freshest. This is quick and easy, can be prepared ahead and scaled up or down depending on the servings needed.

1 lime, juiced
2 tablespoons olive oil
½ teaspoon chili powder
½ teaspoon cumin
salt and ground black pepper to taste
2 large skinless, boneless chicken breasts
4 cups torn romaine lettuce
2 cups mixed baby greens
2 cups corn kernels
1 cup shredded sharp Cheddar cheese
½ cup canned black beans, rinsed
½ cucumber, diced
½ cup ranch dressing
¾ cup chunky salsa
1 tablespoon finely chopped cilantro
1 cup crushed taco chips

Steps:

  • Mix lime juice, olive oil, chili powder, cumin, salt, and black pepper together in a resealable plastic bag along with the chicken breasts. Marinate in the refrigerator at least 1 hour to overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Cook chicken on the preheated grill until juices no longer run pink, about 5 minutes per side. Allow to cool for about 5 minutes; roughly chop and refrigerate.
  • Toss romaine lettuce, baby greens, corn, Cheddar cheese, black beans, and cucumber together in a large bowl. Set aside.
  • Mix ranch dressing, salsa, and cilantro together in a small bowl. Pour dressing over salad and toss gently. Sprinkle salad with crushed taco chips and diced chicken and serve immediately.

This salad could be a meal in itself! It's my version of a chef's salad with so many yummy things including browned country ham (for a Low Country spin), homemade croutons, and a creamy herb-buttermilk ranch.

3/4 cup whole buttermilk
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh dill
1 teaspoon fresh lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1 large head green leaf lettuce, chopped (8 cups)
3 cups Sourdough Croutons (see recipe below)
2 cups cherry tomatoes, halved
1 cup shredded sharp Cheddar
1 cup julienned carrots (see Cook's Note)
1 cup julienned cucumbers
1/2 cup thinly sliced red onion
3 hard-cooked eggs, sliced
2 slices country ham, browned and chopped (see Cook's Note)
3 cups cubed sourdough bread (stale bread is best)
2 tablespoons olive oil
1 tablespoon grated Parmesan (from a can; not fresh)
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper

Steps:

  • For the Buttermilk Ranch Dressing: Stir together the buttermilk, mayonnaise, sour cream, chives, dill, lemon juice, garlic powder, onion powder, salt and pepper in a medium bowl. Cover and refrigerate until ready to serve.
  • Assemble the salad: Arrange the lettuce, Sourdough Croutons, tomatoes, Cheddar, carrots, cucumbers, onion, eggs and ham on a serving platter. Drizzle with desired amount of buttermilk ranch dressing.
  • Preheat the oven to 375 degrees F. Toss the bread cubes, olive oil, Parmesan, Italian seasoning, garlic powder and pepper on large rimmed baking sheet. Bake until the bread begins to brown, 10 minutes. Stir and bake until the croutons are browned and crispy, 5 minutes more. Set aside to cool completely.
