15 ounces pitted dark cherries in juice
1 teaspoon cornstarch
2 tablespoons brown sugar
2 tablespoons kirsch (optional) or 2 tablespoons brandy (optional)
2 cups non-fat vanilla frozen yogurt

Steps:

  • Drain the juice of the cherries into a saucepan.
  • Whisk in the cornstarch and brown sugar.
  • Bring mixture to a boil over high heat.
  • Add cherries and stir to coat. Remove from heat and add carefully the brandy or kirsch. Return to heat and cook 1 minute.
  • Scoop frozen yogurt into 4 bowls and spoon warm mixture on top.

½ cup white sugar
2 tablespoons cornstarch
¼ cup cold water
¼ cup orange juice
1 pound Bing or other dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries)
½ teaspoon finely grated orange zest
¼ teaspoon cherry extract
¼ cup brandy
3 cups vanilla bean ice cream

Steps:

  • Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice; bring to a boil over medium-high heat, whisking until thickened. Stir in the cherries and orange zest, return to a boil, then reduce heat, and simmer for 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
  • Remove the cherries from the heat, and stir in the cherry extract. Pour in the brandy, and ignite with a long lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.

1 (15 ounce) can dark cherries (NOT cherry pie filling!)
1/4 teaspoon cinnamon
1 tablespoon cherry brandy
1/2 orange
1/2 lemon
1 tablespoon butter
1 tablespoon brown sugar
1 teaspoon cornstarch
1/2 gallon vanilla ice cream

Steps:

  • Melt butter in saute pan.
  • Add cinnamon and cherries.
  • Combine some cherry juice with the tsp of cornstarch.
  • Add cherry brandy into saute pan.
  • Squeeze orange and lemon into mixture.
  • Mix in cornstarch mixture to thicken.
  • Spoon over vanilla ice cream.

425 g pitted black cherries
1 tablespoon caster sugar
1 cinnamon stick
2 teaspoons arrowroot
1 tablespoon water
1/3 cup brandy

Steps:

  • drain cherries, keep syrup.
  • combine syrup sugar and cinnamin in pan.
  • cook stirring until it boils.
  • simmer uncovered without stirring for 2 minutes.
  • strain, discard cinnamon.
  • return syrup to pan.
  • stir in arrowroot and water.
  • cook stirring until boils and thickens slightly.
  • add cherries, stir until heated through.
  • heat brandy, add to sauce.
  • set aflame.
  • serve imediately with ice cream.

2 (30 ounce) cans whole bing cherries, in their juice
1 tablespoon sugar
1 tablespoon cornstarch
1/4 cup kirsch (warmed) or 1/4 cup cognac (warmed)
2 pints vanilla ice cream

Steps:

  • In a small dish, combine a little cherry juice with sugar and cornstarch.
  • In a skillet, heat the juice from the cherries over medium heat.
  • Add cornstarch mixture.
  • When juice thickens, add the cherries to warm them through.
  • Pour in warmed liqueur, then carefully flame the skillet to burn off the alcohol.
  • Remove cherries from heat.
  • Scoop vanilla ice cream into large cocktail glasses or dessert dishes and spoon cherries and their juice down over the ice cream.

This is an old school classic, making use of the woefully underutilized art of flambe. Flambeing caramelizes sugars and deepens flavors; with ripe summer cherries, that's really all you need.

1 pint vanilla ice cream
1 pound fresh, ripe sweet cherries, such as Bing
1/2 cup sugar
1 lemon
1/3 cup golden rum

Steps:

  • Evenly scoop the ice cream into 4 dishes or decorative glasses and put in the freezer until ready to serve (this can be done up to 4 hours ahead).
  • Wash and pit the cherries. Put the cherries and sugar in a large skillet. Peel 2 strips of zest from the lemon in wide strips with a peeler and add to the cherries. Squeeze the juice of half the lemon over the top. Stir to combine evenly. Cover and cook the cherries over medium-low heat until the sugar dissolves, about 4 minutes. Uncover and cook over medium-high until cherries get juicy, about 5 minutes more.
  • To flambe the rum: If cooking over a gas flame, pull the pan off the heat and add the rum. Ignite the alcohol with a long match or one held with tongs. Swirl the pan slightly until the flames subside, about 30 seconds.
  • If cooking over an electric stove, put the rum in a small saucepan. Warm it over medium-low heat and carefully light it with a long match or one held with tongs. Pour the lit rum over the cherries, and swirl the pan lightly until the flames subside, about 30 seconds.
  • Ladle the cherries and their juices over prepared ice cream scoops. Serve immediately.

20 cherries, pitted and halved
1/4 cup cherry brandy
1 tablespoon raw sugar
1 teaspoon cornstarch
1/4 cup milk

Steps:

  • In a small saucepan on low heat, add cherry brandy and keep it warm - don't let it simmer.
  • In a medium skillet over medium heat, add raw sugar and corn starch, Pour in the milk and whisk until the sauce thicken, about 2 minutes.
  • Add cherries to the cornstarch mixture, stir to coat and warm them up, about 3 minutes. Pour in the warm brandy. Either flambé it for 15 seconds or cook for about 45 to 60 seconds. Remove from the heat and serve immediately with vanilla ice cream.

This is my favorite dessert to make at home. It's easy, and the end result is rather impressive. The key to a successful flambe is to be sure the brandy is heated over low heat. That way, it slowly reaches the appropriate temperature but retains it's alcohol content, which is important for it to ignite. For this recipe, canned Cherry Pie Filling is not a suitable substitute for canned cherries. [A little history of this dessert dish....It was well known that cherries was Queen Victoria's favorite fruit, and legendary French chef Auguste Escoffier created this impressive dish to honor Queen Victoria on the occasion of either her Golden Jubilee in1887 or her Diamond Jubilee in 1897.] This is a simplified version of this scrumptious dessert that can easily be made at home.

16 ounces canned bing cherries, pitted and drained
3/4 cup red currant jelly
1/4 teaspoon orange peel
1/4 cup cherry brandy
4 scoops vanilla ice cream
4 sprigs of fresh mint (optional)

Steps:

  • For each serving, place a scoop of ice cream in a bowl.
  • In a small skillet heat the brandy slowly over low heat.
  • In a medium skillet heat currant over low heat until melted. Add the cherries and orange peel, stirring constantly, until the mixture begins to boil.
  • Just before serving, return to small skillet and ignite the brandy with a match and let it flame for only a few seconds.
  • Pour the flaming brandy over heated cherries and stir quickly until the flame is distinguished.
  • Pour hot cherry sauce over the ice cream scoops.
  • Garnish with a sprig of fresh mint, if desired.
