CHEESEBURGER QUESADILLAS

I created these fun cheeseburger quesadilla mashups in honor of my family's two favorite foods. They are so yummy and easy to make! -Jennifer Stowell, Deep River, Iowa

1 pound ground beef
1 cup ketchup
1/3 cup prepared mustard
4 bacon strips, cooked and crumbled
2 tablespoons Worcestershire sauce
2/3 cup mayonnaise
2 tablespoons 2% milk
2 tablespoons dill pickle relish
1/4 teaspoon pepper
8 flour tortillas (8 inches)
1 cup shredded cheddar cheese
Optional toppings: Shredded lettuce and chopped tomatoes

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in ketchup, mustard, bacon and Worcestershire sauce; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 5-7 minutes, stirring occasionally., Meanwhile, in a small bowl, combine mayonnaise, milk, relish and pepper; set aside., Preheat griddle over medium heat. Sprinkle 4 tortillas with cheese; top with beef mixture and remaining tortillas. Place on griddle; cook until golden brown and cheese is melted, 1-2 minutes on each side. Serve with sauce and, if desired, lettuce and tomatoes.

Loaded with garden-fresh vegetables, this Mexican specialty is sure to be popular with the whole family. Plus, it's a snap to prepare on a busy weeknight.

Yield 4 quesadillas (8 wedges each).

1 pound lean ground turkey
1 cup chopped red onion
1 to 2 garlic cloves, minced
2 cups julienned zucchini
1 cup salsa
1 cup frozen corn
1 cup julienned sweet red pepper
1 can (4 ounces) chopped green chilies
2 tablespoons minced fresh cilantro
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
8 flour tortillas (8 inches)
2 cups shredded reduced-fat Mexican cheese blend

Steps:

  • In a large nonstick skillet, cook the turkey, onion and garlic over medium heat until meat is no longer pink; drain. Add zucchini, salsa, corn, red pepper and chilies. Reduce heat; cover and simmer until vegetables are tender. Stir in seasonings., For each quesadilla, place one tortilla in an ungreased nonstick skillet. Sprinkle with 1/4 cup cheese. Top with 1/2 cup filling, then sprinkle with another 1/4 cup cheese. Cover with another tortilla. Cook over medium heat, carefully turning once, until lightly browned on both sides and cheese begins to melt. Cut into eight wedges.

This was a very tasty crispy healthier burger. Add other toppings (bacon, tomatoes, mushrooms, olives... etc) if desired but keep in mind whatever you add needs to be added before going in oven. Once baked, it will be hard to lift top shell from the melted cheese. Enjoy

Number Of Ingredients 13

2 tablespoon(s) vegetable oil
1 medium onion, chopped
1 pound(s) ground turkey (can use ground beef, chicken or pork)
- salt and pepper to taste
1/2 teaspoon(s) red pepper flakes (optional)
2 teaspoon(s) garlic powder
1/4 cup(s) ketchup (sugar free for less calories)
1 tablespoon(s) worcestershire sauce
2 - bouillon cubes, crushed
4 large flour tortilla shells, soft (choose low fat for heathier choice)
- additional vegetable oil for brushing
- jalapeno pepper rings (pickled) optional
2 cup(s) cheese, shredded (i used sharp cheddar and colby cheese) choose low fat cheeses for healthier choice

Steps:

  • Preheat oven to 350 degrees.
  • Heat oil in large skillet over medium heat; add onions and Sauté until tender.
  • Add ground turkey, cook until completely cooked; add salt and pepper to taste, red pepper flakes (if desired), garlic powder, ketchup, Worcestershire sauce and crushed bouillon . Stir all ingredients together and simmer for about 10 minutes.
  • Remove from heat and drain any oil and blot any excess oil with paper towels.
  • Lightly brush one side of each of the 4 tortilla shells and lay 2 shells oiled side down on baking sheet. Top each with 1/2 of the meat mixture; spread evenly over tortilla shell. Add jalapeno slices (if desired) and cheese. Top each with the other 2 shells oil side up.
  • Bake in preheated oven for 12 to 15 minutes until shells are lightly browned and crisp and cheese is melted.
  • Remove from oven; cool for about 5 minutes. Using knife or pizza cutter, cut into 4 triangles and serve.
