- Mix the first 6 ingredients; fold in tuna. Shape into 4 patties. , In a large cast-iron or other heavy skillet, heat butter over medium heat. Cook patties until lightly browned, 4-5 minutes on each side. Serve on buns. If desired, top with lettuce and tomato.

- Prepare stuffing as directed on package.
- Meanwhile, melt butter in large nonstick skillet on medium heat. Add mushrooms; cook and stir 3 min. or until mushrooms are tender and liquid is cooked off. Spoon into large bowl.
- Add stuffing, tuna, cheese and pepper to mushrooms; mix just until blended. Shape into 4 (1/2-inch-thick) patties.
- Wipe skillet clean with paper towels; spray with cooking spray. Add patties to skillet; cook 3 to 4 min. on each side or until heated through. Serve in buns.

CHEESY TUNA PATTIES
My husband came up with this recipe one winter afternoon while pondering what to cook for me that would meet my low carb diet and also not require going out of the house. This is a simple and brilliant recipe, and can be done with any canned fish. It goes well with a bowl of tomato soup.

Steps:
- 1. Beat eggs lightly. Drain tuna and add to eggs. Mix in cheese, chopped onion and seasonings. Let sit for a few minutes to blend the flavors.
- 2. Heat a medium skillet over medium heat. Add olive oil to heating pan until bottom is just coated. Using a pancake ring (or a tuna can with both top and bottom removed) in the pan, pat tuna mix into ring. Allow to sit for a moment, then remove ring and repeat until all tuna mix is used. Cook for five minutes on first side, or until bottoms are golden brown. Carefully flip over and cook for an additional 5 minutes.
- 3. Top patties with sliced cheese (we use double cheddar). Cover, reduce heat, and allow residual heat to melt the cheese onto the patties. Serve warm.
