STUFFED PEPPERS WITH EGGPLANT AND CHEESY RICE



Stuffed Peppers with Eggplant and Cheesy Rice image

2 red bell peppers
2 yellow bell peppers
3 to 4 tablespoons olive oil, plus more for drizzling
Kosher salt and freshly ground black pepper
2 cloves garlic, sliced
1 jalapeno, thinly sliced into rings
1 small yellow onion, diced
1 small eggplant, peeled and diced
1 cup arborio rice
1 cup dry white wine
One 15-ounce can crushed tomatoes
1/3 cup mascarpone cheese
1 small bunch basil, leaves picked and torn, plus more for serving
8 ounces fresh mozzarella, grated on the large holes of a box grater

Steps:

  • Preheat the oven to 450 degrees F.
  • Cut off the tops of each pepper. Pull out the ribs and seeds and discard. Discard the stems and dice the pepper tops. Set aside. Lightly trim the bottoms of each pepper so they can stand up.
  • Stand the peppers up on a baking sheet or large skillet and drizzle with oil. Season with salt and pepper then roast until they begin to soften, 5 to 8 minutes.
  • Heat the oil in a medium saucepot over medium-high heat. Add the garlic, jalapenos and onions and cook until the onions are translucent, 3 to 5 minutes. Add the diced pepper tops and eggplant and season with salt and pepper. Cook, stirring occasionally, until the vegetables soften and begin to caramelize, about 3 minutes. Stir in the rice and mix to combine. Add the wine and cook until it is reduced by half, 2 to 3 minutes. Add 2 cups water and the crushed tomatoes and cook, covered, stirring occasionally, until the rice is creamy and al dente, 10 to 12 minutes.
  • Remove the saucepot from the heat and stir in the mascarpone and basil. Taste for seasoning, adding additional salt and pepper if needed.
  • Reduce the oven temperature to 400 degrees F. Fill each pepper with the rice mixture, then stand them up on the same baking sheet or large skillet and top with the mozzarella. Bake until the cheese is melted and the peppers are cooked through, about 5 minutes. Serve topped with more torn basil and a drizzle of oil.

1 medium onion, chopped

Steps:

  • Cut tops off peppers and remove seeds. In a Dutch oven, cook peppers in boiling water 6-8 minutes or until crisp-tender., Meanwhile, brown beef, onion and salt in a skillet; drain. Cool slightly. Stir in the cheese, tomatoes and rice., Drain peppers and stuff with meat mixture. Place in a baking dish. Bake, uncovered, at 350° for 20 minutes or until heated through.

6 green bell peppers
1 1/2 lbs lean ground beef
1/2 cup chopped onion
3/4 cup cooked rice
1 egg
2 (15 ounce) cans Italian stewed tomatoes, divided
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 (8 ounce) package shredded cheddar cheese, divided

Steps:

  • Cut off portion of tops of bell pepper, and remove seeds, and membranes.
  • Place in roaster with salted water and boil.
  • Cook 10 minutes so they will be only partially done.
  • Drain and set aside to cool.
  • In a large skillet,, brown ground beef and onion and drain. Add rice,egg, 1 can tomatoes, worcestershire and seasonings, and simmer for 5 minutes.
  • Remove from the heat and add 1 cup cheese and mix well.
  • Stuff peppers with mixture and set upright in buttered, round baking dish(you may have to trim little slivers off bottoms of peppers so they will sit upright.).
  • Pour remaining can of tomatoes over top and around peppers.
  • Bake uncovered at 350 degrees for 25 minutes.
  • Remove from oven and sprinkle remaining cheese on top and return to oven for 10 minutes.

1 cup Old El Paso™ Thick 'n Chunky medium salsa (from 16-oz jar)
5 large red bell peppers
2 tablespoons olive oil
1/2 cup chopped onion
1 medium poblano chile, seeded and chopped
1 serrano chile, seeded and chopped
1 package (0.85 oz) Old El Paso™ chicken taco seasoning mix
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
3/4 cup Progresso™ chicken broth (from 32-oz carton)
1/4 teaspoon salt
3/4 cup uncooked instant white rice
1 1/4 cups shredded cooked chicken
1 1/4 cups shredded Cheddar cheese (5 oz)
1/2 cup crushed tortilla chips
Sour cream, if desired

Steps:

  • Heat oven to 400°F. Spray 8-inch square (2-quart) baking dish with cooking spray; spread salsa in baking dish.
  • Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes; rinse peppers. If necessary, cut thin slice from bottom of each pepper so they stand up straight.
  • In 12-inch nonstick skillet, heat oil over medium heat. Add onion, poblano chile and serrano chile. Cook 6 to 8 minutes, stirring occasionally, until vegetables are softened. Stir in taco seasoning mix, tomatoes, broth and salt. Heat to simmering. Stir in rice; remove from heat. Let stand 2 minutes to allow rice to absorb most of the moisture. Add chicken and cheese.
  • Stuff peppers with chicken and rice mixture. Stand peppers upright in baking dish.
  • Cover tightly with foil. Bake 20 minutes. Uncover; sprinkle tops of peppers generously with crushed tortilla chips. Bake uncovered 15 to 20 minutes longer or until peppers are tender and tops are lightly browned. Let stand 10 minutes before serving. Serve with sour cream.

3/4 cup polenta (or yellow cornmeal)
3 garlic cloves, minced
2 cups water
1 teaspoon salt
1/2 teaspoon garlic salt
1/4 teaspoon fresh ground pepper
1/2 cup whipping cream
1 (7 ounce) can whole green anaheim chilies, drained and chopped (or buy chopped chilies)
2/3 cup chopped cilantro
2 cups shredded monterey jack cheese
1/2 cup freshly grated parmesan cheese
fresh cilantro

Steps:

  • Cut the bell peppers in half and remove and discard the seeds and membranes. Place the bell pepper cups in a lightly greased 13" x 9" baking dish.
  • Whisk together the polenta and the next 5 ingredients in a large saucepan over medium heat and bring to a boil. Cook, whisking constantly, for 5-7 minutes or until the polenta thickens. Stir in the cream and the next 4 ingredients, blending well.
  • Spoon the mixture into pepper cups and bake at 400F for 25-30 minutes or until the peppers are tender. Garnish with fresh cilantro sprigs, if desired.

1/4 (1-pound) package Jimmy Dean Premium Pork Sausage
¼ cup diced mushrooms
1 cup pre-cooked white rice
2 tablespoons chopped fresh parsley
1 cup shredded mozzarella cheese, divided
salt and ground black pepper to taste
1 pound mini bell peppers, halved lengthwise and seeded

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Remove the sausage and set aside.
  • To the same pan, add the remaining 1 tablespoon of oil and reduce heat to medium. Add diced mushrooms and saute for about 5 minutes, until mushrooms are softened and brown.
  • In a bowl, mix the sausage and mushrooms with the rice and parsley, and 1/2 cup of the mozzarella. Season to taste, and fill each bell pepper halfway with the mixture.
  • Top each pepper with additional cheese, and bake for 10 to 15 minutes.
  • Carefully remove the peppers from the oven and let cool for 5 minutes before serving.

CHEESY SHRIMP-STUFFED CORNO DI TORO PEPPERS

Here are some ideas for using what is at-hand to create an excellent stuffed pepper dish. I used some exotic ingredients, left-over from a party, in the original recipe; ingrediets such as Boursin cheese and corno di toro peppers, but I have translated them into their more usual counterparts for this recipe. For example, fully ripe red Corno di Toro (or Bull's Horn) peppers, which come from my garden, have a complex flavor both sweet and mildly spicy. Substitute poblanos for more heat and spice, or use hot banana or Anaheim peppers for even more heat. If you prefer mild peppers, substitute sweet Italian (aka Italianelles or Italian frying peppers), bells, or cubanelle peppers. 4 large sweet peppers, if using thin fleshed peppers, remove cap, seeds, and membranes before stuffing, if using thick fles
3/4 cup cooked brown rice
1/2 lb shrimp, shells removed, devined, and chopped
4 large garlic cloves, peeled, minced
1/2-1 fresh jalapeno pepper, minced
1/2 large red bell pepper, seeded, minced
1/2 large shallot, minced
1/3 cup low-fat cream cheese or 1/3 cup creamy goat cheese
1/3 cup smoked mozzarella cheese, shredded
2 tablespoons fresh cilantro, minced
2 tablespoons fresh sweet basil leaves, minced
2 tablespoons olive oil

Steps:

  • Place poblanos or cubanelles under a broiler on high, in the oven, or on a very hot grill. (NOTE: Roast or grill 3 large red bell peppers while you roast the poblanos if you are using the Roasted Red Pepper sauce I recommend.) Broil or grill the peppers, rotating until the outer skin is charred all around, but the peppers are still slightly undercooked.
  • Place charred peppers in a brown paper bag, closing the end to retain the steam, and allow to cool fro at least 5 minutes to a temperature that you can handle comfortably. Peel away and discard the skin that has charred on the outer surface.
  • Using a sharp knife and being careful not to cut all the way through the stem and bottom ends of the pepper, make a vertical slit along one side. Carefully remove the seed strings and core through this slit.
  • Chop the garlic, jalapeno, red bell pepper, and shallot; let them stand undisturbed on the cutting board or in a medium sized mixing bowl for about 5 minutes.
  • Mince the cilantro and basil and add to the mixing bowl. Shred the mozzarella cheese, adding it and the Boursin to the mixing bowl. Stir well. Add rice, chopped spicy shrimp, shredded cheese, and herbs. Stir to mix well.
  • Spray or rub a shallow baking dish with olive oil. Place a prepared pepper on the cutting board with cut side up; spoon stuffing inside, roll to close opening, and place in the baking dish. Continue until all the poblanos are stuffed. If there is extra stuffing it may be mixed with black beans and fresh tomatoes for a lunch salad.
  • Bake in a preheated 350 F for 15-20 minutes.
  • To serve as main dish: Place 2 peppers on each plate; drizzle with roasted red pepper sauce.
  • To serve as appetizers: Arrange all the peppers on a serving dish. Either drizzle red pepper sauce over them on the serving plate, or provide a small dish of red pepper sauce and small ladle for self service.

  • Heat grill to medium-high heat.

Crushed red pepper flakes, if desired

Steps:

  • Heat oven to 375°F. Cut tops off peppers; discard tops. Remove seeds and membranes; discard. Place bell peppers on ungreased cookie sheet.
  • In 10-inch nonstick skillet, cook beef over medium-high heat, stirring frequently, until brown; drain. Stir in hot water, milk, sauce mix and uncooked pasta (from Hamburger Helper box). Heat to boiling, stirring occasionally.

1/2 cup Italian dressing (Kraft Roasted Red Pepper Italian with Parmesan recommended)
4 large square bell peppers
1 teaspoon garlic powder
1 teaspoon paprika
1 roma tomato, diced
8 ounces shredded muenster cheese
4 slices cheddar cheese

Steps:

  • Preheat oven to 375°F.
  • Place chicken pieces in a bowl and pour the dressing over them. Mix well.
  • Let marinate at room temperature 10 minutes.
  • Meanwhile, cut tops off peppers. Do not discard.
  • Remove seeds and membranes from peppers. Set peppers aside.
  • Heat a large skillet over medium-high heat.
  • Add chicken and marinade and cook, stirring, until marinade comes to a boil and chicken is lightly colored.
  • Stir in garlic, paprika and tomato, and cook, stirring, for 1 minute.
  • Reduce heat to medium-low and stir in shredded Muenster.

1 lb ground beef
1 clove garlic, minced
1/2 medium white onion, diced
1 Tbsp cilantro, fresh
1 tsp garlic powder
1 tsp cumin
4 medium red bell pepper
1 c beef broth, reduced sodium
1/4 c tomato sauce
1 1/2 c brown rice, cooked
4 oz processed cheese, velveeta, shredded

Steps:

  • 1. Heat oven to 400.
  • 2. Spray a little olive oil spray in a medium size saute pan and heat on a medium flame. Add onion, garlic and cilantro to the pan.
  • 3. Saute about 2 minutes and add ground beef. Season with salt and garlic powder, and cumin and brown meat for several minutes until meat is completely cooked through.
  • 4. Add 1/4 cup of tomato sauce and 1/2 cup of chicken broth, mix well and simmer on low for about 5 minutes.
  • 5. Combine cooked rice and meat together.
  • 6. Cut the bell peppers in half lengthwise, and remove all seeds. Place in a baking dish. Spoon the meat mixture into each pepper half and fill it with as much as you can.
  • 7. Place all stuffed pepper halves on the baking dish and pour the remainder of the chicken broth on the bottom of the pan.
  • 8. Cover tight with aluminum foil and bake for about 35 minutes. Top with shredded cheese and enjoy.

1 fresh jalapeño pepper, seeded, finely chopped
1 Tbsp. chili seasoning mix
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1 can (14.5 oz.) diced tomatoes, drained
1-1/2 cups cooked quinoa
8 oz. VELVEETA, cut into 1/4" cubes, divided
1/4 cup red onion, sliced, for serving
1/2 bunch fresh cilantro, for garnish
1/4 cup sour cream, for serving
1 lime, cut into 8 wedges

Steps:

  • Preheat oven to 400°F and grease a 9"x13" baking dish with 1 tsp. olive oil.
  • Add bell peppers to dish and drizzle with remaining olive oil; season with ½ the black pepper. (If peppers do not sit flat, cut the bottoms to flatten, being careful to not cut all the way through the bell peppers.)
  • In a large bowl, add ground chicken, onion, garlic, jalapeño, chili seasoning, Worcestershire, diced tomatoes, quinoa and ½ the VELVEETA. Season with remaining black pepper and stir together until combined.
  • Divide filling among the prepared peppers, adding about ⅔ cup filling to each pepper. Top evenly with remaining VELVEETA.
  • Cover dish with foil and bake for 1 hour 25 min. until filling is cooked through (internal temp of 165°F) and peppers are softened.
  • Remove peppers from oven. Garnish each with red onion, cilantro, sour cream, and lime wedge.

2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/4 cup CLASSICO Tomato and Basil Pasta Sauce
1 Tbsp. chopped fresh basil
8 assorted mini sweet peppers (orange, red, yellow), cut lengthwise in half

Steps:

  • Heat oven to 375ºF.
  • Mix all ingredients except peppers until blended; spoon into peppers.
  • Place on parchment-covered baking sheet.
  • Bake 15 to 18 min. or until peppers are tender and Neufchatel filling is heated through.

Cheesy Stuffed Bell Peppers image

I'm the only person in my house that love stuffed bell peppers. My grown son and his wife like them and some of my friends. However, I don't make them a lot but when I do love them. They normally aren't that pretty but oh so tasty!The pictures I'm showing is just one that was left over after I sent the casserole dish with three others to my daughter in law.

1 cup(s) ground chuck or round
1 box(es) zatarains spanish rice or other rice mix like rice or roni
1-2 slice(s) small onion (finely chopped)
1/2 - small stalk of celery chopped
- 1 pinch of garlic powder, salt and pepper
1 can(s) tomato sauce
- sliced cheese for topping
1-2 - cleaned bell peppers (make sure the seeds, etc. are cut out) they can be sliced sideways or stuffed from the stem top)

Steps:

  • Follow the directions on the rice mix. The Spanish rice mix I did not use but a 4 tablespoons of the diced tomatoes when making the rice. I made sure that the rice was tender though before I mixed it with the meat. Do not mix it with the meat until after the meat is done. Set the rice aside.
  • In a skillet cook meat, onions, celery and seasonings until vegetables are tender and meat is not pink. Make sure you chopped the meat into small pieces. Drain. Use a cup plus of rice and mix with meat. It is ready to be stuffed in the prepared clean bell peppers.Place the bell peppers in a greased casserole dish. Pour the tomato sauce over stuffed bell peppers. Cover with foil. Bake on 375 degrees until the bell peppers are fairly soft.
  • Remove foil and top each one with a cheese slice. Return to oven until cheese has melted. This is great warmed over the next day!
