CHEESY SPINACH RICE CASSEROLE
An easy doctored up rice dish that always gets rave reviews!

Steps:
- Cook rice according to package instructions.
- While rice is cooking, preheat the oven to 350 degrees.
- In a small pan, melt the butter and add the onion. Cook for a couple of minutes to soften.
- Scrape onion and butter into a large mixing bowl. Add spinach, mustard, and salt. Mix to combine.
- When rice is cooked, add to the bowl along with the cheese. Mix well and pour into an 8 x 8-inch casserole dish.
- Bake, uncovered for 30-40 minutes.

- Heat oven to 350F degrees. Lightly mist a casserole dish with nonstick spray. I usually use a pretty oval dish, but you could use an 8- or 9-inch square dish if you like.
- In a large bowl, add cooked rice, spinach, butter, onion, salt and cheese. In a 4-cup measure, pour milk and add eggs. Whisk to combine. Pour into the bowl with rice-spinach mixture and stir well to combine.
- Pour into prepared casserole dish and bake for 45 minutes.
- Remove from oven and serve.
- Serves 6.

- Drain spinach. In a medium mixing bowl combine spinach, soup mix and sour cream. Spoon into greased casserole dish and top with cheese.

Steps:
- 1. Preheat oven to 350
- 2. Place frozen spinach in a 7 or 8 cup microwave/oven safe dish. Microwave for 6 minutes stirring 1/2 way through.
- 3. Drain excess liquid from spinach but don't squeeze it
- 4. Saute onions in the butter until tender
- 5. Add flour to the pan and cook for a few minutes
- 6. Add the 1/2 and 1/2 and stir until smooth. Cook until thickened. It should be fairly stiff, there is some moisture in the spinach that will thin it a little.
- 7. Add salt and pepper and 1 1/2 cups of the cheese. Stir until melted.
- 8. Add spinach and rice and mix well. Heat through.
- 9. Pour into the oven safe dish you microwaved the spinach in.
- 10. Top with remaining cheese.
- 11. Bake for 30 minutes. Cheese should be melted and slightly browned and the casserole should be bubbly.

The Moosewood cookbook inspired this recipe, from their Spinach-Rice Casserole. They make a larger dish, and use nutmeg, which I omitted. You could leave out the parsley too.

Steps:
- Follow package directions to make 2 cups cooked brown rice.
- Over medium heat, cook garlic and onions with 1 1/2 tablespoons butter until soft.
- Add spinach, saute for 2 minutes, remove from heat.
- Preheat oven to 350 degrees; grease casserole dish with remaining butter.
- When rice is cooked, remove from heat and add contents of skillet, eggs, milk, cheese, parsley, tamari, salt and cayenne.
- Pour into casserole pan and spread evenly.
- Dust with paprika.
- Cover and bake 30 minutes.

I cut this out of either a copy of Light and Tasty or Simple and Delicious years ago. We enjoy this with simple roasted meat, but I can eat it on its own as a main dish.

- Tear spinach into bite sized pieces, removing stems and set aside.
- In a large saucepan, saute onion in olive oil until tender. Add rice. Cook, stirring constantly, for 2 minutes. Add chicken broth and water; bring to a boil. Reduce heat, cover and simmer for 15 minutes.
- Stir in spinach, salt and pepper and cook until spinach is wilted.
- Transfer mixture to a 2 quart prepared baking dish. Sprinkle with cheese.
- Cover and bake at 375 for 20-25 minutes or until rice is tender. Remove lid and turn oven to broil to brown cheese a bit.

Got this from our CSA farm: Springdale Farms. It's from the Asparagus to Zucchini Cookbook. Made this with swiss chard instead of spinach (tastes the same) and doubled the rice, baking in a 2.5 liter Corning Ware dish. I adjusted the recipe a bit.
