BROCCOLI AND HAM CHEESY ROTINI PASTA

I whipped this up as a slightly healthier baked mac and cheese that acts as a whole meal. I've used canadian bacon or ham for this recipe, but that is easily subbed for veggies for a comforting veggy meal.

1 cup shelled edamame or 1 cup cooked mushroom
1 cup broccoli, floweretts cut small
2 cups cooked whole wheat rotini pasta
3 tablespoons butter
1/4 cup wheat flour
1 1/2 cups milk
3/4 cup shredded monterey jack cheese
1/4 cup grated parmesan cheese (can use shredded or small cubes of Parm as well)
1/2 cup shredded cheddar cheese
1/4 cup breadcrumbs
2 tablespoons mustard
1/2 teaspoon salt
1 teaspoon pepper

Steps:

  • Cook your pasta slightly less than al dente, drain and rinse with cold water.
  • Melt butter in a pan and sprinkle in flour. Cook for about two minutes then add milk and whisk to combine.
  • Cook milk mixture (bechamel) on medium low for about 5 minutes until the sauce has thickened and is bubbly. The sauce should have reduced slightly as well. If the sauce is too thick add more milk.
  • Add Monterey jack, Parmesan, mustard, salt and pepper to bechamel. Combine while cheese melts and taste and reseason if necessary (remember it's less salty after combining with the pasta and veggies).
  • Mix pasta, veggies and meat (if using) into the cheese sauce. Pour half of the mixture into an oven-proof container and sprinkle with 1/4 cup shredded cheddar. Layer the other half of mixture and then sprinkle bread crumbs and then cheese on top.
  • Bake at 350 for 30 minutes or until cheese on top is melted and casserole is bubbly.

This recipe is fabulous and it only takes about 5 minutes to put together. Perfect for a Saturday or Sunday meal. Spend 5 minutes in preparation, throw it in the slow cooker, then go do your shopping, go to an afternoon matinee, or spend the day going antiquing and flea markets. Come home to cheesy, creamy goodness that's ready...

8 chicken thighs
1 can(s) cheddar cheese soup, undiluted
2 can(s) cream of chicken soup, undiluted
1-1/2 c sour cream
2 Tbsp paprika
1/2 tsp cayenne pepper
2 tsp garlic powder

Steps:

  • 1. Arrange chicken thighs in slow cooker. (You might like to remove skin from chicken so as to cut back on grease content.)
  • 2. Combine all ingredients whisking or stirring with a fork to make sure the sauce is well mixed. Pour all of the sauce over top of the chicken thighs. Sprinkle with a little parsley if you'd like to.
  • 3. Serve with a side of Rotini pasta that's been cooked according to package directions. Spoon some of the sauce over the pasta for certain yumminess!!

1 1/2 teaspoons great value minced garlic
2 tablespoons great value olive oil
1 teaspoon dried basil
1 teaspoon sugar
1 (28 ounce) can great value all natural crushed tomatoes
great value salt
great value pure ground black pepper
16 ounces great value rotini pasta
8 ounces great value finely shredded low-moisture part-skim mozzarella cheese

Steps:

  • 1. In a large skillet over medium heat, saute garlic in oil until tender, about 2 minutes.
  • 2. Stir in basil, sugar, and crushed tomatoes; season with salt and pepper and cook 15 to 20 minutes, until slightly thickened.
  • 3. While sauce is cooking; cook pasta according to the directions on the box.
  • 4. Mix pasta and sauce in a bowl, top with cheese. Serve with a salad and carrot sticks.
