1/2 cup chive & onion cream cheese
1 egg, lightly beaten
2 cups minute cooked white rice
1 (15 1/4 ounce) can corn mixed with chopped peppers, red and green, drained
1 cup shredded mexican cheese, divided
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 375.
  • Mix cream cheese spread and egg in large bowl until well blended. Stir in rice, corn, 3/4 cup of the shredded cheese and cilantro.
  • pour mixture into greased 1 1/2 qt baking dish. sprinkle with remaining 1/4 cup shredded cheese.
  • Bake 20 - 25 minutes or until cheese on top is melted and lightly browned.

2 cups cooked white rice

2 tablespoons cilantro, chopped

Steps:

  • Preheat over to 375°F Mix cream cheese and egg in large bowl until well blended.
  • Stir in rice, corn, 3/4 cup of the cheese, and cilantro.
  • Pour mixture into greased 1 1/2-qt baking dish.
  • Sprinkle with remaining 1/4 cup shredded cheese.
  • Bake 20-25 minutes or until cheese on top is melted and slightly browned.

1 package(s) yellow rice mix (5oz.)
1 can(s) cream of mushroom soup
1 can(s) corn, drained
1 tablespoon(s) butter, melted
2 cup(s) shredded cheddar

Steps:

  • Preheat oven to 350 F & grease an 8x8 baking dish.
  • Cook rice according to package directions.
  • Mix the rice, soup, 1 cup of cheese, corn, and butter.
  • Pour into baking dish and bake for 20-30 minutes or until bubbly.
  • Remove from oven and top with the remaining cheese. Bake for an additional 3 minutes.
