1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
1 lb ground Italian sausage, cooked & room temperature
8 ounces Italian cheese blend
5 ounces sun-dried tomato pesto
2 cups seasoned panko breadcrumbs, divided

Steps:

  • Combine potatoes, sausage, cheese, pesto and 1/2 cup of bread crumbs in a mixing bowl. Mix thoroughly.
  • With wet hands, roll potato mixture into 1 1/2 inch balls. Place remaining bread crumbs on a large plate. Roll each potato ball in bread crumbs. Make sure they are evenly coated.
  • Place poatao balls on a large plate or pan and put in fridge for at least 30 minutes or until ready to use.
  • Meanwhile, preheat oven to 380 degrees.
  • Place potato balls on a large non-stick cookie sheet. Bake for 20 minutes and golden brown.

3 pounds potatoes, peeled and cut into 1/4-inch slices
1 pound bulk pork sausage
1 medium onion, chopped
1/4 cup butter, melted
2 cups shredded cheddar cheese

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce the heat; simmer, uncovered, until tender, 8-10 minutes. Meanwhile, crumble sausage into a large skillet; add onion. Cook over medium heat until meat is no longer pink; drain if necessary. , Drain potatoes; arrange in an ungreased 13x9-in. baking dish. Drizzle with butter. Add the sausage mixture and stir gently. Sprinkle with cheese. , Bake, uncovered, at 350° until cheese is melted, 5-7 minutes.

3 large potatoes, washed and cut into bite size cubes
1 large carrot, peeled and sliced
1/2 onion, chopped
4 to 5 whole Italian sausage links
1 tablespoon olive oil
1 teaspoon garlic powder,
1 teaspoon onion powder
1 teaspoon black pepper
1 teaspoon Italian seasoning
1 tablespoon butter
3/4 cups sharp cheddar cheese, shredded

Steps:

  • Place the potatoes, carrot and onion in a 2.5 quart lightly greased casserole dish. Add the oil, house seasoning and Italian seasoning. Toss to coat well then dot the potatoes with the butter. Lay the sausages across the top. Cover with tinfoil and place in a 425° oven for 30 minutes. Remove and uncover, return to the oven for 20 minutes. Remove and top with the cheese and place back in the oven for 10 minutes.

6 -8 medium potatoes, peeled and sliced
2 medium white onions, peeled and diced
6 tablespoons butter
1 lb maple sausage, browned, rinsed & drained
1 cup shredded Mexican blend cheese (Monterey Jack, Cheddar, etc.)

Steps:

  • Preheat oven to 350*.
  • In large skillet, melt butter over medium-high heat. Add potatoes & onion. Cover and cook until onions are caramelized, stirring frequently.
  • In the meantime, brown maple sausage in a separate skillet. Once browned, drain & rinse sausage to remove excess fat.
  • Combine potato mixture with sausage in 9x13 pan. Cover with aluminum foil and bake for 25-30 minutes.
  • Remove foil and sprinkle cheese over top of casserole.
  • Return to the oven, uncovered, for 5-10 minutes until cheese is melted.
  • Serve while hot.

2 cups Simply Potatoes Traditional Mashed Potatoes
1 cup flour
1 egg
1/4 cup butter
1/4 cup sage, finely chiffonade

Steps:

  • Bring a large pot of water to boil on the stove and set up a large ice bath near the pot.
  • Place the mashed potatoes on a clean surface and make a well in the center of the potatoes. Distribute the flour evenly over the potatoes.
  • Crack the egg into the well, and beat with a fork. The egg will slowly start to pull the flour and potato mixture into the center. Continue beating until the egg is no longer separate from the flour and potato mixture.
  • Roll entire mixture into a ball and knead for 4 - 5 minutes until dry. Use additional flour sparingly if mixture remains too moist.
  • Separate dough into 4 equal portions and roll each portion into a long rope about 3/4" in diameter. Cut each rope into 1" segments and pinch each segment slightly for texture.
  • Once all gnocchi are formed, place in batches into the boiling water. Cook until gnocchi float to the surface, about 1 minute, then remove with a slotted spoon and place in the ice bath. Continue until all gnocchi are cooked and placed in ice bath.
  • In a large saute pan, melt butter over medium heat. Allow to sit until milk solids separate to bottom of pan and begin to turn brown. Immediately turn off heat and add sage and gnocchi. Toss until gnocchi are thoroughly coated with butter and sage mixture. Serve immediately.

3 cups water
1/2 lb hot Italian sausage
3 russet potatoes, peeled and cubed 1/2-inch in size
6 large eggs
2 shallots, diced finely
1/4 cup whole milk
1 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped finely
4 slices mozzarella cheese

Steps:

  • In a medium saucepan, bring 3 cups of water to a boil.
  • Add the peeled and cut potatoes to pan and cook for 5 minutes.
  • Drain and set aside.
  • In the meantime, cook the sausage pieces over medium heat in a medium size pan(has to be heat resistant, including handle) for 8 minutes.
  • Remove from pan and set aside. Do not drain pan!
  • Add shallot to pan and cook for 3 minutes, stirring occassionally with wooden spoon, scraping sides and bottom of pan.
  • Add potatos and sausage back to pan and heat for 2 minutes.
  • In the meantime, while the sausage and potatoes are heating, whisk eggs, salt, pepper, parsley and milk in a medium bowl for 30 seconds.
  • Add mixture to pan after sausage and potato mixture are finished heating.
  • Cook for 3 minutes, scraping only sides of pan.
  • Let cook for an additional 6 minutes on low flame without disrupting the mixture.
  • Put oven on and set to Broil.
  • Add cheese to top of mixture and place in oven on top rack and broil for 2 minutes.
  • Remove from oven with oven mitts and let stand for 5 minutes to cool.
  • Serve while hot.

3/4 cup heavy cream

Steps:

  • Preheat oven to 375 degrees F. Bake the pie crust for 15 minutes, until lightly golden. Remove from oven.
  • While the pie crust is baking, heat a large nonstick pan over medium-high heat. Crumble the sausage into the pan and cook for 5 minutes. Add the potatoes and cook for an additional 10 minutes, until the potatoes are tender.
