DEUTSCH ZWIEBELKUCHEN (ONION PIE) image

This is an onion pie from south-central Germany. It is served in the fall when the local winemakers open a cafe-like area called a Besenwirtschaft in their barn or garage to serve the new wine for a small fee. To let people know when they are open, they hang a straw broom over the doorway. Recipe & Photo: allrecipes.com

6 lb onions, sliced
4 slice bacon
16 oz sour cream
4 eggs
2 Tbsp all purpose flour
1/2 tsp salt
1/2 tsp caraway seeds
1 pkg pastry for 9" double-crust pie

Steps:

  • 1. Place the prepared dough in a large pizza pan, making sure dough extends up the sides of the pan.
  • 2. In a large skillet, saute the onion until translucent and pour the cooked onion into a large mixing bowl. (May have to saute in several shifts.)
  • 3. Place the bacon in the same skillet and cook over medium-high heat until evenly brown. Drain, chop and add to onion; mix well.
  • 4. Stir in the sour cream. In a separate bowl, beat eggs to break up yolks; mix into pie mixture. Add flour to thicken; add salt.
  • 5. Mix well and pour mixture into prepared pan. Sprinkle top with caraway seeds.
  • 6. Bake in a preheated 425-degree oven for about 1 hour, or until onions start to turn golden brown on top.
