Lunch for eight in one hearty loaf. Take it out of the oven, and your gang will come running!

1 1/2 lb extra-lean (at least 90%) ground beef
1 envelope dry French onion soup mix (from 2.6-oz package)
1/4 cup water
1/2 red bell pepper, chopped (about 1/2 cup)
2 tablespoons chopped fresh parsley
2 cups shredded Cheddar-Monterey Jack cheese blend (8 oz)
1 loaf (1 lb) French bread, about 24 inches long

Steps:

  • Heat oven to 350°F. Cut 26x18-inch piece of heavy duty foil. In 12-inch nonstick skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Add soup mix, water, bell pepper and parsley. Cook 2 to 3 minutes or until thoroughly heated. Stir in cheese until melted.
  • Cut 1/2 inch lengthwise slice from top of French bread; set aside. With fork, remove inside of bread, leaving 1/2 inch around edges. Place loaf on foil. If desired, reserve bread pieces for another use. Fill indentation in bread with ground beef mixture. Place top of bread over ground beef. Wrap loaf in foil. Place on cookie sheet.
  • Bake 20 to 25 minutes or until thoroughly heated. For sandwiches, cut loaf into 8 crosswise sections.

I came up with this delicious BBQ sandwich on my own. Out of all my barbecue recipes, this one's my husband's favorite. It's also a big hit with family and friends who enjoy it at our Fourth of July picnic.-Sue Gronholz, Beaver Dam, Wisconsin

4-1/2 pounds ground beef
1-1/2 cups chopped onions
2-1/4 cups ketchup
3 tablespoons prepared mustard
3 tablespoons Worcestershire sauce
2 tablespoons vinegar
2 tablespoons sugar
1 tablespoon salt
1 tablespoon pepper
18 hamburger buns, split

Steps:

  • In a Dutch oven, cook beef and onions until meat is no longer pink and onion is tender; drain. Stir in the ketchup, mustard, Worcestershire sauce, vinegar, sugar, salt and pepper. Heat through. Serve on buns.

8 frozen breaded onion rings (from 9-oz. pkg.)
4 (1/2-inch-thick) slices sourdough bread
2 tablespoons creamy mustard-mayonnaise sauce
1/2 to 3/4 lb. thinly sliced cooked roast beef (from deli)
1/2 teaspoon garlic-pepper blend
1 medium tomato, thinly sliced
4 (1-oz.) slices colby-Monterey Jack cheese

Steps:

  • Heat oven to 400°F. Bake onion rings on ungreased large cookie sheet as directed on package.
  • Meanwhile, toast bread. Spread each toasted bread slice with mustard-mayonnaise sauce. Top each with beef; sprinkle with garlic-pepper blend. Top each with tomato slices.
  • Remove cookie sheet from oven. Push onion rings to one side of cookie sheet. Place sandwiches on cookie sheet; top each with cheese slice and onion rings.
  • Return to oven; bake an additional 6 to 8 minutes or until sandwiches are thoroughly heated and cheese is melted.
