2 tablespoons olive oil
1 teaspoon sea salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).

2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2/3 cup whole milk
1/2 cup light lager style beer
1 teaspoon mustard powder
1/2 teaspoon kosher salt
1/8 teaspoon freshly grated nutmeg
4 ounces Havarti cheese, grated (1 1/2 cups)
2 tablespoons cream cheese
3 jalapeno-Cheddar brats
One 8-ounce bag kettle chips
8 to 10 pickle chips
2 tablespoons chopped fresh dill
Sriracha, as desired
Ranch dressing, as desired

Steps:

  • For the cheese sauce: In a medium saucepan over medium heat, melt the butter with the flour. Cook, whisking continuously, until the roux starts to smell toasty but has not taken on any color yet, about 5 minutes. Carefully whisk in the milk until there are no lumps. Add the beer, mustard powder, salt and nutmeg. Bring to a boil, whisking, then cook until thick enough to coat a spoon, 5 to 7 minutes. Add the grated cheese and cream cheese and whisk until melted. Turn the heat to very low and keep warm.
  • For the cheesy pickle nachos: Score the brats and char in a grill pan heated over medium-high for a few minutes on each side or in a saute pan under the broiler. (This can also be done on the grill outside.) Remove from the heat and slice on a hard bias. Set aside and keep warm.
  • Dump the bag of chips into a serving dish. Top with the warm cheese sauce, sliced brats, pickle chips and chopped dill. Drizzle on the sriracha and ranch dressing and serve immediately.

Steps:

  • Preheat the oven to 450 degrees F. Line a rimmed baking sheet with aluminum foil.
  • Toss together the cauliflower, oil, taco seasoning, 1/2 teaspoon salt and several grinds of pepper in a large bowl. Transfer to the prepared baking sheet. Bake until golden brown and tender, 20 to 25 minutes.
  • Meanwhile, juice half of the lime into a small bowl, then cut the other half into 4 small wedges. Stir the sour cream into the lime juice until smooth. Finely dice the avocado and sprinkle it with a little salt and juice from 1 lime wedge. Thinly slice the jalapeño crosswise. Place the refried beans in a small bowl and mash with the back of a spoon to soften them. Set all the toppings aside until ready to serve.

¼ cup white onion, diced
2 garlics, minced
½ lb ground beef, 80-85% lean
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon dried oregano
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
12 oz pickled jalapenos, canned, drained, liquid reserved
8 oz american cheese block, cut into small cubes
32 square wonton wrappers, 1/2 inch (1 1/4 cm)
1 large egg, beaten
vegetable oil, for frying
kosher salt, to taste
2 cups shredded cheddar cheese
15 oz black beans, canned, drained and rinsed
12 oz pickled jalapenos, canned, thinly sliced
½ small red onion, diced
1 medium tomato, diced
sour cream, to taste
1 avocado, sliced

Steps:

  • Make the beef: Heat the vegetable oil in a large skillet over medium heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook for 1-2 minutes more, until softened but not browned.
  • Add the beef, cumin, chili powder, oregano, salt, and pepper to the pan. Stir to break up the ground beef, then let sit undisturbed for about 3 minutes to let the meat brown. Stir and continue cooking until no pink remains, 5-7 minutes total. Add 2 tablespoons of the pickled jalapeño liquid and cook until slightly evaporated, about 1 minute. Remove the pan from the heat. Drain any excess liquid from beef and set aside.
  • Make the wontons: In a medium bowl, mix together the American cheese and beef until well combined with large chunks of cheese still intact.
  • Fill a large, deep pot about ⅔ of the way with vegetable oil. Heat the oil until it reaches 350°F (180°C). Set a wire rack on top of a baking sheet.
  • On a clean work surface, lay out 10 wonton wrappers at a time. Scoop about 2 teaspoons of the beef mixture into the center of each wonton wrapper. Lightly brush 2 edges of the wrapper with egg, then fold up one corner to meet the opposite corner, forming a triangle, and gently press all the edges together to seal, ensuring all the air is pressed out from around the filling. 1 teaspoon chili powder
1 teaspoon sea salt
1 teaspoon ground cumin
¾ pound flat iron steak
½ yellow onion, sliced into rings
1 tablespoon vegetable oil
1 (14 ounce) bag frozen onion rings (such as Ore-Ida®)
1 pound processed cheese food (such as Velveeta ®), diced
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 tomato, diced
¼ cup chopped fresh cilantro, or to taste
2 tablespoons pickled jalapeno peppers, or to taste
3 green onions, thinly sliced

Steps:

  • Combine chili powder, sea salt, and cumin in a bowl; rub over steak. Place steak on a plate and cover with plastic wrap; refrigerate for 1 hour and up to overnight. Remove from refrigerator and let sit at room temperature for 30 minutes.
  • Heat a grill pan over high heat. Rub steak and sliced yellow onion with vegetable oil; cook on the hot grill until steak is cooked through, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Let steak and onion rest for 20 minutes. Thinly slice.
  • Preheat oven to 425 degrees F (220 degrees C). Spread onion rings in 1 layer onto a baking sheet.
  • Bake in the preheated oven until browned and crisp, 14 to 16 minutes.
  • Cook and stir cheese food and diced tomatoes and green chiles in a saucepan over medium-low heat until cheese sauce is smooth, 5 to 10 minutes.
  • Spread baked onion rings on a serving platter and top with steak and onions. Pour 3/4 of the cheese sauce over the top, reserving the remaining sauce to serve alongside the nachos. Top nachos with tomato, cilantro, jalapeno peppers, and green onions.

1 tablespoon Old El Paso™ taco seasoning mix (from 1-oz package)
5 cups Corn Chex™ cereal

1 plum (Roma) tomato, chopped
3 tablespoon chopped fresh cilantro
3 tablespoons sliced ripe olives
Salsa, if desired
Sour cream, if desired

Steps:

  • Heat oven to 400°F. Line 15x10x1-inch pan with cooking parchment paper. In large bowl, mix melted butter and taco seasoning mix. Add cereal; toss to coat. Spread mixture in single layer in pan. Bake 3 minutes.
