1/2 C Mayonnaise
1 C Buttermilk
2 C Grated Parmesan
2 Tbsp Olive Oil
1 Tbsp White Wine
1 Tbsp Tarragon
1 Garlic Clove
1 Kalamata Olive
1 Head Romaine Lettuce (torn into small pieces)
1 Cup Carrots (very thinly sliced)
1/4 C Kalamata Olives
3 Pepperoncini Peppers

Steps:

  • Place all the dressing ingredients in a blender and pulse until smooth and creamy.
  • In a large bowl, combine the romaine lettuce, carrots, and olives, and toss with roughly 1/2 cup* of the dressing. Top with the pepperoncini and serve immediately.

This salad is simple, but it's big on flavor. The shaved Parmesan adds intense cheese flavor, and the nicely balanced dressing lets the other flavors shine. If you're pressed for time, it's good with bottled dressing, too.

2 cups onion and garlic salad croutons
2 tablespoons lemon juice
1/2 teaspoon Dijon mustard
1 small garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup olive oil
1 block (4 ounces) Parmesan cheese

Steps:

  • In a salad bowl, combine the romaine, tomatoes and croutons., In a small bowl, whisk the lemon juice, mustard, garlic, salt and pepper. Slowly whisk in oil. Drizzle over salad; toss to coat., Using a vegetable peeler, shave cheese into thin curls; sprinkle over salad.

1 cup mayonnaise
3/4 cup grated Parmesan cheese
1/2 cup sour cream
1 tablespoon minced chives

1/8 teaspoon pepper

2 cups small shell pasta (uncooked)
1 1/2 lbs asparagus, cut into 2-inch pieces, discard tough ends
1 red bell pepper, chopped
1 cup fresh mushrooms, sliced
3 tablespoons parsley, chopped
1/4 cup slivered almonds
2 fresh garlic cloves, minced
2 -3 anchovy fillets, rinsed with cold water
2 tablespoons Dijon mustard
salt and pepper
1/2-1 teaspoon Worcestershire sauce
1 egg yolk (uncooked)
2 tablespoons lemon juice
1 tablespoon white wine vinegar
1/2 cup olive oil
1/3 cup grated parmesan cheese (freshly grated if possible)

Steps:

  • Boil pasta in water until firm-tender (do not overcook, leave firm!) drain, and rinse with cold water; set aside.
  • Steam asparagus until crisp-tender; drain and plunge into very cold or ice water; drain and pat dry with a paper towel.
  • Place all dressing ingredients in a blender, and blend until well mixed (adjusting all ingredients to suit taste).
  • Place the veggies and the cooked pasta shells in a large bowl; toss to combine.
  • Pour the dressing over; toss well to coat.
  • Add in slivered almonds and mix.
  • Chill in the fridge for a minimum of 2 hours before serving.

This salad is rich and very filling and should be served as a main meal. The dressing makes about 1-1/2 cups but can easily be doubled. Plan ahead the dressing needs to chill for a couple of hours before using, prep time includes chilling time for the dressing. Feel free to add in other ingredients to the salad.

1 cup mayonnaise (do not use salad dressing)
1/3 cup bottled kraft Italian salad dressing
1/3 cup grated parmesan cheese
1 teaspoon fresh garlic (optional)
salt and pepper
1 large head romaine lettuce (torn into bite-size pieces)
1 cup artichoke heart, cut into quarters (or to taste)
1 (6 ounce) can pitted ripe olives (use green or black)
5 firm roma tomatoes, coarsely chopped
1 small red onion, thinly sliced
1/2 lb shredded provolone cheese (or to taste)
salt and black pepper

Steps:

  • For the dressing; whisk all the ingredients together, then season with salt and pepper to taste.
  • Cover and chill for 2 hours before serving.
