Use refrigerated hash brown potatoes to assemble a dinner casserole in 15 minutes. Then pop it in the oven!

1 bag (1 lb 4 oz) refrigerated hash brown potatoes
1 1/2 cups diced cooked ham
2 cups shredded Colby or mild Cheddar cheese (8 oz)
1 cup chive-and-onion sour cream potato topper
1 1/2 cups milk
1/2 teaspoon peppered seasoned salt

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In large bowl, mix potatoes, ham and 1 1/2 cups of the cheese. Spread in baking dish. In same bowl, mix sour cream, milk and seasoned salt with wire whisk until well blended. Spoon over potato mixture; stir to mix. Cover baking dish with foil.
  • Bake 45 minutes. Sprinkle with remaining 1/2 cup cheese. Bake uncovered about 10 minutes longer or until bubbly and thoroughly heated.

1 package (32 ounces) frozen cubed hash brown potatoes, thawed
1 cup cubed fully cooked ham
1 small onion, chopped
2 cups shredded cheddar cheese, divided
1 can (14-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup butter, melted
1 cup sour cream

Steps:

  • In a 3-qt. slow cooker, combine the potatoes, ham, onion and 1 cup cheese. Combine soup and butter; pour over potato mixture. Cover and cook on low for 3-4 hours or until potatoes are tender., Stir in sour cream. Sprinkle with remaining cheese. Cover and cook for 15 minutes or until cheese is melted.

3 tablespoons margarine or 3 tablespoons butter
3 tablespoons flour
2 cups milk
1 1/2 cups shredded cheddar cheese
1 tablespoon dijon-style mustard
2 cups cooked ham, cubed
1 (24 ounce) bag frozen hash brown potatoes
1 (10 ounce) package frozen chopped spinach, thawed & squeezed dry

Steps:

  • Preheat oven to 350F degrees.
  • In a large saucepan, melt margarine; stir in flour.
  • Add milk all at once--cook& stir until bubbly; cook 1 minute more.
  • Remove from heat& stir in cheese& mustard.
  • Set aside.
  • Place half of the ham in an ungreased 2-quart casserole dish.
  • Top with half of the hash browns& half of the cheese sauce.
  • Spread the spinach on top of the cheese layer.
  • Repeat layers with remaining ham, potatoes& cheese.
  • Bake uncovered for 30 minutes, or until heated through.

1 (30 ounce) package frozen hash brown potatoes, thawed
1 (12 ounce) package pre-cooked ham steak, diced
2 cups shredded sharp Cheddar cheese, or more to taste
1 onion, chopped
1 (10.75 ounce) can condensed cream of chicken soup
1 (8 ounce) container sour cream
½ cup butter, melted
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Stir hash browns, ham, Cheddar cheese, onion, cream of chicken soup, sour cream, and butter in a large bowl; season with salt and black pepper. Transfer mixture to prepared baking dish and cover with aluminum foil.
  • Bake until bubbly and cheese is melted, 45 minutes to 1 hour. Remove foil and continue baking until brown, about 15 minutes more.

1 (8 ounce) package sliced ham (chopped)
2 (10 3/4 ounce) cans cream of potato soup
1 (16 ounce) container sour cream
2 cups shredded sharp cheddar cheese
1 1/2 cups grated parnesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Lightly grease a 9 x 13 inch baking pan.
  • In a large mixing bowl, combine potatoes, ham, potato soup, sour cream and cheddar cheese.
  • Sprinkle with Parmesan cheese.
  • Bake in preheated oven until sauce is browned and top is browned, about 60 minutes.

I had a TON of left-over ham from Easter, and needed to make something with it. I used the items from my freezer, refrigerator & pantry, and came out with this concoction!

1 tablespoon canola oil
1 medium onion, chopped
3 stalks celery, chopped
2 cups left-over ham, chopped (I used my left-overs & I'm approximating the 2 cups, use more or less to your liking)
1 (16 ounce) bag frozen hash brown potatoes, partially thawed
1 (12 ounce) bag frozen mixed vegetables (I used carrots, corn, peas & green beans)
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of asparagus soup or 1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cheddar cheese soup (Campbell's condensed)
1/2 cup medium cheddar, cubed
1 pinch salt
1 pinch black pepper
1 pinch garlic granules
paprika, to sprinkle on top (optional)
1/2 cup green onion, chopped (optional garnish)
1/2 cup fresh parsley, finely chopped (optional garnish)
nonstick cooking spray

Steps:

  • Preheat the oven to 350*F. Prepare a large casserole dish (mine is 12 X 9 X 4) by liberally spraying it with non-stick cooking spray. Set aside.
  • Heat canola oil in frying pan over medium-high heat. Add ham, onion, and celery. Cook until onions and celery are soft. (Approximately 5 minutes).
  • Combine the remaining in ingredients (except the paprika) in a large mixing bowl. Add the ham/onion/celery mixture to the mixing bowl. Stir well to incorporate.
  • Spread the entire mixture into prepared casserole dish; sprinkle with paprika for some color.
  • Bake 1 hour or until the casserole is heated all the way through and the vegetables are tender. Garnish with green onions and parsley, if desired.
