The perfect texture, and a wonderfully garlicky taste... you will never guess that these mashed potatoes are made with no butter or sour cream, and they're so quick and easy to make!

3 medium potatoes, scrubbed
¼ cup olive oil
1 slice vegan Cheddar cheese (such as Daiya®)
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
¼ teaspoon chopped fresh chives, or to taste

Steps:

  • Poke vent holes in the potatoes. Microwave on high for 13 minutes.
  • Meanwhile, put olive oil, vegan cheese, garlic, salt, and pepper in a small pot over medium-low heat. Heat until cheese is fully melted and garlic is cooked.
  • Let potatoes cool slightly. Halve them and scoop the flesh out into the pot. Discard skins.
  • Mash potatoes and cheese sauce together until fully incorporated.

Head cauliflower
4 ounce(s) goat cheese (garlic)
1/2 cup(s) parmesan cheese
1/2 cup(s) heavy cream
1/4 cup(s) sour cream
2 teaspoon(s) butter
2 tablespoon(s) chive's chopped fresh
1 tablespoon(s) parsley chopped fresh
3 clove(s) garlic minced fresh
2 tablespoon(s) olive oil light
1 pinch(es) red pepper flakes
2 teaspoon(s) sea salt
2 teaspoon(s) white pepper ground

Steps:

  • In a large bowl, mix: goat cheese, Parmesan cheese, heavy cream, sour cream, butter, garlic, red pepper flakes and half of the salt and white pepper. Allow mixture to come to room temperature, about 20 minutes.
  • Preheat oven to 425'
  • Clean and cut cauliflower into florets.
  • Place in gallon zip lock bag with olive oil and half of the salt and white pepper.
  • Zip and work florets until covered.
  • Cover sheet pan with parchment. Arrange florets in a single layer and roast for 20 to 30 minutes until they start to brown slightly.
  • Add chives and parsley to mixture.
  • Use emersion blender or food processor to grind the florets.
  • Add florets to mixture and mix until well blended.

2 1/2-3 t minced roasted garlic
2 pounds potatoes
1 Tablespoon salt
1 cup heavy cream
1/2 cup butter (1 stick)
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup Cheddar cheese, shredded

Steps:

  • Peel and quarter the potatoes and put them into a large pot with 1 Tablespoon salt. Boil uncovered until the potatoes come right off a fork when you stick them, about 15-20 minutes. While the potatoes are boiling melt butter in a small saucepan. Add cream, roasted garlic, salt and pepper and whisk together until combined. Bring to a boil then remove from heat, cover to keep warm. When potatoes are done, drain well, Put them back in the pot, pour cream mixture over them, add the cheese then beat with an electric mixer.
