Nice bread-like cheese muffins. Not overly cheesy, but feel free to add more. One of my favorites!

2 cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
1 teaspoon salt
½ teaspoon baking soda
1 ½ cups shredded Cheddar cheese
1 cup plain yogurt
2 eggs, beaten
¼ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 large muffin cups.
  • Mix flour, sugar, baking powder, salt, and baking soda together in a large mixing bowl; stir Cheddar cheese into the flour mixture. Pour yogurt, eggs, and butter over the flour mixture; stir until the dry ingredients are just moistened. Spoon the batter into the prepared muffin cups.
  • Bake in the preheated oven until the tops just start to lightly brown, 18 to 20 minutes.

2 pkg. (10 oz. each) frozen riced cauliflower, thawed
1 cup KRAFT Finely Shredded Sharp Cheddar Cheese
3 slices OSCAR MAYER Bacon, cooked, chopped
1/2 cup chopped fresh chives
2 eggs
1/4 tsp. cracked black pepper
1 cup KRAFT Lite Ranch Dressing

Steps:

  • Heat oven to 400°F
  • Combine cauliflower, cheese, bacon and chives in large bowl.
  • Whisk eggs and pepper until blended. Add to cauliflower mixture; mix lightly.
  • Spoon into 24 mini muffin pan cups sprayed with cooking spray; gently press down tops with back of spoon.
  • Bake 20 to 25 min. or until golden brown. Cool 5 min. before removing from pan.
  • Serve with dressing.

These are a big hit at holiday gatherings and any kind of party or get together. They're quick, easy, yummmy and addictive. They can also be frozen before you bake them to have some apps on hand for unexpected guests.

1 (4 1/4 ounce) can chopped ripe olives
1/2 cup green onion, tops included
1 1/2 cups grated sharp cheddar cheese
1/2 cup mayonnaise
1/2 teaspoon curry powder
1/2 teaspoon salt
6 English muffins, sliced in half

Steps:

  • Mix the first six ingredients together.
  • Spread mixture on halves of English Muffins.
  • Cut frosted halves into 4 wedges.
  • Place on cookie sheet and bake in oven at 350 until top is bubbly, about 10 minutes.
  • You can broil them, but then you will have to watch them carefully.
  • These can be frozen uncooked- just put the topping on the english muffin and freeze in an airtight container.

I got this recipe from my mom, but I don't remember where she got it. It's one of the simplest, yummiest appetizers and is a hit every time. Another plus, is I've also been able to adapt the recipe to fit my IBS diet and it still tastes very good imo. :D This recipe is the original; to adapt it for my IBS I replaced the Miracle Whip with light Miracle Whip or a vegan mayo, the cheese with a non-dairy sub like soy cheese, and the bacon bits are usually fine, but I can cook up some turkey bacon until very crisp and let cool before adding them. Be careful when biting into these, they can be really hot. Many people have burnt their mouths devouring these tasty appetizers before my mom can plate them!

6 English muffins, split (1 package)
1 cup Miracle Whip
1 cup green onion, chopped
1 cup cheddar cheese, shredded
1 cup bacon bits (made with real bacon such as Hormel brand)
Tabasco sauce, to taste

Steps:

  • After splitting the English Muffins, cut them into wedges so each muffin makes 8 wedges.
  • Mix the remaining ingredients in a bowl. (Note: My mom prefers 5 or more drops of Tabasco, but use as little or as much as you like.).
  • Spread each wedge of muffin with some of the mixture.
  • Lay wedges on foil-covered cookie sheet and place under broiler. Boil until hot and cheese is melted (approximately 15 mins).

Steps:

  • In a large bowl, combine the crab, celery, mayonnaise, pimientos, pecans and onion. Spread over English muffin halves. Broil 3-4 in. from the heat for 5 minutes or until bubbly. Top with cheese slices; broil 1-2 minutes longer or until cheese is melted.
