1 cup vegetable oil for frying, or as needed
4 (3.5 inch square) wonton wrappers, cut into strips
1 (16 ounce) package pizza dough
6 ounces cream cheese, softened
6 tablespoons chopped green onions, divided
¼ cup shredded Parmesan cheese, divided
4 ounces frozen crab meat, thawed
4 ounces shredded mozzarella cheese
2 tablespoons sweet chili sauce

Steps:

  • Heat vegetable oil in a deep skillet over medium-high heat; fry wonton strips until crisp, 2 to 4 minutes. Transfer to a paper towel-lined plate to drain.
  • Preheat oven to 450 degrees F (230 degrees C). Spread pizza dough onto a baking sheet.
  • Bake in the preheated oven until slightly brown, about 7 minutes.
  • Mix cream cheese, 1/4 cup green onions, 2 tablespoons Parmesan cheese, and crab together in a bowl; spread onto the pizza crust. Top with mozzarella cheese, remaining Parmesan cheese, fried wonton strips, and remaining green onions.
  • Bake in the preheated oven until cheese is browned and melted, about 8 minutes. Drizzle sweet chile sauce over top.

1 quart neutral oil
1 cup shredded mozzarella
One 4-ounce block cream cheese, softened
1/2 tablespoon garlic salt
Pinch crushed red pepper flakes
All-purpose flour, for dusting
One 13.8-ounce tube prepared pizza dough
1/2 cup cooked crabmeat
Fresh parsley, for garnish

Steps:

  • Pour the oil into a large heavy-bottomed pot fitted with a deep-frying thermometer.
  • Combine the mozzarella, cream cheese, garlic salt and crushed red pepper in a food processor. Pulse until a thick paste is formed, about 30 seconds. Set aside.
  • On a lightly floured surface, roll the pizza dough to form a 16-by-12-inch rectangle. Use a 3-inch round cutter to cut out 10 to 12 rounds of dough. Use your fingertips to gently stretch each round of dough into a 4-inch circle. Top a round of dough (slightly off-center) with 1 heaping teaspoon of the cheese mixture and 1 teaspoon crabmeat. Fold the dough in half over the filling to create a half-moon. Press the edges together to seal the pocket and crimp with the prongs of a fork. (See Cook's Note.) Repeat this process with the remaining circles and filling.
  • Preheat the vegetable oil to 350 degrees F and line a plate with paper towels.
  • Working in batches, carefully lay the pizza pockets in the hot oil. Fry until deeply golden brown, 1 to 1 1/2 minute on each side. Remove from the hot oil to the lined plate to cool slightly.
  • Garnish with fresh parsley.

"THE SOFTIE" SOFT-SHELL CRAB PIZZA

1 1/2 cups olive oil
2 leeks (white and light green parts), halved and then sliced lengthwise and well rinsed (see Cook's Notes)
1 garlic bulb, cloves removed and thinly sliced
8 ounces pizza dough, separated into 2 balls and at room temperature (see Cook's Notes)
All-purpose flour, for dusting
Semolina flour, for dusting
2 soft-shell crabs (or 4 if very small), cleaned (see Cook's Notes)
1/2 teaspoon seafood seasoning, preferably Old Bay
3/4 cup thinly shaved Parmigiano-Reggiano
2 tablespoons freshly chopped flat-leaf Italian parsley
1 lemon, sliced into 8 wedges

Steps:

  • Heat a large saute pan over medium heat; add 1/4 cup olive oil. Place the leeks in the pan and cook slowly, stirring to prevent browning, until soft and wilted, about 10 minutes. Set aside.
  • Meanwhile, bring the remaining 1 1/4 cups olive oil to a simmer in a small saucepot; add the garlic. Reduce heat to low and cook until garlic is soft but still white, an additional 10 to 15 minutes. Set aside.
  • Preheat the oven to its highest temperature with a pizza stone inside; at least 450 degrees F.
  • Once the dough is at room temperature, it should be soft and pliable and shouldn't shrink back when you press it. Flatten a ball into a disc. (It is okay if the flattened disc isn't perfectly round at this point.) Place disc on a well-floured work surface and stretch the dough by hand into an 8- to 9-inch round that is 1/4-inch-thick, not pressing out the air bubbles. Place on a pizza peel or dry cutting board layered with a sprinkle of semolina flour.
  • To assemble the pizza, spread the garlic oil evenly over the dough with a 1-ounce ladle. Add 3/4 cup leeks over the garlic oil and spread evenly. Place a soft-shell crab in the center of the pizza. Transfer the pizza to the oven using a smooth, quick motion to slide the pizza from the peel or cutting board to the stone. Bake until crust is browned evenly, crab is crispy and juices are bubbling, 9 to 16 minutes. Remove from the stone with a pizza peel. Cut into slices and garnish with a sprinkle of seafood seasoning, fresh shaved Parmesan and parsley and serve with lemon wedges. Repeat with remaining ingredients to make 1 more pizza. Enjoy.

2 (8 ounce) cans crescent rolls
1/2 cup Miracle Whip
2 teaspoons lemon juice
1/8 teaspoon pepper
2 cups sharp cheddar cheese, shredded
6 ounces imitation crabmeat, chopped
1/3 cup green onion, slices
1 tablespoon chopped parsley

Steps:

  • Unroll dough into 4 rectangles.
  • Place in a 15x10 pan; pressing onto bottom and halfway up sides of pan to form a crust.
  • Bake at 375 degrees for 10 minutes.
  • Combine miracle whip, lemon juice and pepper; mix well.
  • Add cheese, crabmeat, onion slices and parsley; mix lightly.
  • Spread over crust.
  • Bake another 12- 15 minutes at 375 degrees or until cheese has melted.
  • Let stand 5 minutes; cut into squares.

I adapted this rich treat from a friend's seafood enchilada dish. The thick creamy cheese sauce is an ideal match for the scallops, shrimp and imitation crabmeat. Plus, it's special enough for guests and can be made in a hurry.

1 package (6-1/2 ounces) pizza crust mix
3 tablespoons butter, divided
2 tablespoons all-purpose flour
3/4 cup whole milk
1/4 cup chicken broth
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded Swiss cheese
1/4 pound uncooked bay scallops, chopped
1/4 pound peeled and deveined cooked shrimp, chopped
1/4 pound imitation crabmeat, chopped
2 cups shredded part-skim mozzarella cheese
Paprika, optional

Steps:

  • Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat., In a large skillet, melt the remaining butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce. Remove from the heat., Spread remaining cheese sauce over the crust. Top with the seafood mixture; sprinkle with mozzarella cheese and paprika if desired. Bake for 13-16 minutes or until golden brown. Let stand for 5-10 minutes before cutting.

I was just looking for a way to use up some imitation crab meat I had in the fridge. I didn't want to give my family a cold salad, they love cheese & pizza so I came up with this recipe. They even wanted seconds.

2 tsp lemon juice
1/8 tsp pepper
1/4 tsp dry dill
1 tsp dry minced onion
1 Tbsp dried parsley
6-8 oz imitation crab meat chopped up
1 c shredded cheddar cheese
4 english muffins, split in half

Steps:

  • 1. Combine all dressing ingredients.
  • 2. Mix in the chopped up crab & cheese.
  • 3. Chill for about an hour.
  • 4. Spoon onto English muffins spreading to edges.
  • 5. Bake at 350' until cheese melts & muffins are slightly golden.
