1 1/4 lb Brussels sprouts (1 to 1 1/2 inch), cut in half (5 cups)*
6 slices bacon, cut into 1-inch pieces
1 tablespoon butter or margarine
1 large onion, finely chopped (1 cup)
1 tablespoon all-purpose flour
1/4 teaspoon dried thyme leaves
1/4 teaspoon pepper
3/4 cup half-and-half
2 teaspoons chicken bouillon granules
1/3 cup shredded Parmesan cheese
1/2 cup shredded Cheddar cheese

Steps:

  • Heat oven to 350°F. In 3-quart saucepan, place Brussels sprouts; add enough water just to cover. Heat to boiling; boil 6 to 8 minutes or until crisp-tender. Drain and return to saucepan; set aside.
  • Meanwhile, in 10-inch skillet, cook bacon over medium heat, stirring occasionally, until crisp. Remove bacon with slotted spoon; drain on paper towels and set aside. Drain all but 1 tablespoon bacon fat from skillet.
  • Add butter to bacon fat in skillet. Heat over medium-high heat until butter is melted. Add onion; cook 2 to 3 minutes, stirring frequently, until crisp-tender. Add flour, thyme and pepper; cook and stir until well blended. Gradually stir in half-and-half and bouillon granules. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; stir in Parmesan cheese.
  • Pour sauce over Brussels sprouts in saucepan; mix gently. Spoon into 2-quart casserole. Bake uncovered 25 to 30 minutes, sprinkling with crumbled bacon and Cheddar cheese for last 10 minutes of baking, until hot and bubbly.

1 1/2 cups shredded Swiss cheese (6 oz)

Steps:

  • Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 5-quart Dutch oven, heat broth to boiling over high heat. Add Brussels sprouts; heat liquid back to boiling. Cook 2 minutes. Use slotted spoon to transfer sprouts to baking dish. Reserve 1 1/2 cups broth.
  • In 2-quart saucepan, melt 1/4 cup butter over medium heat. Add flour; cook 1 minute, stirring constantly with whisk. 4 slices bacon
1 large onion, finely chopped
1 garlic clove, minced
2 lbs Brussels sprouts, fresh (about 7 cups, halved)
1 1/2 cups milk
1 cup chicken broth
1/4 cup unsalted butter (4 tablespoons)
5 tablespoons flour
3/4 cup parmesan cheese, freshly grated
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon dried thyme
fresh ground black pepper, to taste
1 1/2 cups sharp white cheddar cheese, grated
paprika, for garnish (optional)

Steps:

  • Heat a large skillet and crisp-cook the bacon. Transfer it to a plate and set it aside. Pour off all but 2 tablespoons of bacon fat from the pan. Add the onion to the pan and saute over medium heat for 6 to 7 minutes; add the garlic for the last minute. Scrape the onions and garlic into a large, shallow casserole and spread them around evenly. Set aside.
  • Trim the Brussels sprouts, then cut them in half (or quarters, if very large) lengthwise. Bring a large soup pot of well-salted water to a rolling boil. Add the Brussels sprouts. Return to a boil and cook for 5 minutes. Drain immediately in a colander for 5 minutes. Transfer to the casserole, spreading the sprouts evenly in the dish. Set aside. Heat the oven to 375°F.
  • Combine the milk and chicken broth in a small saucepan. Bring to a simmer, then remove from the heat.
  • Meanwhile, melt the butter in a large saucepan. Add the flour and cook, stirring over medium heat, for about 1 minute, until the flour is light golden brown. Whisk in half of the hot milk and broth. Heat and whisk for a minute or so, until thick. Add the remaining liquid and cook for about 5 minutes, whisking frequently.
  • Whisk in the Parmesan cheese, mustard, salt, thyme, and pepper. Pour the sauce evenly over the Brussels sprouts. Mince the bacon and sprinkle it over the sauce. Sprinkle evenly with the Cheddar cheese and dust lightly with paprika, if desired.

1/4 cup butter
1 onion, chopped
1/4 teaspoon dried thyme (rub between fingers to release flavor)
1 -2 tablespoon fresh minced garlic (optional or to taste)
1/4 cup flour
2 cups half-and-half cream (I use 1-3/4 cups half and half and 1/4 cup whipping cream, unwhipped)
1 1/2-2 cups gruyere cheese (or similar cheese like Swiss or Gouda, but it is better using the gruyere cheese)
seasoning salt (can use regular salt)
pepper
2 cups fresh breadcrumbs
1/2 cup gruyere cheese, shredded (can use Gouda also)
3 tablespoons butter, melted

Steps:

  • Set oven to 350 degrees.
  • Grease a baking dish large enough to hold the mixture (about an 8-cup).
  • To make the topping: stir together the bread crumbs and melted butter, add in the cheese, mix well until combined; set aside.
  • Wash and trim the sprouts and cut an "X" in the bottom.
  • Cook the sprouts in boiling water for about 7-8 minutes, or until fairly tender.
  • Drain and plunge into ice water or very cold water (squeeze out any excess water with hands).

1 -1 1/2 lb fresh Brussels sprout (roughly all same size otherwise cut in half)
2 cups seasoned bread crumbs
2 cups grated parmesan cheese
salt and pepper

Steps:

  • Wash sprouts off, peel first couple leaves off outside, cut small piece off bottoms and then lightly cut an X into the bottom of each sprout.
  • Bring a pot of salted water to a boil and blanch the sprouts until they are almost done. Then put them into an ice bath until they are cold(this will stop the cooking process and prevent them getting mushy) . Drain them and set aside.
  • When ready for dinner, combine bread crumbs, parmesan cheese, and seasonings. Beat eggs in a small bowl with a little water.
  • Heat a large skillet over medium heat with some olive oil.
  • Dunk drained sprouts in egg, let as much drain off as possible, then toss in the bread crumb/cheese mixture, pressing the crumbs lightly onto the sprouts.
  • Pan cook the sprouts in the oil till golden brown and delicious.

  • Position racks in upper and lower thirds of oven; preheat to 475°. Spread pancetta on a rimmed baking sheet and roast, tossing once halfway through, until lightly browned and fat is beginning to render, 6-8 minutes.
  • Whisk cream and mustard in a large glass measuring cup. Remove gratin from oven, carefully pour in cream mixture, and sprinkle cheese over.
  • Reduce oven temperature to 375°. Return gratin to bottom rack, then place sheet with walnuts on top rack. Roast, 8-10 minutes, and cream is thick, vigorously bubbling, and browned around the edges, 15-20 minutes. Let gratin cool 10 minutes.

2 lb. Brussels sprouts, trimmed, halved
3 Tbsp. butter
3 Tbsp. flour
3 cups milk
2 cups KRAFT Shredded Cheddar Cheese
1/8 tsp. ground nutmeg
1/2 cup finely crushed round buttery crackers (about 12 crackers)

Steps:

  • Preheat oven to 350°F. Cook Brussels sprouts in boiling salted water 6 min. or until tender. Meanwhile, melt butter in large saucepan on medium heat. Stir in flour with wire whisk. Gradually add milk, stirring until well blended after each addition. Bring to boil, stirring constantly. Reduce heat to low; simmer 3 to 5 min. or until thickened, stirring constantly. Remove from heat. Stir in cheese and nutmeg.
  • Drain Brussels sprouts. Add to cheese sauce; mix lightly. Spoon into greased 13x9-inch baking dish; sprinkle with cracker crumbs.
  • Bake 35 to 40 min. or until top is golden brown.

15 Brussels sprouts, halved lengthwise
3 tablespoons olive oil
3 garlic cloves, smashed with the flat of a knife
1 cup fresh parmesan cheese
1 dash sea salt
1 dash black pepper

Steps:

  • Put olive oil in a medium skillet (over medium-high heat).
  • Reduce heat to medium, add smashed garlic and cook until lightly browned.
  • Add sprouts cut side down, cover, and cook without stirring on medium-low heat 10-15 minutes or until tender when pierced with a fork.
  • Top with freshly grated Parmesan and salt & pepper.

This recipe I received from an elderly lady who, with her daughters, catered homecooked food for large parties. My 11yr old daughter fell in love with these and I was able to get the recipe because of this.

3 (8 ounce) bags frozen Brussels sprouts
1 cup sugar
1 medium onion
1 (4 ounce) jar diced pimentos
1 (8 ounce) package mushrooms
1/2 cup butter
2 cups shredded mild cheddar cheese
2 cups shredded sharp cheddar cheese (this is more cheese than the original recipe, but my family LOVES cheese!)

Steps:

  • Fill large pan with water and stir in sugar. Bring to boil. Add brussel sprouts. (the sugar takes the bitterness out of the brussel sprouts.) Cook until brussel sprouts are tender when stuck with fork. Drain and put into large casserole dish. (I use one that measures 9 x 13).
  • Dice onion and slice mushrooms. Place in large skillet with butter. Saute until onion and mushrooms are both tender. Dump (with the butter) onto the brussel sprouts.
  • Add pimentos to brussel sprouts. Then add about half of both cheeses. Toss to evenly mix ingredients. Spread evenly through dish. Sprinkle with remaining cheese. Cover with aluminum foil and bake at 350 degrees for about 40 minutes or until cheese is throughly melted.
