1 small onion, finely chopped

3 cups reduced-sodium chicken broth

1 package (8 ounces) Velveeta, cubed
1-1/2 cups shredded extra-sharp cheddar cheese
1 cup shredded Parmesan cheese
Additional shredded extra-sharp cheddar cheese

Steps:

  • In a small skillet, heat butter over medium-high heat. Add onion; cook and stir 3-4 minutes or until tender. Transfer to a 3- or 4-qt. slow cooker. Add broccoli, broth, milk and pepper., Cook, covered, on low 3-4 hours or until broccoli is tender. Stir in process cheese until melted. Add shredded cheeses; stir until melted. Just before serving, stir soup to combine. Top servings with additional cheddar cheese.

3 cups fresh broccoli florets
3 cups fresh cauliflower florets
3 celery ribs, sliced
1 small vidalia onion, chopped fine
2 cups water (or vegetable stock is fine too)
3 tablespoons butter
3 tablespoons flour
2 1/3 cups milk
1 lb process cheese, cubed (Velveeta)

Steps:

  • In a large saucepan, combine the broccoli, cauliflower, celery, onion, and water (or veggie) stock.
  • Bring to a boil then reduce heat and cover to simmer for 10-12 minutes or until vegetables are tender.
  • While vegetables are simmering, in a small saucepan, melt butter.
  • Stir the flour into the butter until smooth.
  • Gradually stir in milk to the flour mixture and bring this to a boil then cook and stir for 2 minutes or until thickened.
  • Reduce heat to the milk mixture and add the cheese then cook and stir until cheese is melted.
  • Drain vegetables and place back into their saucepan.
  • Add cheese sauce to the vegetables and heat through.

1 medium yellow onion, roughly chopped

10 tablespoons salted butter, divided
3 cups chicken broth
2 packets Swanson® Flavor Boost™ Concentrated Chicken Broth

  • Combine onion and garlic in a food processor; pulse until minced.

375g leeks, thinly sliced
400g potatoes, peeled and cut into medium chunks
2 garlic cloves, chopped
2 tsp vegetable bouillon powder
340g broccoli, roughly chopped
250ml milk
165g plain wholemeal flour
1 tsp baking powder
20g parmesan or vegetarian alternative, finely grated
1 tsp mustard powder
100ml milk
½ tbsp olive oil
65g soft goat's cheese
4 tomatoes, sliced, to serve

Steps:

  • Tip the leeks, potatoes and garlic into a large pan with the bouillon. Pour over 800ml boiling water, stir well, cover and simmer for 15 mins.
  • Add the broccoli to the pan, then cover and cook for 5 mins more until just tender. Blitz with a hand blender until smooth, then pour in the milk and blitz again. Add a little stock if the soup looks too thick.
  • To make the scones, heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Put the flour and baking powder in a bowl with the all but 1 tbsp of the parmesan and all the mustard powder. Gradually add the milk and oil, stirring with a cutlery knife until the mixture comes together. Shape into a log, about 16cm long and 6cm wide, and press the remaining parmesan on top. Cut in half along the length, then halve each of those pieces again to create four wedge-like scones. Arrange the scones on the tray and bake for 10-12 mins until golden.
  • If you're following the Healthy Diet Plan, reserve two of the scones for another day. Will keep covered for up to three days. Halve the remaining two and top with half the goat's cheese and half the tomato. Ladle half the soup into two bowls and serve with the scones. The remaining soup will keep chilled for up to three days.

1 head broccoli, florets roasted or steamed

Steps:

  • In a small bowl, soak the cashews in water for 1 hour.
  • In a large soup pot, heat the olive oil over medium heat. Add the onion and stir until translucent.

1/8 teaspoon ground nutmeg
1 cup shredded reduced-fat cheddar cheese

Steps:

  • In a saucepan, bring 1 in. of water to a boil. Place broccoli in a steamer basket over water. Cover and steam for 5-8 minutes or until crisp-tender. Meanwhile, in another saucepan, combine the cornstarch, milk and broth until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened., Stir in the butter, sherry if desired, salt, pepper and nutmeg. Reduce heat. Add cheese and broccoli; heat just until cheese is melted. Sprinkle with paprika.

Very good on a cold evening. Serve with garlic bread or crusty rolls. If there are any leftovers, you may want to add extra chicken broth as the noodles will thicken the liquid.

2 tablespoons olive oil
1/2-3/4 cup chopped onion
6 (14 1/2 ounce) cans chicken broth or 6 (14 1/2 ounce) cans vegetable broth
8 ounces fine egg noodles
2 (10 ounce) packages frozen chopped broccoli
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon fresh ground pepper
6 cups milk (I use lowfat milk)
16 ounces American cheese

Steps:

  • Heat olive oil in large saucepan.
  • Add onion and saute over medium heat till onions are golden.
  • Add chicken (or vegetable for vegetarians) broth and bring to a boil.
  • Add salt and noodles.
  • Cook uncovered for about 3 minutes, stirring occasionally.
  • Stir in broccoli and garlic powder and cook for another 4 minutes.
  • Add milk, cheese and pepper stirring constantly until the cheese is melted.

2 tablespoons chicken bouillon granules
2 bunches broccoli, chopped
½ onion, minced
2 cups milk
½ cup margarine
5 tablespoons all-purpose flour
1 (8 ounce) package cream cheese, softened
1 cup shredded Cheddar cheese

Steps:

  • Bring water and chicken bouillon granules to a boil in a pot. Add broccoli and onion; cook at a boil until tender, 10 to 12 minutes.
  • Combine milk, margarine, flour, and cream cheese in a large pot over medium heat; cook and stir until the margarine melts and the mixture begins to thicken, about 5 minutes.
  • Stir Cheddar cheese into the milk mixture; cook and stir until the Cheddar melts completely.
  • Pour the broccoli mixture into the cheese mixture in the large pot; stir well.

Add 2 cups of cooked rice for an even hardier soup. You can also substitute real broth for the water and bullion. I've done it both ways and can't really tell the difference, so I use low-sodium boullion cubes with great results. Great on a cool fall day. So yummy!

12 cups water
8 chicken bouillon cubes
2 lbs fresh broccoli, rough chopped
2 lbs boneless skinless chicken breasts
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/2 cup butter
1/2 cup flour
1 cup light cream
2 cups cheddar cheese, shredded

Steps:

  • Put water, bullion, broccoli, chicken (whole, not cut up), salt, and pepper in large stock pot. Bring to a boil. Turn down to medium and simmer 45 minutes.
  • Take out chicken breast set aside to cool slightly.
  • Melt butter and stir in four. Slowly stir mixture into soup and cook until the soup thickens.
  • Cut up chicken and add back to pot.
  • Add cream and cheese and stir until combined and cheese melts.
