Steps:
- Cook macaroni according to package directions, adding green pepper or peas during the last 3 minutes of cooking; drain. Cover and keep warm.
- Meanwhile, for sauce, melt butter over medium heat in a large skillet. Cook onion in hot butter for 4 to 5 minutes or until onion is tender. Stir in flour, salt, and black pepper. Add milk all at once. Whisk constantly until thick and bubbly. Cook, whisking constantly, for 2 more minutes. Reduce heat to low.
- Add American & cheddar cheese blend and mozzarella cheese, stirring until sauce is smooth and cheese is melted. Stir the sauce and bison pepperoni into the pasta. Heat through.

These pizza turnovers with spicy bison sausage with pepperoni seasoning are easy to make for a great snack or weeknight dinner.

Steps:
- Preheat oven to 400 degrees F. Line a baking sheet with foil; grease foil. Set baking sheet aside. Unroll pizza dough onto a lightly floured surface. Roll dough into a 15-inch square. Cut dough into nine 5-inch squares.
- For filling, combine bison pepperoni, mozzarella cheese, the 1/2 cup pizza sauce, and the green onions in a medium bowl. Place about 3 tablespoons of the filling on each dough square. Fold one corner of each square over filling to the opposite corner, stretching dough as needed to cover the filling. Seal edges and prick tops with a fork.
- Place turnovers on the prepared baking sheet. Brush lightly with milk and sprinkle with Parmesan cheese. Bake for 15 to 18 minutes or until golden brown. Serve with additional warm pizza sauce.

- Combine bread crumbs, onion, ginger, mustard, salt, and curry powder together in a bowl; add ground bison, oats, and eggs and mix well. Form bison mixture into 4 patties.
- Heat olive oil in a skillet over medium heat; cook patties until evenly browned, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Transfer burgers to a plate to cool completely.
- Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain and transfer pasta to a 1 1/2-quart casserole dish.
- Preheat oven to 375 degrees F (190 degrees C).
- Spread tomatoes and tomato sauce over pasta; sprinkle 1/2 the Cheddar cheese over tomatoes. Arrange burgers on top of tomatoes and sprinkle the remaining cheese over burgers and tomatoes.
- Bake in the preheated oven until cheese is melted and tomato sauce is bubbling, about 30 minutes.
