BAKED STUFFED COD
This foolproof recipe for moist and flaky baked cod fillets is topped with a mixture of buttered fresh breadcrumbs, garlic, and chopped parsley.

Steps:
- Preheat the oven to 400°F and thoroughly coat a baking dish with nonstick spray and add the cod fillets.
- Try to choose a dish that will accommodate your fish in a single layer with little or no room left over. If your fillets have thin portions (as most do), it's a good idea to overlap them a bit to keep the thickness somewhat uniform.
- Drizzle the fish with 1 tablespoon each of the lemon juice and olive oil, then season lightly with salt and pepper.
- In a separate skillet, heat the remaining olive oil together with the butter over medium heat.
- Add the garlic and crushed red pepper and sauté just until garlic begins to turn golden (do not brown).
- Remove from the heat, stir in the remaining lemon juice, breadcrumbs and parsley.
- Spread the crumb mixture evenly over the fish and bake for 12 to 14 minutes, or until the fish flakes easily.
- Serve immediately (this dish is served casserole-style - you don't have to portion out individual fillets).

CHEESY BAKED FISH
Steps:
- Preheat oven to 400 degrees F (200 degrees C). Place butter in a 9x13-inch casserole dish.
- Place casserole dish in the preheating oven until butter is melted, about 5 minutes.
- Spread onion slices in the bottom of the casserole dish. Place cod skin-side down over onion. Sprinkle seasoned salt evenly on top.
- Mix mayonnaise, Parmesan cheese, provolone cheese, mozzarella cheese, and fresh parsley together in a bowl. Spread over cod.
- Bake in the preheated oven until cod flakes easily with a fork, 20 to 25 minutes.

- Heat oven to 400ºF.
- Heat dressing in large skillet on medium heat. Add onions; cook 10 min. or until tender, stirring occasionally. Meanwhile, cook carrots in boiling water in large saucepan 2 to 3 min. or until crisp-tender; drain.
- Add carrots to onions in skillet; cook 2 to 3 min. or until lightly browned, stirring frequently. Spoon into 4 individual baking dishes sprayed with cooking spray; top with fish.

- 1. Preheat oven to 400*. Melt butter on medium heat in a 9" saute pan. Add vegetables & cook until soft, about 3-5 minutes.
- 2. Add flour and stir on medium heat until light blonde in color, about 4-5 minutes.
- 3. Stir in heavy cream, then remove from heat.
- 4. In a separate mixing bowl, combine egg yolks, mustard, cayenne pepper, chives and seasoning.
- 5. Slowly add small amounts of vegetable roux to egg mixture, stirring constantly until well incorporated. Mix in crab meat, season with salt and pepper and keep cold.
- 6. Make a small cut into the center of each piece of fish along the length, but don't cut all the way through.
- 7. Season the pieces of fish with salt & pepper. Place 2 tablespoons of filling into the cut on each fish.
- 8. Place on a baking sheet lined with parchment paper and bake 10-12 minutes.

- Preheat oven to 400°. Scrub and pierce potatoes. Rub with oil if desired. Bake until tender, 50-75 minutes. When cool enough to handle, cut each potato in half lengthwise.
