HAM AND CHEESE OMELET CASSEROLE
Delicious one dish meal. Breakfast for breakfast, for lunch or for dinner! Serve hot with hash browns if desired.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat eggs in a large bowl, making sure that they are mixed very well and have a 'frothy' top. Add the milk, salt and pepper. Mix well. Stir in ham, then add cheese pieces and stir well. Pour mixture into a well greased 4 quart casserole dish and bake in the preheated oven for 50 to 60 minutes or until top is lightly browned.

- Heat oven to 325°F. Spray 12x8-inch (2-quart) glass baking dish with cooking spray. In 8-inch skillet, melt butter over medium heat. Add bell pepper and onion; cook 2 to 3 minutes, stirring occasionally, until tender.
- In large bowl, beat eggs, sour cream, salt and pepper with wire whisk until well blended. Stir in bell pepper mixture and cheese. Pour into baking dish.
- Bake uncovered 20 to 25 minutes or until eggs are set. Cut omelet into squares to serve.

- Line the bottom and sides of a greased 15x10x1-in. baking pan with parchment; grease the paper and set aside. , In a small bowl, beat cream cheese and milk until smooth. Add flour and salt; mix until combined. In a large bowl, whisk eggs until blended. Add cream cheese mixture; mix well. Pour into prepared pan., Bake at 375° until eggs are puffed and set, 30-35 minutes. Remove from the oven. Immediately spread with mustard and sprinkle with 1 cup cheese. This is wonderful to serve at a brunch, the Tabasco is only optional I add it in for an extra boost of flavor -- you may use cooked crumbled sausage meat in place of the ham, feel free to add in frozen broccoli, olives, jalapeno pepper or whatever you wish --- you are going to *love* this! :)

- Set oven to 375 degrees F.
- Butter a 13 x 9-inch baking dish.
- Sprinkle 1-1/2 cups cheddar cheese, mushrooms and ham on the bottom of the baking dish; set aside.
- Melt butter in a skillet over medium heat; add in onion and green bell pepper and cook until softened (about 3-4 minutes) then sprinkle the mixture on top of the ham in the baking dish.
- In a bowl whisk the eggs with baking powder cream, salt, pepper and Tabasco until well blended; pour over the ingredients in the dish (do not stir).
- Bake uncovered for 25-30 minutes or until the eggs are no longer runny and the center is set and top is slightly browned.
- Sprinkle top of the casserole with 1-1/2 cups cheddar cheese, you may stick the pan back in the oven for a couple of minutes to melt the cheese or the cheese will still melt is sprinkled on right our of the oven.
- Cool then cut into squares.

- Preheat oven to 450 degrees.
- Beat eggs and milk until fluffy.
- Add flour, salt and pepper and beat or whisk until smooth.
- Pour into a buttered or greased 9 x 13 baking dish or pan.
- Bake for 10 - 15 minutes or until eggs are just about set (Keep an eye on them at the 6 minute mark -- depending on your oven, they could set that fast!).
- Sprinkle with chopped ham or lay slices of ham evenly on top.
- Sprinkle with cheese.
- Bake for about 5 minutes more or until cheese is melted.
- Starting at short side, roll up omelet while still in pan.
- Place seam side down on serving dish.
- Cut into slices.
