I had this at a party at a colleague's house. I've loved cheese grits for years, but these are by far the best I've ever had.

Number Of Ingredients 8

1 quart milk
½ cup butter
1 cup uncooked grits
1 teaspoon salt
½ teaspoon white pepper
1 cup shredded Cheddar cheese
⅓ cup butter
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Bring the milk to a boil in a pot over medium heat. Melt 1/2 cup butter in the boiling milk. Gradually mix in the grits, and cook 5 minutes, stirring constantly. Remove from heat, and season with salt and pepper. Beat with a whisk or electric mixer until smooth. Mix in the Cheddar cheese and 1/3 cup butter. Transfer to the prepared baking dish, and sprinkle with Parmesan cheese.
  • Bake 1 hour in the preheated oven, until firm.

4 cups water
1 cup quick-cooking grits
2 tablespoons butter
½ teaspoon garlic powder
¼ teaspoon ground red pepper (cayenne)
2 eggs
8 ounces VELVEETA®, cut into 1/2-inch cubes

Steps:

  • Heat oven to 350 degrees F.
  • Bring water to boil in medium saucepan on medium-high heat. Gradually stir in grits; cook on low heat 5 min., stirring occasionally. Remove from heat. Add butter, garlic powder and pepper; stir until butter is completely melted and mixture is well blended.
  • Beat eggs in small bowl until blended. Add small amount of hot grits; mix well. Gradually add to remaining grits mixture in pan, stirring constantly until blended.
  • Pour into 8-inch square baking dish sprayed with cooking spray; top with VELVEETA.
  • Bake 40 min. Let stand 10 min. before serving.

1 1/2 teaspoons salt
1/4 teaspoon black pepper
4 tablespoons butter (or margarine)
1 1/2 cups sharp cheddar cheese (or medium cheddar)
1/2 cup half-and-half cream (or evaporated milk)
2 teaspoons garlic, minced
1/4 cup onion, FINELY chopped
4 -5 dashes Tabasco sauce (or red pepper sauce)
1 (4 ounce) can green chilies (optional)
2 eggs, well beaten

Steps:

  • Preheat oven to 350 degrees.
  • Butter or oil spray a 1-1/4 quart baking dish.
  • Prepare quick or instant grits to yield 4 cups cooked grits.
  • Remove pan from heat. Add salt,pepper, butter, cheese and milk and stir until cheese and butter have melted.
  • Add garlic, onion, hot sauce and optional green chilies and stir until mixed.
  • Fold in beaten eggs.
  • Pour into baking dish and bake 40-45 mins or until top has set and lightly puffed.
  • Let stand 5 minutes before serving.
