2 tablespoons olive oil
1 yellow onion, finely chopped
3 cloves garlic, thinly sliced
1 pinch Spice Islands® Crushed Red Pepper
1 teaspoon kosher salt
½ teaspoon Spice Islands® Oregano
1 (8 ounce) package curly kale, stemmed and torn into 2-inch pieces
1 (28 ounce) can crushed tomatoes
1 tablespoon balsamic vinegar
2 (10 ounce) packages Green Giant® Cauliflower Gnocchi
4 tablespoons finely grated Parmesan cheese, divided
6 ounces fresh mozzarella, torn into pieces

Steps:

  • Preheat oven to 450 degrees F.
  • Heat oil in a large skillet over medium heat. Add onion and cook, stirring often, until softened, about 4 minutes. Add garlic, crushed red pepper, salt, and oregano and cook, stirring throughout, 2 minutes. Add kale a handful at a time, stirring occasionally, until wilted, about 2 minutes. Stir in tomatoes and balsamic vinegar. Bring just to a boil; remove from heat.
  • Meanwhile, bring a large pot of generously salted water to a boil over high heat. Add gnocchi and cook until tender, about 2 minutes. Drain and add to tomato sauce mixture. Add 2 tablespoons Parmesan, stirring to combine, about 1 minute. Transfer to an 8x8-inch baking dish. Top with mozzarella and remaining Parmesan.
  • Bake until cheese is golden brown and mixture is bubbling, about 15 minutes.

Number Of Ingredients 10

1 pound Gnocchi (homemade or store-bought, my store-bought Gnocchi said cooked in 2 minutes)
1/4 cup + 2 tablespoons freshly grated Parmesan cheese
1 cup grated Fontal (or Gruyere) cheese
fresh thyme
WHITE SAUCE
1 tablespoon butter
1 cup milk (I used 2%)
1 tablespoon flour
pinch salt
dash of oregano, basil and pepper

Steps:

  • 1.Pre-heat oven to 425°, lightly oil an 8 x 6 inch baking dish. 2.In a large pot of boiling salted water add the Gnocchi, remove as soon as the Gnocchi float (no more than 30 seconds) and drain well. 3.In a medium pot over medium heat melt butter, then add flour and salt, combine with a whisk, add milk slowly and continue to stir until thickened (but not too thick, if it becomes too thick add a little extra milk), stir in oregano, basil and pepper. Remove from heat. Stir in half the Fontal (or Gruyere cheese) and ½ the Parmesan cheese, then gently add the Gnocchi. 4.Place in baking dish, sprinkle with remaining Fontal cheese and Parmesan cheese, top with fresh thyme if desired. Bake for 3-5 minutes then broil for another 3-5 minutes. Let sit a couple of minutes before serving. Enjoy!

1-16 oz. pkgs. gnocchi
10 oz. kale (optional)
3 cloves garlic, minced
2 T butter
2 T flour
1-1/2 c milk
2 oz. fontina cheese or sharp white cheddar, shredded (1/2 c)
1/2 c finely shredded Parmesan

Steps:

  • Preheat oven to 400. Grease 2 qt. Baking dish, set aside. In a 6 qt. pot cook gnocchi according to package directions. Drain. Meanwhile, in a saucepan, cook garlic in butter over medium heat for 1 minute. Stir in flour to combine. Whisk in milk; cook and stir until thick and bubbly. Stir in cheese. Pour over gnocchi mixture. Stir to coat. Transfer to prepared baking dish. Top with Parmesan. Bake 20 minutes until lightly brown and bubbly. Adding kale is optional-- just wash, stem and chop 6 cups and add to boiling pasta at the last minute and drain with pasta.
