1 pound ground beef
1 cup ketchup
1/3 cup prepared mustard
4 bacon strips, cooked and crumbled
2 tablespoons Worcestershire sauce
2/3 cup mayonnaise
2 tablespoons 2% milk
2 tablespoons dill pickle relish
1/4 teaspoon pepper
8 flour tortillas (8 inches)
1 cup shredded cheddar cheese
Optional toppings: Shredded lettuce and chopped tomatoes

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in ketchup, mustard, bacon and Worcestershire sauce; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 5-7 minutes, stirring occasionally., Meanwhile, in a small bowl, combine mayonnaise, milk, relish and pepper; set aside., Preheat griddle over medium heat. Sprinkle 4 tortillas with cheese; top with beef mixture and remaining tortillas. Place on griddle; cook until golden brown and cheese is melted, 1-2 minutes on each side. Serve with sauce and, if desired, lettuce and tomatoes.

8 ounces Pure Farmland® Simply Seasoned Plant-Based Protein Starters
2 tablespoons vegetable oil
1 small onion, diced
2 tablespoons Worcestershire sauce
Cooking spray
Salt and pepper
2 (10 inch) flour tortillas
2 cups shredded Cheddar cheese, divided
2 tablespoons Sliced dill pickles
⅓ cup mayonnaise
⅓ cup ketchup
2 tablespoons pickle juice
1 tablespoon yellow mustard
1 teaspoon Worcestershire sauce
Shredded lettuce
Sliced cherry tomatoes

Steps:

  • For the Quesadillas: Heat oil in a medium saute pan over medium-high heat. Add protein starters and cook until browned and cooked through, about 5 minutes. Remove and set aside.
  • To the same pan, add onion and cook until translucent, about 5 minutes more. Add reserved protein starters back to the pan, add Worcestershire sauce, mix to combine, and set aside.
  • Wipe out the pan, coat with nonstick spray, and heat over medium heat. Add 1 tortilla to pan. Top half the tortilla with 1/2 cup cheese and 1/2 of the cooked protein.
  • Top with pickle slices (if desired) and another 1/2 cup cheese. Fold in half and cook until cheese is melted and the quesadilla is golden brown on one side, about 2 minutes. Repeat with second tortilla and remaining ingredients.
  • For the Special Sauce: Mix all ingredients in a small bowl and season to taste.
  • Cut quesadillas into pieces and serve with lettuce, tomatoes, and sauce.

This is a recipe I had gotten from another website. Makes a simple and good quesadilla. Kids LOVED it.

6 flour tortillas, 8in
1 lb ground beef
1 cup mozzarella cheese, shredded
1 cup mild cheddar cheese, shredded
1 teaspoon seasoning salt
1/2 teaspoon ground black pepper
1 cup red onion, diced
cooking spray

Steps:

  • 1. In a skillet, cook the ground beef, adding seasoning salt and pepper, until completely cooked. Drain off the juices and place the beef in a medium-sized bowl.
  • 2. Pour the two cheeses and onions into the bowl with the cooked hamburger meat and thoroughly mix. Place an equal amount of the cheeseburger mixture on each tortilla.
  • 3. Fold each tortilla over to create a "half moon" and press down lightly.
  • 4. Coat the skillet or griddle with cooking spray and warm to a medium heat. Lightly brown each quesadilla for two to three minutes on each side until the cheese melts and the tortillas are crisp.
  • 5. Remove quesadillas from the pan and cut each into 3 wedges. Serve with your favorite cheeseburger fixings like lettuce, tomatoes and pickles.

  • 1. Substitute extra lean ground beef, chicken or turkey for the regular ground beef called for above to make these quesadillas leaner.

2 tablespoons Thousand Island dressing, divided
1 romaine lettuce heart, sliced

Steps:

  • Combine beef, diced onion, and garlic in a large skillet; cook and stir until beef is no longer pink, 5 to 8 minutes. Season with salt.
  • Transfer beef to a saucepan over low heat. Add 3/4 cup Cheddar cheese, mozzarella cheese, and milk. Cook and stir until cheese is melted, 3 to 5 minutes.

1 pound ground beef, cooked and drained
2 tablespoons finely diced red onion
1 1/2 tablespoons ketchup
1 tablespoon yellow mustard
1 1/2 tablespoons dill pickle relish
1/2 teaspoon salt
1/4 teaspoon black pepper
2 (10-inch) flour tortillas
4 slices American cheese
1 cup shredded cheddar cheese

Steps:

  • Preheat a grill over medium heat. Combine the ground beef, onion, ketchup, mustard, relish, salt and pepper in a medium-size bowl. Place the tortillas on a clean work surface. Spread half of meat mixture on half of each tortilla, leaving about a 1/2-inch border. Top the beef with 2 slices of American cheese and 1/2 cup cheddar. Fold the empty side of each tortilla over the filled side. Grill for 1 to 2 minutes on each side, or until the cheese has melted and light grill marks appear. Cut into wedges before serving. Tip: I like to use 3 (5 ounce) Bobby Chez Smashed Burgers instead of ground beef because they're such a great quality. Cook and crumble, as directed.

8 oz (227g) fresh crimini mushrooms
1 small onion, finely chopped
1/2 lb (225g) lean ground bee
1 clove garlic, minced
8 (8-inch) flour tortillas
2 cups cheddar cheese
1/2 small red onion, sliced
2 small Roma tomatoes, thinly sliced
1/4 cup (60 mL) dill pickles, sliced
1 cup (250 mL) shredded lettuce
1/2 cup (125 mL) Miracle Whip
2 tbsp (30 mL) ketchup
2 tbsp (30 mL) yellow mustard
2 tbsp (30 mL) relish
2 tbsp (30 mL) onion, finely diced
1 tsp (5 mL) white sugar

Steps:

  • Place mushrooms in a food processor fitted with a metal blade. Pulse until finely chopped.
  • In a large saucepan, brown mushrooms until moisture has been released, approximately 5 to 6 minutes. Add onion, beef and garlic, continuing to cook for 10 minutes or until beef is cooked through.
  • Meanwhile, combine all burger sauce ingredients in a bowl. Set aside.
  • Place one tortilla in the bottom of a dry grill pan. Sprinkle with cheese, red onion, tomatoes and dill pickles. Spoon on meat mixture. Top with the second tortilla. If your grill pan comes with a panini press, place preheated press on top of tortilla. If no press is available, carefully flip the quesadilla over using a spatula.
  • Remove from skillet and cut into wedges. Top with fresh shredded lettuce and burger sauce and serve.
