1 tablespoon butter, divided
1 tablespoon olive oil, divided
1 (8 ounce) package baby bella (cremini) mushrooms, sliced
½ teaspoon fresh thyme leaves
salt and freshly ground black pepper to taste
1 tablespoon soy sauce
1 bell pepper, sliced into strips
1 onion, sliced
2 slices provolone cheese, cut in half
2 hoagie rolls, split lengthwise
2 teaspoons Dijon mustard, or more to taste

Steps:

  • Preheat toaster oven to 300 degrees F (150 degrees C).
  • Heat 1 1/2 teaspoon butter and 1 1/2 teaspoon oil in a large nonstick skillet over medium-high heat until hot but not smoking, about 2 minutes. Toss in mushroom slices; season with thyme leaves, salt, and pepper. Cook and stir until mushrooms start to brown and are tender, about 5 minutes. Drizzle soy sauce over mushrooms, toss briefly and transfer to a bowl.
  • Wipe out skillet. Heat remaining butter and oil over medium-high heat until hot but not smoking, about 2 minutes. Toss in peppers and onions; season with salt and pepper. Cook and stir until soft, about 5 minutes. Transfer peppers and onions to the bowl with the cooked mushrooms; toss to combine.
  • Place rolls on toaster oven baking tray. Spread mustard over 2 halves. Place 1 piece provolone cheese over each half. Toast open-faced until cheese is melted, about 3 minutes.
  • Place the toasted rolls on plates and top with mushroom mixture.

2 tablespoons vegetable oil
Coarsely ground black pepper
2 pinches of red pepper flakes
2 boneless strip steaks (1/2 to 3/4 inch thick; 6 to 7 ounces each)
Kosher salt
2 sub rolls, split and toasted
1/2 small red onion, thinly sliced
1 tomato, sliced

Steps:

  • Put the contents of the salad kit in a medium bowl and toss to coat with the dressing; set aside.
  • Heat the vegetable oil in a large cast-iron skillet over medium-high heat. Combine 1 1/2 teaspoons black pepper and the red pepper flakes in a small bowl. Season the steaks with salt on both sides and sprinkle with the pepper mixture, pressing to adhere. Add the steaks to the skillet and cook 2 to 3 minutes per side for medium rare. Remove to a cutting board and let rest 5 minutes, then thinly slice against the grain.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat 1 tablespoon oil in a skillet over medium heat; cook and stir onion, green bell pepper, and red bell pepper until onion is translucent, 5 to 10 minutes. Add mushrooms; cook and stir until tender, 5 to 10 minutes. Transfer vegetable mixture to a bowl.

1 cup white wine vinegar
1 tablespoon kosher salt, plus more to taste
1 tablespoon whole black peppercorn
2 teaspoons red pepper flakes
4 medium carrots, cut into ½-inch (1.24 cm) wide sticks
2 cloves garlic, peeled and smashed
1 large shallot, thinly sliced
1 ¼ cups water
1 tablespoon vegetable oil
8 oz flank steak
freshly ground black pepper, to taste
2 tablespoons unsalted butter
4 slices sourdough bread
2 cups shredded sharp cheddar cheese

Steps:

  • In a medium saucepan, combine the vinegar, 1 tablespoon salt, the peppercorns, red pepper flakes, carrots, garlic, shallot, and water. Bring to a boil over high heat and cook, stirring to dissolve the salt, for 1 minute. Remove from the heat and let cool to room temperature, about 20 minutes. (If not using immediately, transfer the carrots and their brine to an airtight container and refrigerate for up to 2 weeks.)
  • Meanwhile, heat the vegetable oil in a large cast-iron skillet over high heat.
  • Season the steak with salt and pepper. Transfer to the skillet and cook, flipping halfway, until golden brown on the outside and medium-rare inside, 6-8 minutes total. Transfer to a cutting board and let rest for 10 minutes, then thinly slice against the grain.
  • Return the skillet to medium heat and add the butter. Once melted, add 2 slices of sourdough bread. Top each slice with ½ cup shredded cheddar, and cook, undisturbed, until the bread is golden brown and toasted on the bottom and the cheese begins to melt, about 3 minutes. Divide the sliced steak between each slice of bread in the skillet, then top each with ½ cup of the remaining cheese and another slice of bread. Flip the sandwiches, cover the pan with a lid, and cook until the cheese has fully melted and the other side of the bread is golden brown and toasted, 2-3 minutes more.

8 -10 sandwich steaks, broken into 1 inch wide strips (I use Philly Gourmet)
4 steak rolls
4 -6 slices white American cheese
4 slices provolone cheese
bell pepper, fried and canned (optional)
onion, fried (optional)

Steps:

  • Fry sandwich steaks in frying pan, stirring often.
  • When no longer pink, move to a plate lined with several paper towels.
  • Use more paper towels to press on them to help drain the excess grease.
  • On a baking sheet, lay steak or hoagie buns open flat.
  • Place sandwich steak strips on both halves.
  • Top sandwich steak with white American cheese and then provolone cheese.

1 large red onion, sliced 1/2 inch thick
2 baguettes, split
5 ounces fresh goat cheese, room temperature
1/4 cup grainy mustard
2 bunches arugula (about 10 ounces total), stems trimmed

Steps:

  • Heat grill to high; lightly oil grates. Season steaks with salt and pepper; grill 4 to 5 minutes per side for medium-rare. Transfer to a plate; let rest 10 minutes.
  • Meanwhile, grill onion until tender and charred, 4 to 5 minutes per side. Transfer to a plate; separate into rings. (To store, refrigerate steaks and onion, up to 1 day.)

1/4 cup mayonnaise
1/4 cup crumbled blue cheese
2 tablespoons sour cream
Freshly ground pepper
Vegetable oil, for brushing
1 1/2 pounds skirt steak, cut into 4 pieces
Kosher salt
4 ciabatta or other rustic rolls, split open

Steps:

  • Put the Peppadew peppers and mayonnaise in a food processor and pulse until roughly chopped. Transfer to a bowl; clean out the food processor. Add the blue cheese, sour cream and 1/2 teaspoon pepper to the processor and pulse until combined. (The spreads can be made 1 day ahead; cover and refrigerate.)
  • Preheat a grill to medium high and brush with vegetable oil. Sprinkle the steaks with 1 teaspoon salt and 1/4 teaspoon pepper. Grill until a thermometer inserted into the meat registers 135 degrees F for medium rare, about 4 minutes per side. Transfer the steaks to a cutting board and season with salt; let rest 10 minutes. 2 sweet onions
1 tablespoon olive oil
kosher salt

garlic powder
4 French rolls
8 slices provolone cheese
1/4 cup sliced pepperoncini pepper (optional)

Steps:

  • Slice meat with food processor as thin as possible. Cut onion into thin slices.
  • Heat oil in large skillet on medium-high. Add meat and onion and season immediately. Feel free to play with your spices. I like to use a seasoned salt and pepper like Krazy Jane's for this dish.
  • Cook meat until done, then taste meat and add more spices as needed. Remove from heat.
  • Meanwhile slice rolls partially open and put two slices of provolone on each. Toast in oven on 425 degrees until cheese is melted.
  • Pile meat and onions onto rolls and top with pepperoncini. Serve hot.
  • TO MAKE AHEAD: Undercook meat slightly and transfer to a crockpot on warm setting, not low or medium as you don't want the meat to overcook. Make the buns as directed and arrange on a platter nest the crockpot. It's okay if the buns aren't warm since the meat will reheat them.

4 kaiser rolls

  • Cut steak into strips.

  • Add steak and finish when onions are brown.

FAUX PHILLY CHEESE STEAK SANDWICHES

I made these wonderful tasting Faux Philly Cheese Steak sandwiches from a left over Roast Beef Dinner I had made a few day earlier. I call them Faux because I used Pot Roast instead of Rib Eye Steak. I did add a pound of Ground Round to the Roast Beef, because I thought it would not be enough. I had more than enough, & left overs for the next day. I used Provolone, Pepper Jack & Cheese Whiz, but use what you like. I added lots of peppers onions, & Mushrooms for the added crunch, & a hint of Worcestershire Sauce. Served on 12 inch Buns, but you can use smaller ones if desired. Remix Dinner.

1/3 cup(s) worcestershire sauce (more if desired)

2 large green bell peppers, cut into thick strips
2 large onions, sliced into thick rings and seperated

2 1/2 tablespoon(s) extra virgin olive oil (or canola or vegetable oil)
2 slice(s) provolone cheese cut in half for each sandwich
1 slice(s) pepper jack cheese cut in half for each sandwich
2-3 tablespoon(s) cheese whiz for each sandwich
5-6 - 12 inch kaiser buns for each sandwich (may use smaller buns if desired)

Steps:

  • Preheat oven to 350 degrees F. Just to melt cheese on sandwiches after they are made if desired. Toast bread if desired Optional. These are the 12 inch buns we used. The smaller ones will work fine also, I just cut one into a third for myself, hubby ate 2 of them.
  • Wash veggies(except mushrooms) and cut into desired pieces.
  • Cut Roast Beef slices into thirds before putting into food processor for easier processing.
  • Add sliced roast beef to food processor, and pulse until desired consistency is reached. I pulsed about 6 or 7 times.
  • I also added 1 pound of Ground Round to make sure I had enough. It depends on how many you are serving, & if they are hearty eaters.
  • Heat olive oil in large skillet then add in the veggies and ground round, cook until veggies are tender crisp or as desired & beef is no longer pink. Add in the spices and Worcestershire sauce, and stir to blend together.
  • Add the processed roast beef from the food processor to the skillet. Taste and add additional spices if desired.
  • Cut the buns with a serrated knife. Then cut the cheese slices in half and add half on the bottom of roll and the remainder on top after adding the beef to the rolls. Top each bun with 2-3 tablespoons of Cheese Whiz.
  • Place sandwiches in preheated 350 degree F. oven just long enough to melt the cheeses. CAN USE BROILER BUT WATCH VERY CLOSELY TO PREVENT BURNING. Then remove and serve while hot.

6 crusty rolls, such as a Portuguese, split
1/3 cup Dijon mustard
1 1/2 pounds grilled medium rare steak, thinly sliced
Kosher salt and freshly ground black pepper
12 ounces Saga blue cheese, cut into 12 slices
Roasted Shallots, recipe follows, roughly chopped
4 cups loosely packed watercress, washed and dried
8 shallots, unpeeled
1/4 cup extra-virgin olive oil
1 tablespoon kosher salt, plus additional for seasoning
Freshly ground black pepper

Steps:

  • Preheat the broiler. Spread the rolls out on a pan and toast on both sides.
  • Slather the bottom 1/2 of each roll with some of the mustard and top with slices of the steak, overlapping the slices slightly. Season, to taste, with salt and pepper. Cover each portion of meat with 2 slices of cheese. Broil until the cheese is lightly browned and melted, about 1 minute.
  • Transfer the open-faced sandwiches to the work surface. Top each sandwich with some of the roasted shallots and watercress. Slather the tops of the rolls with the remaining mustard and cover the sandwiches. Slice in 1/2 and serve.
  • Preheat the oven to 400 degrees F.
  • In a large bowl, toss the shallots with olive oil, 1 tablespoon salt, and pepper, to taste. Spread out on an aluminum foil-lined baking sheet. Bake until the shallots are very tender, about 40 minutes. Set aside to cool.
  • Slice off the tips of the shallots and discard. Gently squeeze the shallots from their skins and season with additional salt and pepper, to taste.

1/2 green bell pepper, cut into 1" strips (1/3 cup)
1 small onion, roughly chopped (1/3 cup)
1/2 cup thinly sliced mushrooms
4 - 6 Steak-Umm frozen sandwich steaks (I used 6)
Salt and pepper, to taste
2 - 3 tablespoons salted butter or margarine
4 slices Provolone cheese (can use shredded)
2 hoagie or French rolls (Pepperidge Farm brand shown)

Steps:

  • Chop all the veggies; set aside. Lay out 2 sheets of aluminum foil on counter. Slice hoagie rolls if needed (mine were already sliced); set aside. Preheat oven to 300 F. Heat 1 tablespoon butter in a medium non-stick skillet on medium-high heat. Add frozen Steak-umms; add a little salt and pepper and brown meat on both sides. Remove to a bowl and keep warm. In same skillet, heat a little more butter (if needed); add the mushrooms with a little salt and pepper and cook for a couple of minutes, until soft and lightly browned. Remove to a bowl. To the same skillet over medium/medium-high heat, melt another pat of butter (if needed); add the onions and bell peppers (and a little salt and pepper) and saute until crisp tender and lightly browned. Remove from skillet. Cut or tear 1 slice of cheese to fit on the bottom (cut side) of a hoagie roll. Top with half the cooked meat; then with half the veggies. Cut or tear another slice of cheese and place on top of veggies. Roll up tightly in the foil. Repeat steps for the remaining hoagie. Place hoagies directly on the middle oven rack and heat for 15 minutes. Unwrap and serve immediately (in the foil) with a side of potato chips or French fries.

Game-Day Steak Sandwiches with Whipped Goat Cheese and Calabrian Chile Salsa Verde image

1 ribeye cap steak (3 to 5 pounds) or 2 to 3 flank steaks, trimmed
Steak Marinade, optional, recipe follows
Kosher salt and freshly ground black pepper
2 red bell peppers
2 yellow bell peppers
Olive oil for drizzling
2 zucchini, ends trimmed
4 ciabatta rolls or 1 loaf ciabatta, split
1 pound goat cheese
1/2 cup heavy cream
6 Calabrian chiles or other hot pickled chile peppers, minced
4 garlic cloves, minced
1 red onion, minced
Leaves from 1 bunch parsley, finely chopped
Leaves from 1/2 bunch oregano, finely chopped
Leaves from 1/2 bunch cilantro, finely chopped
1 1/2 cups extra-virgin olive oil
Kosher salt
1/2 cup Worcestershire sauce
1/2 cup olive oil
6 garlic cloves, minced
Leaves from 2 sprigs fresh rosemary, finely chopped
1 red finger chile (fresh cayenne pepper), minced

Steps:

  • If marinating the steak, place it in a casserole dish. Pour the Steak Marinade over the steak and turn to coat completely. Cover and refrigerate for a few hours or overnight.
  • When ready to cook, remove the steak from the marinade, if using, and allow the steak to come to room temperature. Discard the marinade. Preheat a grill pan or outdoor grill to high. Season the steak with salt and black pepper. Grill the steak to the desired doneness, 10 to 15 minutes for medium rare (an instant-read thermometer inserted into the thickest part of the steak should register 130 degrees F). Place the steak on a cutting board and allow to rest at least 5 minutes.
  • Meanwhile, place the bell peppers on the grill. Turn the peppers frequently, charring the skin evenly on all sides, 5 to 8 minutes. Transfer the peppers to a large bowl. While the peppers are still piping hot, cover the bowl tightly with plastic wrap and allow the peppers to steam for 15 minutes. Place the peppers on a cutting board. Remove the stems and seeds. Using a kitchen towel, wipe off the charred skin. Slice the peppers into strips. Place the pepper strips in a medium bowl and drizzle with oil. Set aside.
  • Slice the zucchini lengthwise into 3/4-inch-thick planks. Place in a large bowl, drizzle with oil, season with salt and black pepper and toss to coat. Grill the zucchini until tender, 2 to 3 minutes per side. Set aside.
  • Drizzle a little oil on the cut sides of the ciabatta and toast on the grill.
  • In a medium bowl, combine the goat cheese and cream and whisk together until smooth. Set aside.
  • For the chile salsa verde: Combine the chiles, garlic, onions, parsley, oregano, cilantro and oil in a large bowl and mix well. Season with salt. Set aside.
  • To assemble the sandwiches, thinly slice the steak against the grain. Place a dollop of the whipped goat cheese on both halves of the toasted ciabatta and spread evenly. Layer the sliced steak over the cheese and put a generous amount of the chile salsa verde on top of the steak. Layer the grilled zucchini and roasted peppers into the sandwiches. Close the sandwiches with the top half of ciabatta, slice and serve.
  • Combine the Worcestershire, oil, garlic, rosemary and chile in a large bowl and mix well.

BLUE CHEESE STEAK SANDWICHES

We just tried this recipe (I found it in one of those Pillsbury magazine's that you pick up in the grocery store checkout aisle), and it is tasty. And, since flank steak doesn't seem to come in single pounds, and our hoagie breads are the closest thing that I could get to a demi French baguette and they only come in 8-packs, this recipe went a lot further. In fact, I just kept cutting off the other half of the flank steak for a week!

4 tablespoon(s) oil, divided
2 large onions, thinly sliced (1 cup per onion)
2 tablespoon(s) balsamic vinegar
1 teaspoon(s) salt
1 teaspoon(s) pepper
4 ounce(s) blue cheese, crumbled (1 cup per 4 oz)
1/3 cup(s) mayonnaise or salad dressing
1 pound(s) beef flank steak, 3/4" - 1" thick
4 - demi french baguette rolls (5" - 6"), cut in half horizontally

Steps:

  • In 10" non-stick skillet, heat 2 tbsp of the oil over medium heat. Add onions, cook, stirring occasionally, 10 - 12 minutes or until deep golden brown. Add vinegar, 1/2 tsp of the salt and 1/4 tsp of the pepper; cook 1 minute longer or until liquid has evaporated. Remove from heat; set aside.
  • In small bowl, mix cheese, mayonnaise and 1/4 tsp pepper. Set aside.
  • Preheat broiler for a few minutes. Sprinkle steak with remaining 1/2 tsp of the salt and remaining 1/2 tsp of the pepper. Place steak on a broiler pan and broil a couple inches under the broiler for 8 - 10 minutes, or to desired doneness turning once. (Can be grilled instead). Transfer steak to cutting board; let rest 10 minutes.
  • Lightly brush cut sides of rolls with remaining 2 tbsp of the oil. Place rolls, cut side down, on grill rack. Cook 1 - 2 minutes or until golden.
  • Thinly slice steak across grain on the diagonal. Divide steak among bottom halves of rolls; top each with one-fourth of the onions. Spread cut sides of baguette tops with cheese mixture; place on top of onions. Serve immediately.
