Soy Horchata Pudding image

A 3-minute, sugar-free, soy vanilla cinnamon pudding. Much like the delicious Mexican beverage horchata, made from soy milk, vanilla, and cinnamon. Non-dairy and sugar-free. People with restricted diets, rejoice! Be sure to store in an airtight container in the refrigerator.

2 cups soy milk
2 (1 ounce) packages sugar-free instant vanilla pudding mix (such as Jell-O®)
1 teaspoon ground cinnamon

Steps:

  • Whisk soy milk and pudding together in a bowl until fully combined, about 1 minute. Add cinnamon; whisk 1 minute more. Pour into small serving bowls or cups.
