Our family loves this vegan cheese sauce. We're not usually that excited with fake cheeses, but this one has been the exception. Tastes great over nacho chips, baked potatoes, in vegetarian tacos, etc. This recipe has helped us enjoy more vegan meals in our home. We got this recipe from our friend Connie Yroc after she shared this wonderful cheese sauce with nachos with our family one day. After almost losing the recipe last week I realized I must post it right away, because we make it so frequently! Hope you enjoy it. Thanks Connie!

3 1/2 cups water
2 cups raw cashews
2 lemons, juice of
3/4 teaspoon paprika
1 teaspoon garlic powder (heaping)
1 teaspoon onion powder (heaping)
3 teaspoons salt
1 (7 ounce) can pimientos (including the liquid)
1/2 cup nutritional yeast (not brewers yeast!)

Steps:

  • Soak raw cashews for a few hours (this will help the sauce be more smooth and less grainy from the nuts though the flavor is good either way).
  • Put 2 1/2 cups of water into a blender with all of the ingredients and blend until smooth.
  • Pour the blended mixture into a saucepan and add the remaining water.
  • Heat the mixture in a saucepan for about 20 minutes.
  • Stir continually to prevent it from burning.
  • Add water to desired consistency (optional).
  • Use as a nacho cheese dip or as a replacement for cheese on other yummy foods!

¼ cup nutritional yeast
¼ cup all-purpose flour
1 teaspoon paprika
1 teaspoon salt
1 pinch garlic powder, or to taste
1 pinch ground cumin, or to taste
1 cup water, or more as needed
2 tablespoons margarine
1 ½ cups salsa

Steps:

  • Combine nutritional yeast, flour, paprika, salt, garlic powder, and cumin in a saucepan; add water. Whisk constantly over medium heat until thick and bubbly, about 5 minutes; remove from heat.
  • Stir margarine into the yeast mixture until melted. Mix in salsa.
  • Cook and stir over low heat until tomatoes are warmed through, about 5 minutes.

2 small russet potatoes, peeled and cubed
½ cup carrots, chopped
⅓ large yellow bell pepper, chopped
¼ large yellow onion, peeled and chopped
5 tablespoons prepared garlic hummus
⅓ cup coconut milk, or more as needed
½ tablespoon nutritional yeast
1 ½ teaspoons lemon juice
1 teaspoon garlic powder
black pepper to taste
2 pinches salt, or to taste

Steps:

  • Fill a pot with water and bring to a boil. Add potatoes, carrots, bell pepper, and onion and cook until potatoes are tender, 15 to 20 minutes. Cook 1 more minute. Drain.
  • Combine potatoes, carrots, bell pepper, onion, hummus, coconut milk, nutritional yeast, lemon juice, garlic powder, black pepper, and salt in a blender or food processor; blend until smooth and creamy.

2 cups vegetable broth
1/4-1/2 cup nutritional yeast
3 tablespoons cornstarch
spices, to taste (such as onion powder, garlic, oregano, paprika, whatever you like)
salt and pepper

Steps:

  • Heat up the broth.
  • Take a little of the hot liquid and put in bowl.
  • Whisk in cornstarch, set aside.
  • Pour nutritional yeast and spices into hot liquid, stirring until dissolved.
  • Add cornstarch mixture and cook until as thick as you desire. This only takes a few minutes.
  • Add salt and pepper to taste.
  • Tis is great over baked potatoes, vegetables, rice, noodles. Enjoy!

My mother has made this recipe for Cashew Cheese since I was very young. I think this is a great recipe because it's so versatile. You can make it in a loaf pan with Agar Agar, so you can slice it for sandwiches or it crumble on rice and beans. It's also great as a Cheese Sauce or Cheese Dip too, if you eliminate the Agar Agar. 3 tablespoons nutritional yeast flakes
1 teaspoon onion powder
1 cup water
1 (4 ounce) jar pimientos
1/8 teaspoon garlic powder
1 cup raw cashews
1 teaspoon salt
1/2 cup canola oil
1/2 cup extra virgin olive oil
1/3 cup lemon juice
4 tablespoons agar-agar
1 cup cold water

Steps:

  • To sterilize your Cashew Nuts: Spread your nuts out on a baking sheet and bake in a preheated 350 degree oven for 10 minutes and then cool completely before using them.
  • Whiz first 7 ingredients in blender or food processor until nuts are liquefied.
  • SLOWLY drizzle in oils to thicken and then add lemon juice after oils are incorporated.
  • Mix Agar Agar in 1 Cup Cold water. Cook in separate sauce pan until clear (about 10 min).
  • With a spoon stir cooked (warm) Agar Agar into cheese mixture. Immediately pour into loaf pan lined with plastic wrap and fold plastic wrap ends and sides over top.
  • Refrigerate until set and slice as needed.
  • To use as a spread or dip, do not add Agar Agar.
  • When the loaf version is set, my mom slices into ½ sections. She puts them side to side with clear wrap in between and freezes then for individual later use.

  • Place cashews in a large bowl. Pour enough water over cashews to cover.

  • Drain the water from cashews; place cashews in a blender. For a tangier cheddar flavor add 1/4 cup freshly squeezed lemon juice to cashews. Pour enough water to come to 1/4-inch below of the top of the cashews. Blend until partially smooth.

Nutritional yeast is an aquired taste for some, so this is a nice, mild tasting vegan cheese sauce, that can be served plain over veggies or with chips, OR spiced-up accordingly (ie cumin, chili powder, diced tomatoes & chillies, vegan taco meat...possibilities are endless) For the spices listed below, feel free to use 'heaping" teaspoons. The cashews can be soaked ahead of time to ensure that they puree smoothly, but this is not necessary. Super cheesy vegan cashew cheese sauce. This smooth and creamy sauce is wonderfully satisfying and simply delicious drizzled over almost anything!

1 cup (150g) Cashew Nuts (Raw)
2 Tbsp Nutritional Yeast
1 Clove Garlic (crushed)
1 Tbsp Lemon Juice (freshly squeezed)
Pinch Sea Salt
Pinch Black Pepper
5 Tbsp Water

Steps:

  • Add the cashew nuts, nutritional yeast, crushed garlic and lemon juice to the blender jug. Add sea salt and black pepper. Measure out the water and add it in. Blend until very smooth and creamy.
  • For a thicker cheese, use less water. For a thinner salad dressing consistency, use a little more water.
  • Serve drizzled over baked potatoes, vegetables, pizzas or pastas.
