NUT BURGERS (VEGETARIAN)



Nut Burgers (Vegetarian) image

These no nonsense nut burgers are great. I have yet to find a recipe or a restaurant that makes as good of a version. Serve with chips... tortilla, blue corn, sweet potato, or other veggie chips. Use whichever types of nuts you like, or have handy such as pecans, walnut, hazelnuts, almonds, sunflower seeds, pumpkin seeds, or any combination of nuts you might like.

½ cup finely chopped walnuts
½ cup unsalted sunflower seeds
1 cup canned chickpeas, drained
¼ cup diced red onion
1 beaten egg
1 tablespoon chopped fresh parsley
¼ teaspoon fresh ground black pepper
1 tablespoon salt-free herb seasoning blend
2 tablespoons olive oil
2 slices mild Cheddar cheese
1 pita bread round
¼ cup prepared Ranch salad dressing
2 leaves romaine lettuce
1 medium tomato, thinly sliced
½ avocado - peeled, pitted and sliced

Steps:

  • Place walnuts and sunflower seeds in a dry skillet over medium heat. Cook, stirring occasionally until lightly toasted and fragrant, about 5 minutes.
  • In a medium bowl, mash garbanzo beans with a fork, or chop in a food processor. Stir in the onion, egg, parsley, and toasted nuts. Season with pepper and seasoning blend, and mix well.
  • Heat olive oil in a skillet over medium heat. Divide the bean mixture into 2 patties, and fry in the hot oil for about 3 minutes on each side, or until well browned and heated through. Place a slice of cheese over each patty, and remove from heat.
  • Place the pita round in the same dry skillet the nuts were in, and heat for about 1 minute on each side. Cut the round in half, spread ranch dressing inside of each, and line the pockets with romaine leaves. Place a cheesy patty into each one, and top with sliced tomato and avocado. Serve with tortilla or potato chips.

Vegan, gluten-free, and paleo-friendly veggie burger patties with a nutty taste. I came up with this recipe when I had a hard time finding any recipes for veggie burgers or patties that were grain-free and bean-free, and which actually contained vegetables. Both my husband and I love it. He had his on a burger bun with lettuce, avocado, and tomato.

⅔ cup 1/2-inch butternut squash cubes
½ cup chopped cauliflower
½ cup chopped broccoli
½ cup raw walnuts
¼ cup raw almonds
¼ cup raw sunflower seed kernels
½ teaspoon salt
¼ teaspoon ground cumin
⅛ teaspoon ground black pepper
1 tablespoon vegetable oil

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add butternut squash cubes, cover, and steam until tender, 7 to 10 minutes. Transfer squash to a bowl and mash; measure 1/2 cup mashed squash and reserve.
  • Place the steamer insert back into the saucepan and refill with water to reach just below the bottom of the steamer. Bring water to a boil. Add cauliflower and broccoli, cover, and steam until tender, 2 to 6 minutes.
  • Process walnuts, almonds, and sunflower seeds together in a blender or food processor until mixture resembles coarse breadcrumbs. Add broccoli and cauliflower, blend until finely chopped and incorporated.
  • Blend 1/2 cup mashed squash, salt, cumin, and black pepper into the nuts mixture until well-mixed. If mixture is too thick to process, transfer it to a bowl and mix by hand.
  • Divide mixture into 4 equal portions and shape into patties.
  • Heat oil in a large skillet over medium-high heat. Cook patties in hot oil until browned and heated through, about 2 minutes per side.

6 eggs, beaten
1 c bread crumbs, seasoned
1 onion, minced

Steps:

  • 1. Combine all ingredients. Scoop mixture with an ice-cream scoop onto hot electric griddle and form into patties with spatula. Fry patties with vegetable spray until brown on both sides
  • 2. Cover bottom of baking dish with 1/2 jar of spagetti sauce and add patties. Cover patties with the rest of sauce and Bake at 350 degrees.

This is a recipe I adapted from one my mother has made since I was little. These patties are VERY good - but keep in mind they are also very rich. As a dinner suggestion to complete your meal and to balance out the richness of the patties & gravy, try serving these with green beans and fruit salad. Enjoy!

1 (8 ounce) package reduced-fat cream cheese
1 cup breadcrumbs
1/3 cup walnuts, finely chopped
1 3/4 cups Egg Beaters egg substitute (or 7 eggs)
1/2 medium onion, minced
1/2 cup olive oil (ONLY FOR FRYING)
1/2 cup fat free sour cream
1/4 cup skim milk
1 (10 1/2 ounce) can cream of mushroom soup

Steps:

  • Place the cream cheese in the freezer for approximately 15 minutes, remove and cube into 1/2" chunks immediately while it is still very cold from the freezer. (This step will help to harden the cream cheese slightly so it will be easier cut.)
  • In a medium to large bowl beat the eggs well, then add the cubed cream cheese, minced onions, finely chopped walnuts and bread crumbs. Mix VERY GENTLY until moistened and combined. Be careful not to break up the cream cheese chunks - they should stay in chunks in the patties.
  • Preheat oven to 350 degrees now so it is ready when you are done frying patties.
  • Heat a small amount of oil in the bottom of a non-stick frying pan. DO NOT ADD ENTIRE 1/2 CUP OIL TO PAN! Only use enough oil to keep patties from sticking, adding more as needed - I usually start with 1 or 2 tablespoons.
  • Using approximately 1/4 cup of the mixture per patty, drop into the hot oil and fry patties. Flatten patties if needed and turn over to fry other side when first side is golden to medium brown.
  • In a separate bowl, mix together the sour cream and cream of mushroom soup for the gravy.
  • Once the patties are fried place the patties in an oven safe casserole dish, layering with the gravy.
  • Bake for 25 minutes or until patties are heated through.
  • Serve immediately making sure to spoon some of the gravy over each patty.

3 tablespoons wheat germ
1 (1 ounce) envelope dry onion soup mix

1 (10 ounce) can condensed cream of mushroom soup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat eggs into a large bowl. Stir in cottage cheese, rolled oats, wheat germ, dry onion soup mix, and dried thyme. Form into 8 patties.
  • Heat oil in a skillet over medium heat. Place patties in oil, and brown on both sides. Remove patties to a 9x13-inch baking dish.

This vegetarian entree is always on the table at our family celebrations because it is such a decadent treat. It is rare to find a vegetarian dish with this much "comfort quality".

8 ounces light cream cheese
1 large sweet onion
3/4 cup sharp cheddar cheese, grated
3 eggs
1 cup walnuts
1 cup cracker (whole grain is nice)
1 teaspoon oregano
vegetable oil
2 (8 ounce) cans low-fat cream of mushroom soup
1/2 cup low-fat sour cream
1 1/2 cups water
1/2 teaspoon garlic powder
1/4 teaspoon oregano flakes
1/4 teaspoon marjoram
1/4 teaspoon thyme
1/4 teaspoon sage

Steps:

  • Preheat oven to 375.
  • In food processor, mix walnuts, onion and crackers. Pulse until coarsely crumbed. Pour into large bowl.
  • Now in processor mix eggs and creamed cheese until smooth.
  • Mix egg mixture into walnut mixture in bowl. Add cheddar and oregano, blend well. If mixture is too loose, add more cracker crumbs.
  • Heat 2 T vegetable oil in nonstick skillet on medium. Drop mixture into patties in hot nonstick skillet. Drain on paper towels after browned and firm. (Watch closely, they can burn easily).
  • Mix sauce ingredients together with a whisk. Spray 9" X 13" casserole dish with oil spray. Layer patties in a single layer in bottom of dish. Pour 3/4 sauce over patties. Bake uncovered for 20 minutes, pour rest of sauce on, and bake 10 minutes more. Serve with green salad on the side.

1 lb farmer cheese
3 eggs
3/4 cup flour
1/2-3/4 cup sugar (adjust to taste)
3 tablespoons sour cream
2 tablespoons vanilla sugar

  • Mix all ingredients together. If the mixture is too loose, add more flour.
  • Drop by tablespoon into hot oil and fry on both sides until golden brown.

2 cups cooked ham, shredded and chopped fine
1/3 cup finely chopped white onion
1 teaspoon ground black pepper
1 teaspoon garlic powder
1/2 cup sharp cheddar cheese, shredded
1 large egg, slightly beaten
1/4 cup self-rising flour
1/4 cup cornmeal (I like to use yellow)
1/8 cup mayonnaise
oil (for frying)

Steps:

  • Combine all ingredients except oil, in a medium sized bowl (mixture will be stiff).
  • Heat oil over medium heat, in a non-stick skillet large enough to fry all patties at one time (may do 2 patties at a time to turn more easily).
  • While oil is heating, form mixture into 4 patties.
  • Fry until golden brown, about 6 minutes on each side.
  • Serve warm and enjoy!
