This is Serbian national food. We usually serve proja hot or cold with yogurt. There is one more way to make this meal--instead of 1 cup of cheese put 1 cup of ground spinach.

Number Of Ingredients 8

5 eggs
1 -2 teaspoon salt
9 tablespoons grits, corn (top full,You also can put cornmeal instead of corn grits)
9 tablespoons all-purpose flour (top full)
2 teaspoons baking powder
200 ml yogurt
200 ml oil
2 cups cottage cheese

Steps:

  • Mix eggs, yogurt and oil in big bowl.
  • In another bowl, mix flour, corn grits, baking powder and salt.
  • Combine dry and wet ingredients and finally add cheese.
  • Fill greased muffin tins 2/3 full.
  • Bake 30-35 minutes at 480°F (250°C).

Nice bread-like cheese muffins. Not overly cheesy, but feel free to add more. One of my favorites!

2 cups all-purpose flour
½ cup white sugar
1 tablespoon baking powder
1 teaspoon salt
½ teaspoon baking soda
1 ½ cups shredded Cheddar cheese
1 cup plain yogurt
2 eggs, beaten
¼ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 large muffin cups.
  • Mix flour, sugar, baking powder, salt, and baking soda together in a large mixing bowl; stir Cheddar cheese into the flour mixture. Pour yogurt, eggs, and butter over the flour mixture; stir until the dry ingredients are just moistened. Spoon the batter into the prepared muffin cups.
  • Bake in the preheated oven until the tops just start to lightly brown, 18 to 20 minutes.

A few days ago I wanted to try some cheese muffins and found this recipe on the Pioneer Woman's blog under the original title: Fig's Cheese Muffins. They are a nice change of pace. 1 1/2 c flour
1 1/2 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt
3 c shredded colby-jack cheese
1 c milk
1 egg
1/4 c (1/2 stick) melted butter
bakers joy (optional)

Steps:

  • 1. In a medium sized mixing bowl whisk together all of the dry ingredients.
  • 2. Stir in all three cups of cheese into dry ingredients. Mix well.
  • 3. In a separate bowl, whisk egg, milk and butter together. When mixed thoroughly, pour the milk mixture into the dry ingredients and stir with a spoon to combine.
  • 4. Bake in greased muffin tins (I used Bakers Joy) in a 375 degree oven for 20-25 minutes.
